- In a large saucepan, melt butter. Stir in brown sugar and syrup. Cook, uncovered, over medium heat for 3-5 minutes or until thickened. Stir in carrots and raisins. Sprinkle with salt and pepper. Cook 3-5 minutes longer or until carrots are tender.

EASY GLAZED CARROTS AND RAISINS
I usually make my glazed carrots with fresh baby carrots, butter, and honey. However, tonight I needed a quick side to go with my Easy One Pot Lentils and Rice. I did not have any fresh carrots or honey on hand (I need to get to the grocery store!) but I had a can or organic sliced carrots and some brown sugar. I decided to add raisins, because my 18 month old dd LOVES them, but cannot eat them unless they are chopped or cooked. (due to the fact that they are a major choking hazard) This is what I came up with. I served the lentils and rice as a rice ring, and served it with the carrots and raisins in the middle. (lifted out of the pan with a slotted spoon) My family really enjoyed it, and the kids appreciated the presentation! Whatever works to get them to eat healthy! ;o)

Steps:
- Put raisins into a small saucepan, add hot water. and let stand 5 minutes to plump raisins slightly.
- Meanwhile, drain and rinse the carrots.
- Add brown sugar, butter, and salt to the pan and stir to dissolve sugar.
- Bring glaze to a boil over medium-high heat and cook 1 minute.
- Add carrots to glaze and toss to coat.
- Bring to a boil, reduce heat to medium and simmer 5 minutes uncovered. You can serve the carrots at this point, but the longer they simmer, the thicker the glaze gets and the sweeter the carrots get.
- Enjoy!

GREAT ROASTED CARROTS
Recipe video above. In my opinion, there is only one way to roast carrots - on a high temperature so they brown beautifully in the same time it cooks for the inside to become sweet and tender. Cooked this way, you need nothing more than salt and pepper, though a hit of garlic never hurts!Extra flavouring options - see Note 3.

- Preheat oven to 220°C/430°F (200°C fan).
- Cut the carrots on the diagonal into 5cm / 2" lengths. Cut the thicker ones in half lengthwise so they are all roughly the same width.
- Place on a tray, drizzle with oil, sprinkle with salt and pepper, toss.
- Roast 20 minutes: Spread out on tray, roast 20 minutes.
- Flip & garlic: Remove from oven. Push carrots to one end, add garlic and toss. (Add other Flavour Options at this point too)
- Roast 10 minutes: Roast for a further 10 minutes. Remove from oven, toss carrots to coat in the garlicky oil and juices on the tray.
- Sprinkle with parsley and serve!

- Directions: Heat oven to 400 degrees Fahrenheit. On a rimmed baking sheet, toss carrots with olive oil, ¼ teaspoon of the salt, and the pepper. Roast at 400 degrees Fahrenheit for 15 minutes. Stir in chestnuts, raisins, and honey. Roast another 10 to 15 minutes, until fork-tender. Gently toss carrots with remaining ¼ teaspoon salt.

- In a large bowl, combine, 1/2 t salt, 1 t sumac, lemon zest, coriander, cumin and oil. Add carrots and toss to coat. Spread evenly on a rimmed baking sheet. Roast carrots, stirring once, until browned at edges, about 15-18 minutes. I kept mine in a little longer because I like them really crisp. Let cool.
- Cook butter in a medium frying pan over medium low heat, stirring occasionally until browned, about 5-8 minutes. It will sputter and then get quiet. This is how you kind of know it is about browned. Add raisins, nuts, 1/2 t thyme and 1/2 t sumac. Cook while stirring, until raisins puff, about 45-60 seconds. Let cool.
- If using yogurt or labneh, combine in a small bowl with 1/4 t salt and remaining 1/2 t of thyme. I substituted za’atar to taste. This is up to you! Spread on a platter.
