This Roasted Potatoes, Carrots and Beets recipe is the perfect way to roast your root vegetables. Seasoned with balsamic vinegar and rosemary.

1 large white potato, (cut into 1 inch cubes)
3 small red potatoes, (cut into 1 inch cubes)
3-4 medium carrots, (peeled and cut into 1 inch pieces)
1 medium onion, (cut into wedges)
3 medium beets, (peeled and cut into 1 inch pieces)
3 Tbsp olive oil
1 tsp balsamic vinegar
1/2 tsp salt
1/2 tsp ground pepper
1 tsp dried rosemary
1 tsp dried parsley

Steps:

  • Preheat the oven to 400˚F.
  • In a large bowl, mix together the potatoes, carrots, onion, and beets. Set aside.
  • In a small bowl, mix together the olive oil, balsamic vinegar, salt, pepper, rosemary and parsley. Pour over the vegetables, and mix until the veggies are fully coated.
  • Pour your vegetables on a rimmed baking sheet, and spread them out so that they are in one layer.
  • Roast the vegetables in the preheated oven for 20 minutes. Remove to stir, and return to the oven to cook for another 20-25 minutes.

I adapted this from a vegetarian soup while my twin toddlers were going through a soup-only phase. They love it. Luckily the rest of the family enjoys it too! It's a nice hearty puree, super-easy to put together, especially if you roast the potatoes and beets beforehand.

2 cups diced potatoes
2 cups diced peeled beets
olive oil, divided
salt and ground black pepper to taste
1 stalk celery, diced
1 onion, diced
1 clove garlic, minced
4 cups chicken broth
½ teaspoon dried thyme
1 bay leaf
1 ½ cups whole milk
1 tablespoon lemon juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place the potatoes and beets into a baking dish, and drizzle with 1 tablespoon olive oil; season with salt and black pepper.
  • Roast in the preheated oven until tender, about 1 hour; allow to cool.
  • Heat 2 tablespoons of olive oil in a large soup pot over medium heat, and stir in the celery, onion, and garlic. Cook, stirring often, until the onion is translucent, about 5 minutes. Mix in the cooked vegetables, chicken broth, thyme, and bay leaf, bring to a boil, and reduce heat. Simmer until the celery is very tender, about 45 minutes.
  • Remove from heat, and discard the bay leaf. Puree the mixture in the pot with an immersion blender until very well blended; stir in the milk and lemon juice to serve.

4 1/2 pounds red and yellow beets, scrubbed
4 pounds medium potatoes, peeled and halved crosswise
Coarse salt and freshly ground black pepper
2 cloves garlic, unpeeled
Small bunches fresh thyme
3 tablespoons balsamic vinegar
3 tablespoons olive oil

Steps:

  • Place beets in a large pot filled with salted water. Bring to a boil, and immediately reduce to a simmer, cook about 50 minutes.
  • Meanwhile, fill another large pot with water and bring to a boil. Add salt, return to a boil and add potatoes. Cook for 10 minutes and drain immediately.
  • Preheat oven to 400 degrees. Drain beets and peel immediately. Cut each beet in half and add to a large bowl along with potatoes, garlic, thyme, vinegar and olive oil; toss to combine.
  • Place beets and potatoes in a large roasting pan; transfer to oven and cook until golden and tender, about 45 minutes. Serve immediately.

3 quarts water

1 pound beets (about 3 small)
Kosher salt and freshly ground pepper
6 sprigs thyme
6 tablespoons extra-virgin olive oil
4 1/2 cups chicken stock, plus more if needed
1 medium onion, chopped
2 carrots, chopped
2 cloves garlic, chopped
2 tablespoons red wine vinegar
1 tablespoon honey
1 Granny Smith apple
2 tablespoons chopped fresh dill
Sour cream, for garnish

Steps:

  • Preheat the oven to 400˚. Scrub the beets and put them on a large piece of foil; season with salt and pepper, add 3 thyme sprigs and drizzle with 3 tablespoons olive oil. Bake until the beets are tender, about 1 hour. When the beets are cool enough to handle but still warm, slip off their skins and chop them into large chunks.
  • Bring the chicken stock to a gentle simmer in a saucepan over medium-low heat. Meanwhile, heat the remaining 3 tablespoons olive oil in a large heavy-bottomed pot over medium heat. Borscht recipe for hearty and flavorful Russian soup that gets it's gorgeous color from fresh roasted beets. A classic beet soup recipe.

3 - 4 large beets
3 tablespoon olive oil
Kosher salt and pepper
1 medium onion (, chopped)
2 carrots (, chopped)
1 stalk celery (, chopped)
3 cups gold potatoes (, peeled and diced (about 2 1/2 ))
2 cloves garlic (, chopped)
6 cups chicken broth
1/2 teaspoon dried thyme
1/8 teaspoon allspice
2 tablespoons red wine vinegar
1 tablespoon honey
1 tablespoon sour cream

Steps:

  • Preheat the oven to 400 degrees F.
  • Scrub the beets and put each beet on a separate square of aluminum foil; Use 1 tablespoon of the olive oil and drizzle a little bit over each beet. Season with a pinch of salt and pepper. Wrap the beets loosely with the foil.
  • Transfer the wrapped beets to a baking sheet and roast for 50-60 minutes.
  • Remove from the oven and let the beets cool so they're easier to handle.
  • When the beets have cooled, the skins peel off easily. Use a knife and slice off the tip of the beet and carefully pull the skins off.
  • Chop up the beets into 1/2-inch pieces and set aside.
  • In a large pot over medium heat, add the remaining 2 tablespoons of the olive oil. Put in the onions, carrots, celery and potatoes and cook, stirring until softened, about 10 minutes.
  • Add the garlic and cook for a minute more.
  • Add the chicken broth and the beets and simmer until beets are completely tender, about 10 minutes.
  • Add the thyme and the allspice and continue simmering for another 10 minutes.
  • Use an immersion blender to puree the soup. If you don't have an immersion blender, a regular blender will work just fine and puree in batches.
  • Blend until smooth, adding more broth if the puree is too thick.
  • Stir in the vinegar and honey and season with salt and pepper to taste.
  • Top with sour cream and serve.

I recently roasted five pounds of beets and have been using them for side dishes. I decided to make soup last night, and it turned out quite nice. You may get more servings, but we really like our soup and 4 servings is all I got. I am sure that canned beets would also work quite well. I like evaporated milk because it brings richness with fewer calories, but half-and-half would also be good. I don't usually have fresh celery, but 1/2 cup of chopped celery could be used instead of the flakes and 1/4 tsp fresh ground pepper instead of the peppercorns. Add an hour to the cooking time if you need to roast fresh beets.

1 medium onion, chopped
1 -2 garlic clove, cut in half
2 cups diced potatoes, about 1 lb

1 bay leaf
2 -3 black peppercorns
3 -4 cups low sodium chicken broth
1 (12 ounce) can evaporated milk

Steps:

  • Melt the butter in a medium saucepan, and add the onions and garlic clove. Saute until the onions are transparent, but not browned.
  • Add all the remaining ingredients, except for the evaporated milk, and enough broth to cover by about 1/2 inch.
  • Bring to a boil, reduce heat and simmer, covered, for about 25 minutes, or until all the veggies are quite soft. Stir from time to time.
  • Remove from heat and fish out the bay leaf.
  • Puree with a immersion blender (or in a regular blender in batches).
  • Add the milk and more broth, if needed, and return to the stove until just heated through.
  • Note: The amount of broth will depend a bit on the exact amount of veggies and how thick you like your soup. Also, you will need to add broth or water, most likely, when reheating the next day. This is nice with a garnish of plain yogurt or sour cream.

1 head green, Savoy, or Napa cabbage (cored and thinly sliced or shredded)

Steps:

  • Gather the ingredients.
  • Put beans in a large pot and add cold water to cover generously. Bring to a boil, cover, turn off heat, and let sit 1 hour.
  • Drain and return beans to pot. Cover again with cold water, bring to a boil, reduce heat to keep a simmer, and cook until beans are tender to the bite, about 20 minutes. Drain beans and set aside.
  • Meanwhile, preheat oven to 350 F. Wrap beets in a large sheet of aluminum foil, place on a baking sheet, and cook until tender when pierced with a fork, about 45 minutes. Let beets sit until cool enough to handle.

  • Preheat oven to 400 degrees F. Line a baking pan with aluminum foil; scatter cubed beets, carrots, and sweet potatoes on lined pan and drizzle with 2 Tablespoon olive oil. Season with salt and pepper and toss to cover evenly. Roast uncovered for 35-40 minutes, until fork tender. Remove from oven and set aside.
  • In a dutch oven or heavy stockpot, melt butter over medium high heat. Add remaining tablespoon of olive oil, then add onions and leeks. Saute for about 15 minutes, stirring frequently until onions are translucent and leeks are sticky. Add garlic and cook another minute or so, until fragrant.
  • Stir in vegetable broth, then roasted vegetables, bay leaf, and thyme. Bring to a boil, then reduce heat to low and add shredded cabbage. Simmer 15-20 minutes, until cabbage is tender.
  • Add red wine vinegar, and season to taste with salt and pepper. Garnish with dollops of sour cream and chopped parsley or fresh dill. Borscht can be eaten hot or cold, and flavor deepens over time.

  • Preheat oven to 400 degrees then coat a rimmed baking sheet with cooking spray. Scrub beets, turnips, carrots and potatoes under cool running water then blot dry with a kitchen towel.
  • Trim the root and stem end from beets then place each beet on a separate sheet of aluminum foil just large enough to wrap them. Drizzle each beet with a small amount of olive oil then sprinkle with salt. Wrap them tightly in foil and set aside. Repeat this process with the peeled garlic.
  • Peel and trim turnips and carrots. Cut turnips into 1½" cubes and the carrots into large, equal-sized chunks. Cut potatoes in half lengthwise then chop onion into 1½" chunks as well.
  • Combine turnips, carrots, potatoes, onion and rosemary sprigs into a large bowl then add 3 Tbsp olive oil. Sprinkle with kosher salt then toss until completely coated. Transfer vegetables onto prepared baking sheet, spreading them into an even layer. Place the wrapped beets onto the baking sheet then place in the oven for 45–55 minutes turning every 15 minutes.
