Steps:
- Preheat the oven to 400 degrees F.
- Wrap the beets in foil packets and roast in the oven until tender, about 1 hour. Open the foil packets and let cool. Once cool enough to handle, peel using a paper towel, then dice.
- In a medium bowl, add the olive oil, vinegar, honey, red onions and Dijon and whisk together. Add the beets and spinach to the dressing and toss to coat. Top with the goat cheese and walnuts.

- Heat oven to 200C/180C fan/gas 6 and put the beetroot in a roasting tin with 1 tbsp oil, 1 tbsp vinegar and plenty of seasoning. Roast for 8-10 mins until sticky. Meanwhile, bring a pan of salted water to the boil, add the green beans, cook for 1 min, then drain. Toss in with the beetroot and roast for a further 5 mins.
- Meanwhile, make the dressing by combining the remaining oil and vinegar in a small bowl, and season well. Put the mixed leaves and cucumber in a bowl and toss together with a little dressing.
- Dip both cheese halves in the chopped walnuts so the tops are covered, then pop in the roasting tin with the beetroot and green beans for a few mins, to soften and toast the nuts.
- Pile the salad onto plates and serve with the remaining dressing drizzled over the top.

- Preheat your oven to 425 degrees.
- Wash your beets and drizzle with olive oil.
- Lay them on foil, and then cover with foil and crimp the edges to seal them in. Roast in the oven for about 30 minutes.
- You should be able to pierce with a knife and having easily go in.
- Once they are done, let them cool completely and then peel and slice them up.
- While the beets are roasting make the balsamic dressing.
- Wash and chop your romaine lettuce.
- Fill your bowl with lettuce, beets, sprinkle pieces of goat cheese all over the salad, and then toss walnuts on top.
- You can drizzle the dressing over the top, or you can serve it up individually and let each person pour it on themselves.
- We like to pour it on as we serve it so that if we have any salad left over, we can store it in the fridge separately and not have soggy salad. It will keep longer in the fridge without the dressing on it.

- Trim off any leafy greens attached to your beets. Depending on your preference, leave the root attached or cut it off. Wash the beets thoroughly.
- Boil a large pot of water. Making sure there's enough water to cover your beets. Once it reaches a full boil, carefully place the beets in the water with the lid on and allow them to boil for 45-60 minutes. You will know if the beets are done cooking if you can easily pierce through the center of the beets with large fork.
- Remove the beets from the water. Place them in a bowl, and then in the refrigerator to cool.
- While the beets are cooling, make the dressing by stirring together 3 tablespoon of extra virgin olive oil and 3 tablespoon of freshly squeezed lemon juice. Optional: Whisk in 2 teaspoon of honey if you prefer a sweet dressing. Keep in mind that beets are already fairly sweet so the honey may not be neccesary.
- Once the beets are cool, the skins should slip off easily. Rub the skin off with your thumb, and then peel it off in strips with your fingers. Or use a knife to remove the skins.
- Chop the cooked beets into about 1" cubes. Place the beet cubes in a mixing bowl.
- Pour the olive oil and lemon juice dressing over the beets. And toss the beets in the dressing.
- Sprinkle the mixutre with salt and pepper, add the parsley and toss again. Taste the salad to see if it needs more salt at this point.

- Heat oven to 180C/160C fan/ gas 4. Roll the beetroot in half the olive oil in a small roasting tin, season, cover with foil and bake for 1 hr - check it's cooked by pushing a knife into the beetroot, it should go in easily. Remove from the oven and leave to cool. Leave the oven on. Meanwhile, whisk all the dressing ingredients together. Place the ciabatta on a tray, drizzle with the remaining olive oil and bake for 8 mins until crisp, then leave to cool. When the beetroot is cool enough to handle, peel, cut into wedges and add to the dressing to lightly pickle. Can all be done up to two days ahead.
- Break the goat's cheese into small chunks in a bowl, beat with a spoon, then add the crème fraîche, thyme, truffle oil, if using, and some cracked black pepper, then whisk until light and fluffy. Spoon into a piping bag and chill. Can be done two days ahead.
- Halve the chicory and remove the core with a sharp knife, then slice the leaves. Add to the bowl with the beetroot. Cut the cheeks off the sides of the apple and finely slice. To serve, pipe the goat's cheese onto each plate, then build the beetroot up around it. Press the chicory into the cheese and spoon over the dressing, then add the apple. Break the croutons into random shapes and press into the cheese too. To finish, scatter over the nuts and orange zest.

- Preheat the oven to 400 degrees F.
- Spread the beets on a baking sheet. In a bowl, whisk together the olive oil, vinegar, rosemary and some salt and pepper. Reserve one-quarter of the dressing for the salad and pour the rest over the beets. Roast until the beets are tender, 45 to 50 minutes.
- While the beets are cooking, heat 1/4 inch of vegetable oil in a large skillet over medium heat.
- Put the flour, eggs and breadcrumbs in separate shallow bowls. Coat the goat cheese slices first in the flour, then in the egg, then in the breadcrumbs. Fry the slices until golden brown, 1 to 2 minutes per side. Drain on a paper towel-lined plate.
- Whisk the mustard and sugar into the reserved dressing, then pour over the greens in a large bowl and toss to coat. Divide the greens among 6 plates, add the beets on top and place 2 fried goat cheese slices on top.

Place beets on a large piece of foil; drizzle with olive oil, then wrap foil around them to form a neat packet. Roast directly on rack in middle of oven until tender, about 1 hour. Test for doneness by piercing the largest beet with a knife. If it enters easily, it's done. Unwrap beets and let sit until cool enough to handle. Use your hands or a paring knife to peel skin, then cut into ½-inch dice (I usually do this right on the aluminum foil but you can also use a stain-proof cutting board or plate). Set aside.
- In a small bowl, whisk together the honey, Dijon mustard, red wine vinegar, shallots, salt and pepper. Whisking constantly, slowly add the oil in a steady stream. (Alternatively, add all your ingredients to a jar, cover with lid, and shake vigorously to blend.) Taste and adjust seasoning if necessary.
- Place the greens in a large bowl, drizzle with about half of the vinaigrette and toss to combine. Add as much of the remaining vinaigrette as desired and toss again. Divide greens onto plates, then sprinkle with beets, walnuts and goat cheese. (The reason you don't just mix it all together in a salad bowl is that the beets would cause the whole salad to turn pink.) Serve immediately.
