ROASTED BACON-WRAPPED PEAR SALAD WITH VINAIGRETTE

Steps:
- Heat oven to 425°F. Place rack on cookie sheet.
- In small bowl, beat vinaigrette ingredients with whisk until well blended; set aside.
- Cut pears in half; remove core. Stuff each pear half with heaping tablespoon cheese. Wrap 1 bacon slice around each pear half. Brush pears with 1 tablespoon maple syrup; sprinkle with pepper. Place on rack on cookie sheet.
- Bake 30 to 40 minutes or until bacon is cooked.
- On each salad plate, place 1 1/3 cups of salad greens. Drizzle each with vinaigrette; sprinkle with pecans. Place 1 pear half on top of each.

I do not like traditional potato salad made with mayo or mustard, so I decided to make my own unique recipe. When I brought this to my husbands company potluck all of his friends were impressed and it was gone before I knew it.

- Preheat oven to 350 degrees F (175 degrees C).
- Toss halved potatoes with 1/2 cup olive oil, 1/2 cup garlic, and seafood seasoning. Place in a single layer onto baking sheets and bake in preheated oven until tender and golden brown, 30 to 40 minutes, depending on the size of the potatoes. Once cooked, remove from the oven and allow to cool slightly.
- Meanwhile, place bacon in a large, deep skillet. Cook over medium heat until evenly browned and crispy. Pour off bacon grease and reserve. Allow the bacon slices to cool, then crumble and set aside.
- Whisk together balsamic vinegar, garlic, salt, and pepper in a large bowl. Pour in the oil in a slow, steady stream while whisking vigorously to make a vinaigrette. Toss the roasted potatoes together with the vinaigrette and reserved bacon grease. Fold in red onion, parsley, and eggs. Allow to stand at room temperature 20 minutes before serving.

- Preheat oven to 350°F. Spread walnuts on baking sheet. Bake until toasted, about 5 minutes. Cook bacon in heavy medium nonstick skillet over medium-high heat until crisp and brown, about 5 minutes. Using slotted spoon, transfer bacon to paper towels to drain. Coarsely chop bacon. Prepare barbecue (medium heat) or preheat broiler. Cut pears into 1/4-inch slices and spray lightly with nonstick spray. Grill or broil pear slices until brown in spots, about 2 minutes per side.
- Bring Port and shallot to boil in heavy medium saucepan; reduce heat to medium-low and simmer until reduced to 1/2 cup, about 10 minutes. Strain into large bowl; cool. Whisk oil and vinegar into Port. Season with salt and pepper.
- Add greens, cheese, walnuts, bacon and pears to dressing in bowl and toss to coat. Divide among plates and serve.

- Preheat oven to 350°F. In a medium bowl, toss halved pears with butter, sugar, and rosemary. Season with salt and pepper. Transfer pears to a baking sheet, cut-side up, and roast until tender and well browned, 20 to 25 minutes; set aside to cool.
- In a medium bowl, combine shallot, bacon, and vinegar. Slowly whisk in olive oil and 2 tablespoons of bacon fat. Season with salt and pepper. Using a box grater, grate the Asian pear on the small holes into the vinaigrette; stir to combine. Set aside.
- In a large bowl, combine greens. Drizzle with enough vinaigrette to coat; toss to combine. Transfer to a large platter, and top with roasted pears. Spoon remaining vinaigrette over pears, and top with shaved cheese; serve immediately.

- Wrap one slice of bacon around each pear quarter, and secure with a wooden pick. Place pear quarters on a wire rack in a 15- x 10-inch jelly-roll pan.
- Bake pears at 350°F for 10 minutes.
- Arrange salad greens on 4 serving plates, and sprinkle evenly with pecans and Parmesan cheese. Place 3 pear quarters on each salad, and serve with Apple-Ginger Vinaigrette.

- Place bacon in a cold nonstick skillet. Cook over medium high heat until fat is rendered and bacon is crispy. Remove bacon from pan with a slotted spoon and set aside.

- Begin by cooking the bacon. Add bacon to a skillet and turn the heat to medium. Cook bacon for 8-10 minutes, flipping as needed, until golden brown and crispy. Reserve the bacon fat in a small heat-safe bowl to use for the sweet potatoes. Drain the bacon on paper towels and chop once cool enough to handle.
- Make the sweet potatoes. Preheat oven to 400℉. Line a large rimmed baking sheet with parchment paper. Add the sweet potatoes, 2-3 teaspoons of bacon fat, chopped rosemary, salt, pepper, cinnamon, and nutmeg and toss until evenly coated. Add a couple of rosemary sprigs on top and roast for 15-20 minutes, or until sweet potatoes are tender and golden brown. Discard the rosemary sprigs.
- Make the vinaigrette. In a medium bowl, whisk togther the balsamic vinegar, shallot, maple syrup, mustard, garlic, salt, and pepper. Slowly stream in the olive oil, whisking to combine. Season to taste with additional salt and pepper if desired.
- Add the kale to a large bowl and drizzle with a tablespoon or two of the vinaigrette. Season with a couple pinches of salt and freshly cracked black pepper and massage the kale with your hands for a couple minutes, until it has softened and decreased in volume. Add the arugula and toss to combine. Add the chopped bacon, roasted sweet potatoes, and pear, and season the salad with salt and pepper once more. Drizzle with desired amount of vinaigrette and toss. Serve!
