Roasted Butternut Squash and Feta Pie image

Sweet caramelized onions and roasted butternut squash (called butternut pumpkin in Aussieland), teamed with feta cheese and partially encased in pastry. The roasting intensifies the sweet flavor of the squash and gives it a creamy texture, nicely balanced by the feta. Reduce the amount of fresh herb if you prefer. Preparation time does not include cooling.

1 14 inch pie crust (I use Classic Pie Crust, Idiot Proof Step-By-Step Photo Tutorial or frozen store-bought shortcrust pastry)
23 ounces butternut squash, peeled and cubed,about 3/4 to 1 inch pieces
4 cloves garlic, unpeeled
4 tablespoons olive oil
2 medium red onions, sliced
4 teaspoons balsamic vinegar
3 teaspoons soft brown sugar
3 1/2 ounces feta cheese, broken into small pieces
1 tablespoon fresh sage or 1 tablespoon fresh thyme, your choice

Steps:

  • Preheat oven to 400F (200C), with rack positioned in the middle.
  • Place the squash and unpeeled garlic in a bowl, drizzle over 2 tablespoons olive oil, and mix well.
  • Transfer the squash and garlic to a baking tray lined with baking paper, and place in the oven.
  • Bake for 20 minutes, or until squash is just tender and starting to brown.
  • Place the squash in a large bowl, leave to cool, and reserve the garlic to one side.
  • While the squash is roasting, heat the remaining 2 tablespoons of olive oil in a skillet over medium heat, add the onions and cook stirring occasionally for 10 minutes.
  • Add the vinegar and sugar and continue to cook for a further 10 minutes, or until the onion caramelizes.
  • Remove from heat, add onions to the squash in the bowl, and allow to cool thoroughly.
  • Squeeze out the flesh from the reserved garlic, and add to the squash with the feta cheese and the herb of your choice.
  • Mix the squash, onion and feta mixture together gently, and season with salt and pepper to taste.
  • Place the pastry circle on a baking tray lined with baking paper.
  • Pile the filling on top of the pastry, leaving a 2 1/2 inch (6cm) border.
  • Fold the pastry edge up (overlapping as necessary) to partially cover the filling.
  • Bake in the oven for 25 minutes or until pastry is crisp and golden.
  • Cover the vegetables loosely with foil if they look to be over-browning.

HARISSA ROASTED SQUASH & FETA PIE

Enjoy this twist on a cheese and onion pie, made with lighter filo pastry and a spiced mix of sticky harissa-roasted vegetables and creamy feta cheese

1 butternut squash, peeled and chopped into chunks
2 red onions, chopped into wedges
4 tbsp olive oil
1 tsp cumin seeds
3 tbsp harissa
100g feta
4 sheets of filo pastry (about 150g)
4 tbsp tahini
1⁄2 lemon, juiced

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Tip the squash and onions into a large roasting tin with 1 tbsp olive oil, most of the cumin seeds, 2 tbsp harissa and some seasoning. Roast for 35-40 mins, tossing once or twice until the veg is soft and charred in spots. Leave to cool slightly, then roughly mash together using a potato masher - you want to retain some chunks of squash. Stir through the feta and season with salt, if needed. The veg can be roasted a day ahead and kept chilled.
  • To assemble, unravel the filo pastry. Brush one sheet liberally with some of the remaining oil, and keep the rest covered with a damp tea towel to stop it drying out. Drape the oiled sheet, oiled-side down, into a 22cm loose-bottomed cake tin so that some of the pastry hangs over the side. Repeat with another sheet of pastry, turning it by about 45 degrees over the first sheet in the tin, then again with the last two pastry sheets.
  • Spoon in the filling, then pull the overhanging pastry up and towards the centre, scrunching it to enclose the filling. Scatter with the remaining cumin seeds and brush with a little more oil.
  • Reduce the oven temperature to 190C/170C fan/gas 5. Bake the pie for 30 mins until the pastry is crisp and golden brown. Meanwhile, mix the tahini with the remaining harissa, the lemon juice and 4 tbsp water, then season to taste. Remove the pie to a serving plate, slice into wedges and serve with sauce for drizzling over. Or, cool to room temperature first.

Ready-made puff pastry makes it easy to go meat free - top with spicy harissa paste, salty cheese, sweet pumpkin and mint

a little plain flour , for dusting
500g pack puff pastry
2 tbsp onion chutney
2 tbsp harissa
½ butternut squash , peeled, deseeded and very thinly sliced
200g pack feta cheese , crumbled
1 tbsp pine nut
small bunch mint , leaves picked
large handful rocket leaves

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put a large baking tray on the middle shelf to heat up. On a floured surface, roll out the pastry to a 30cm square. Trim the edges, lightly score a 1cm border around the edge of the tart, and prick the centre all over with a fork. Transfer the pastry base to a sheet of baking parchment.
  • Mix the chutney and harissa, and spread over the middle of the pastry. Arrange the squash in one layer over the top, then season. Put the tart on the hot baking tray and bake for 30 mins.
  • Remove the tart, scatter over the feta and pine nuts, and bake for 20 mins more. Scatter over the mint and rocket to serve.

1 large or 2 small acorn or delicata squash (about 1 1/2 lb. total), halved lengthwise, seeded, cut into 1/4" slices
1/4 tsp. freshly ground black pepper
1/2 cup extra-virgin olive oil, divided
1 1/2 tsp. kosher salt, divided
4 slices country bread, cut into 1" cubes (about 4 cups)
1/2 lb. Greek feta, cut into 1" cubes
1/4 cup sherry or red wine vinegar
1 tsp. honey
1 tsp. thyme leaves
1 head of radicchio or 1/2 head of escarole, leaves separated, torn into large pieces
Aleppo-style pepper (for serving; optional)

Steps:

  • Arrange a rack in top third of oven; preheat to 400°F. Toss squash, black pepper, 2 Tbsp. oil, and 1 tsp. salt on an 18x13" rimmed baking sheet and arrange in an even layer. Roast until squash is beginning to brown on one side, 10-15 minutes. Turn squash, then arrange bread and feta over. Roast until bread is lightly toasted and feta is soft and warmed through, 8-10 minutes.
  • Whisk vinegar, honey, thyme, and remaining 6 Tbsp. oil and 1/2 tsp. salt in a large bowl until well combined. Add radicchio and hot squash mixture and toss to combine.
  • Transfer to a platter and sprinkle with Aleppo pepper (if using).

BUTTERNUT SQUASH & SPINACH FILO PIE

1 butternut squash (about 1kg), peeled, deseeded and cut into 2cm dice
2 red onions , cut into wedges
1 tsp chilli flakes
400g bag spinach
100g feta cheese , crumbled
4 sheets filo pastry
1 tbsp olive oil
green salad , to serve (optional)

Steps:

  • Heat oven to 220C/200C fan/gas 7. Put the squash, onions and chilli flakes in an ovenproof pie dish (or 4 individual dishes). Season and cook for 20 mins until the squash is tender and the onions are starting to char at the edges.
  • Meanwhile, put the spinach in a colander and pour over a kettleful of boiling water. Squeeze out any excess liquid and stir into the squash mix. Dot over the feta, crumple up the pastry and place on top, then brush with the oil. Return to the oven and cook for a further 15 mins until the pastry is golden and crisp. Serve with a green salad, if you like.

Roasted Butternut Squash With Lentils and Feta image

The secret to making winter squash taste even better is to bump up its sweetness by roasting it, then pair it with sweet and sour ingredients, like this pomegranate molasses and honey dressing. Thinly slicing the squash speeds up roasting time, and, if you have access to precooked lentils, feel free to add them here. You can also substitute other soft, creamy cheeses for the feta, such as goat or sheep's milk cheeses. Olive oil can leave a bitter aftertaste in emulsions, so, if you prefer to avoid it, use a neutral oil like grapeseed. Serve as a fall side, or alongside warm slices of generously buttered sourdough toast as a light meal.

1/2 cup black or green lentils
1 (3-inch) cinnamon stick
4 garlic cloves, peeled and smashed
Kosher salt
1 (1-pound) butternut squash
1 tablespoon extra-virgin olive oil
1/2 teaspoon black pepper
1/4 cup crumbled feta
4 scallions, trimmed and thinly sliced
2 tablespoons roasted, salted pumpkin seeds
1/4 cup extra-virgin olive oil or grapeseed oil
2 tablespoons pomegranate molasses
1 tablespoon honey
1/2 teaspoon ground cumin, toasted
1/4 teaspoon ground cayenne
1/2 teaspoon black pepper
Kosher salt

Steps:

  • Heat oven to 400 degrees. Pick any debris from the lentils, then rinse the lentils under running water. Transfer them to a medium saucepan, then add the cinnamon, garlic and 1 teaspoon salt.
  • Add enough water to cover everything by 1 inch. Bring the water to a rolling boil over medium-high heat, then reduce to low and let simmer until the lentils are tender but not mushy, about 20 minutes. Drain the lentils, discard the cinnamon and garlic, then transfer the lentils to a large bowl.
  • While the lentils cook, prepare the squash: Trim and discard the top and bottom ends of the squash. Peel the squash, halve it lengthwise, and remove and discard the strings and seeds. Slice the squash crosswise 1/4-inch thick and place the pieces on a baking sheet. Drizzle with 1 tablespoon olive oil and season with salt and pepper.
  • Roast the squash until completely tender, slightly caramelized and golden brown, about 30 minutes. Remove from the oven, and let cool for 10 minutes. Once cool, add to the lentils.
  • While the squash cooks, prepare the dressing: In a small bowl, whisk the olive oil, pomegranate molasses, honey, cumin, cayenne and black pepper. Taste and season to taste with salt.
  • Sprinkle the feta, scallions and pumpkin seeds over the lentils and squash. Pour 2 to 3 tablespoons of the dressing over the lentils and squash. Serve warm or at room temperature, with the remaining dressing on the side.

2 tablespoons olive oil
¾ cup heavy cream
½ cup creme fraiche
2 cloves garlic cloves, pressed
1 bay leaf
salt to taste
freshly ground white pepper to taste
1 pinch white sugar
1 pinch ground nutmeg
2 tablespoons fresh parsley, or to taste
1 (8 ounce) package feta cheese, crumbled

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a rimmed baking sheet with olive oil.
  • Distribute butternut squash wedges like shingles onto the prepared baking sheet.
  • Combine cream, creme fraiche, garlic, and bay leaf in a small saucepan over medium heat, bring to a boil, and simmer for 5 minutes. Season with salt, pepper, sugar, and nutmeg. Pour cream mixture over pumpkin on the baking sheet and sprinkle with parsley. Evenly sprinkle feta cheese on top.
  • Bake in the preheated oven until gratin is browned on top and squash is cooked through, 20 to 25 minutes.
