FIG BALSAMIC PORK TENDERLOIN
This is a great, quick and easy pork tenderloin recipe topped with a sweet & tangy glaze. It's super simple to make with just a few ingredients which is perfect for weeknight cooking.

Steps:
- Preheat the oven to 375°F.
- Season the pork with salt and garlic powder and place on a baking pan.
- Combine the vinegar and fig butter and generously brush it all over the pork.
- Roast until the center of the pork reaches 145°F with a meat thermometer, about 25 to 30 minutes depending on the size of your pork and your oven.
- Let it rest for 10 to 15 minutes before slicing into 8 pieces.
- Top with parsley if desired.

HERBED PORK ROAST AND CRANBERRY CHUTNEY

- Chutney:
- Preheat oven to 450 degrees F.
- Pork Roast:
- In a small bowl, stir together herbs de Provence, onion powder, light brown sugar, olive oil, lemon juice and garlic. Place the pork roast in a shallow roasting pan or baking dish. Season with salt and pepper and then rub with the herb mixture.
- Place roast in oven and reduce heat to 350 degrees F. Roast for 30 minutes per pound, or until internal temperature reaches 165 degrees F on an instant-read thermometer. (Roast will continue to cook up to 170 degrees F out of the oven.) Remove from oven, cover with foil and let rest for 10 minutes before slicing.
- Chutney:
- In a medium bowl, combine all chutney ingredients and stir thoroughly. Cover and set aside until ready to serve.
- Serve chutney over pork roast.

- Preheat oven to 325 degrees F (165 degrees C).
- Rub tenderloin with sage and garlic salt. Place tenderloin in a baking pan or casserole. Cover meat with half of the sauerkraut. Place the apple and onion, cut side down, on top of the sauerkraut. Cover with remaining sauerkraut. Sprinkle with brown sugar.

PORK LOIN WITH FIG AND PORT SAUCE

- For the sauce: In a heavy medium saucepan, combine the first 6 ingredients. Boil over medium-high heat until reduced by half, about 30 minutes. Discard the herb sprigs and cinnamon sticks (some of the rosemary leaves will remain in the port mixture). Transfer the port mixture to a blender and puree until smooth. Blend in the butter. Season the sauce, to taste, with salt and pepper. (The sauce can be made 1 day ahead. Cover and refrigerate. Rewarm over medium heat before using.)
- For the pork: Preheat the oven to 425 degrees F.
- Stir the oil, rosemary, 1 tablespoon salt and 1 1/2 teaspoons pepper in a small bowl to blend. Place the pork loin in a heavy roasting pan. Spread the oil mixture over the pork to coat completely. Roast until an instant read meat thermometer inserted into the center of the pork registers 145 degrees F, turning the pork every 15 minutes to ensure even browning, about 45 minutes total.
- Transfer the pork to a cutting board and tent with foil to keep warm. Let the pork rest 15 minutes. Meanwhile, stir the chicken broth into the roasting pan. Place the pan over medium heat, and scrape the bottom of the pan to remove any browned bits. Bring the pan juices to a simmer. Season with salt and pepper, to taste.
- Using a large sharp knife, cut the pork crosswise into 1/4-inch-thick slices. Arrange the pork slices on plates. Spoon the jus over. Drizzle the warm fig sauce around and serve immediately.

- Make the chutney: Combine figs, butter, port, water, lemon zest, bay leaves, cinnamon, sugar, salt, and pepper in a saucepan. Bring to a boil, then reduce heat and simmer, partially covered, until liquid is the consistency of a loose jam, about 40 minutes. Discard bay leaves and cinnamon stick, or reserve for garnish. (Chutney can be refrigerated in an airtight container for up to a week; bring to room temperature, or reheat in a pan over low heat, adding water as needed.)

- Preheat oven to 400F.
- Spread roasted vegetables evenly across the bottom of a roasting pan. Drizzle oil all over the vegetables.
- Roast vegetables for 30-35 minutes or until the vegetables are just starting to get tender.
- Trim the pork tenderloin of any excess fat and membrane.
- Make the seasoning rub by mixing together the minced garlic, salt, black pepper, oregano and paprika. Rub all over the pork tenderloin.

- With a sharp knife remove silverskin from the pork. Pat dry the pork with paper towels and set aside.
- Whisk together pork rub spices in a large mixing bowl. Remove two tablespoons of the rub for another time.
- Place pork in the mixing bowl and gently pat the spice mix on all sides of the pork tenderloin.
- Air fry or roast in the oven. To roast, place seasoned pork on a roasting pan with a rack lightly sprayed with non-stick cooking spray.
- Roast at 375°F degrees for 20 minutes per pound or until a meat thermometer inserted in the center of the pork reads 145°F degrees.
- Remove pork from pan and place on a cutting board lightly tented with aluminum foil. Rest for 3 minutes before slicing.
- In a small saucepan add the fig chutney, dijon mustard and rosemary leaves (minced if preferred), sea salt, and one tablespoon of water. Heat over medium heat until all the ingredients are incorporated. Add additional water one tablespoon at a time to reach your desired consistency.
- Remove from heat once the sauce begins to bubble.
- Serve warm over sliced pork tenderloin.
