1 1/2 pounds asparagus spears, washed and ends trimmed
1 tablespoon sesame oil (or sub olive oil)
3 cloves garlic, minced (or sub 1/2 teaspoon garlic powder
2 tablespoons toasted sesame seeds (can also use black sesame seeds)
Freshly ground salt and pepper

Steps:

  • Preheat oven to 425 degrees F. Cut the dry woody ends of the asparagus and discard.
  • Place asparagus in large bowl and add sesame oil and minced garlic; toss to combine. Arrange spears on large baking sheet and generously sprinkle with sesame seeds. Season with a good amount of salt and black pepper.
  • Place in oven for 15-20 minutes or until spears reach desired consistency. They should still be a bit crisp. Remove from oven and transfer to serving plate to serve immediately.

Steps:

  • Place the asparagus in a steamer basket; place in a saucepan over 1 in. of water. Bring to a boil; cover and steam for 4-5 minutes or until crisp-tender. Transfer to a serving dish. Combine the water, soy sauce, oil, salt and pepper; drizzle over asparagus. Sprinkle with sesame seeds.

1 pound asparagus
2 tablespoons peanut oil
2 tablespoons minced shallots
1 tablespoon sesame seeds
2 teaspoons soy sauce (low sodium, if desired)
Dash of toasted sesame oil
Freshly ground black pepper

Steps:

  • Trim tough ends from asparagus spears. Set spears aside.
  • Heat a 10-inch cast-iron skillet for about 2 minutes over medium-high heat. Add 1 tablespoon peanut oil and half of the asparagus in a single layer.
  • Cook for 3 to 4 minutes without turning. Shake pan occasionally. Turn, and cook 3 minutes more. Asparagus should be bright green with brown spots.
  • Add 1 tablespoon shallots and half the sesame seeds, and cook, shaking the pan to toss asparagus, for 1 to 2 minutes or until shallots are transparent. Do not let them burn.
  • Add half the soy sauce, sesame oil, and pepper, and cook 30 seconds. Transfer to a plate, and keep warm. Repeat with remaining asparagus. Keep warm until ready to serve.

Salt to taste
1 tablespoon finely chopped shallots
1 tablespoon lemon juice
2 tablespoons butter, cut in small pieces
Pinch of nutmeg
Freshly ground pepper to taste

Steps:

  • Peel the asparagus, using a swivel-bladed knife, starting about 2 inches from the top. Remove the tough ends.
  • Bring enough water to a boil to cover the asparagus. Add salt and the asparagus and cook 2 to 3 minutes, until crisp tender. Drain well, reserving 3 tablespoons of the liquid. Arrange on warm platter.
  • Combine the shallots, lemon juice and reserved liquid in a small saucepan. Bring to a boil and cook over high heat until half the liquid evaporates. Add butter gradually, stirring rapidly with a whisk. Add nutmeg, salt and pepper. Cook, stirring rapidly, 1 minute. Spoon the sauce over the asparagus and serve.

1 lb fresh asparagus, washed,ends snapped
2 tablespoons peanut oil (I use walnut oil too)
2 tablespoons shallots, minced
1 tablespoon sesame seeds
2 teaspoons light soy sauce
1/2 teaspoon dark sesame oil
salt and pepper

Steps:

  • Heat a wok or cast iron fry pan (medioum heat) and add peanut oil.
  • Saute the asparagus until they are bright green (apprx 3 minutes).
  • Flip and continue to cook them for another 3 minutes- do not overcook.
  • Add shallots and the sesame seeds, continue cooking and shake the pan tossing the asparagus for a further minute or two.
  • Watch the seeds do not burn- if they are getting too brown turn down the heat.
  • Add soy sauce, sasame oil, salt& pepper.
  • Shake pan& cook for 30 seconds.
