1 teaspoon salt
3/4 teaspoon freshly ground pepper
1 cup apple jelly
2 tablespoons country-style Dijon mustard
2 teaspoons chopped fresh sage leaves
4 large Fuji apples, cut into wedges
2 large sweet onions, cut into wedges
1 tablespoon canola oil

Steps:

  • Heat oven to 375°F. Line roasting pan with foil; spray rack with cooking spray. Place pork on rack. Sprinkle with 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper.
  • In medium microwavable bowl, microwave jelly uncovered on High about 1 minute or until melted. Stir in mustard and sage. Brush mixture on pork.
  • In large bowl, place apples and onions. Sprinkle with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Drizzle with oil; toss to coat. Arrange apple mixture around pork.
  • Roast uncovered 50 minutes to 1 hour or until meat thermometer inserted into center of pork reads 145°F. Cover loosely with foil; let stand at least 3 minutes. Slice pork; serve with apples and onions.

1 tablespoon thinly sliced fresh sage leaves
1 teaspoon salt
1/2 teaspoon black pepper
2 medium sweet potatoes, quartered lengthwise
2 medium Gala apples, cored and quartered
1 medium sweet onion, cut into 1-inch pieces
1 lb pork tenderloin
1/2 cup real maple syrup
1 tablespoon fresh lemon juice
1/4 cup chopped pecans, toasted

Steps:

  • Heat oven to 425°F. Spray large, rimmed sheet pan with cooking spray.
  • In large bowl, mix melted butter, sage, salt and pepper. Add sweet potatoes, apples and onion; toss to coat. Using tongs or slotted spoon, transfer to pan in single layer. Add pork to bowl with mixture, and toss to coat. Add to pan with vegetables. Roast 23 to 27 minutes or until pork is no longer pink (145°F) and potatoes are fork-tender.
  • Meanwhile, in 1 1/2-quart saucepan, heat maple syrup just to boiling over medium heat. Immediately reduce heat to low; cook 7 to 8 minutes or until reduced to 1/3 cup. Remove from heat. Stir in lemon juice. Set aside.
  • Slice pork, and divide among 4 plates. Divide potato mixture on top of pork; drizzle with maple syrup. Top with pecans.

1 cup Progresso™ chicken broth (from 32-oz carton)

Steps:

  • If pork roast comes in netting or is tied, remove netting or strings. Remove fat from pork. In 10-inch skillet, heat oil over medium-high heat. Sprinkle salt and pepper over pork. Cook pork in oil about 10 minutes, turning occasionally, until brown on all sides.
  • In 4- to 5-quart slow cooker, place sweet potatoes, onion and garlic. Place pork on vegetables. Pour broth over pork.

1/4 teaspoon pepper
1 pork tenderloin (about 1 pound)
1 tablespoon canola oil
2 medium sweet potatoes (about 1 pound), peeled and cubed
1/2 cup dried cranberries
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 tablespoon Dijon mustard
1 medium apple, sliced
4 green onions, chopped

  • In a shallow bowl, mix flour, salt and pepper. Cut tenderloin into 12 slices; pound each with a meat mallet to 1/4-in. thickness. Our fabulous easy roast pork with apples is ideal for a Sunday dinner the whole family will love. It takes just five minutes to prepare before cooking

1 large onion , thickly sliced
pork shoulder joint (about 2kg)
1 tbsp rapeseed oil
flaky sea salt
½ tsp fennel seeds (optional)
2 garlic cloves
4 eating apples , cored and quartered
800ml chicken stock
roast potatoes or mashed potatoes and veg, to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Tip the onion into a roasting tin and put the pork shoulder on top. Rub the pork skin with the oil and sprinkle with salt and the fennel seeds, if using. Tuck the garlic cloves under the side of the pork. Roast for 30 mins or until the skin begins to crackle up, blister and brown.
  • Reduce heat to 180C/160C fan/gas 3, add the apples to the tin, and roast for about 2 hrs or until the meat is very tender when tested with a sharp knife. Lift the pork out to rest and spoon out the apple and onion.
  • While the pork rests, make the gravy. Tip all the fat out of the tin, then put it over a low heat. Add a splash of stock, scraping any sticky bits off the bottom with a wooden spoon. Pour in the remaining stock, then bring everything to the boil. Squash in the garlic and remove the skin. Strain the gravy through a sieve into a jug. Serve the pork and crackling in slices with the roasted apple, onion and gravy, and either roast or mashed potatoes.

1 pork roast (2 1/2 pounds), tied at 1-inch intervals

3 Gala apples, quartered

1 1/2 cups chicken broth

Steps:

  • Preheat oven to 475 degrees. Coat a heavy-bottomed metal roasting pan with 2 teaspoons oil. Place pork in center and season with salt and pepper. Roast until top is golden, about 15 minutes.
  • Toss apples and sweet potatoes with remaining 2 teaspoons oil and add to pan, arranging around pork. Return to oven and roast until apples and sweet potatoes are tender and an instant-read thermometer inserted in center of pork reads 140 degrees, about 20 minutes.
