GARLIC PAN- ROASTED GAME HENS

2 teaspoons Dijon mustard
Salt
3 tablespoons olive oil
2 game hens, about 1 and 1/2 pounds each, split in half
4 small peeled garlic cloves
1/4 cup red wine vinegar
1/4 cup chicken broth
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary

Steps:

  • Heat the olive oil in a large skillet, over medium heat for about 2 minutes or until almost smoking. Add the game hens, skin side down, and saute for 5 minutes or until golden. With tongs, turn the hens over, add the garlic and saute for another 5 minutes.
  • Add the vinegar and broth which will bubble up, then the thyme and rosemary. Cover and simmer, over low heat, for 25 to 30 minutes or until the juices run clear, not rosy, when the thigh is pricked with a fork. Transfer the hens to a plate. Stir the mustard into the juices in the skillet and boil down furiously, until 1/2 cup of liquid remains, scraping the brown cooking particles into the sauce. Season with salt and pepper, spoon over the hens and serve immediately.

1/2 cup canned low-salt chicken broth
1/4 cup dry Sherry
1/4 cup fresh lime juice
3 tablespoons olive oil
2 tablespoons chopped peeled fresh ginger
2 tablespoons chopped garlic
4 1 1/4-pound Cornish game hens, rinsed, patted dry
4 bacon slices
2 tablespoons dried rosemary

Steps:

  • Preheat oven to 400°F. Boil first 6 ingredients in heavy medium saucepan until reduced to 3/4 cup, about 2 minutes.
  • Arrange Cornish game hens in roasting pan. Place 1 bacon slice and some rosemary into each hen cavity; sprinkle with salt and pepper. Roast until golden brown and cooked through, basting often with Sherry mixture, about 1 hour. Transfer Cornish game hens to platter.

3/4 cup fresh orange juice
2 tablespoons fresh ginger, minced
1 tablespoon low sodium soy sauce
2 tablespoons honey
1 tablespoon water
2 teaspoons cornstarch
2 (1 1/2 lb) Cornish hens, skinned and halved
cooking spray
1/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground ginger
1 scallion, thinly sliced garnish

Steps:

  • Combine first 4 ingredients in a saucepan; bring to a boil.
  • Combine water and cornstarch in a small bowl, stirring with a whisk.
  • Add to juice mixture in pan, stirring with a whisk.
  • Cook until thick and glossy about 2 minutes, stirring constantly.
  • Place hen halves, meaty sides up, on a foil-lined pan coated with cooking spray; sprinkle hen halves with salt,pepper and ground ginger.
  • Spoon glaze mixture evenly over hen halves.
  • Insert a meat thermometer into meaty part of a thigh, making sure not to touch bone.
  • Bake at 475° for 25 minutes or until the thermometer registers 180°.

2 Cornish hens, split in half
1/3 cup soy sauce
1/4 cup vegetable oil
3 garlic cloves, sliced
2 tablespoons sesame seeds, toasted
1 tablespoon brown sugar
2 teaspoons ground ginger
3 tablespoons lime juice
toasted sesame seeds, Lime Wedges

Steps:

  • Place hens, breast side down in a large shallow glass dish, I use a large zip-top plastic bag.
  • Combine soy sauce, vegetable oil, garlic, sesame seeds, brown sugar, ginger and lime juice until well blended.
  • Pour marinade over hens.
  • Cover and marinate for at least 8 hours.
  • Turn occassionally or shake marinating bag.
  • Remove hens from marinade.
  • Reserve marinade and bring to a full boil in a small saucepan.
  • Set aside.
  • Place hens in a greased 13 x 9 pan breast side up.
  • Bake uncovered for 45-60 minutes or until golden brown.
  • Baste occasionally with marinade.
  • Garnish with toasted sesame seeds and lime wedges.

This is a recipe I found in a magazine a few years back and it never disappoints! I usually use this for dinner parties because it can be prepared ahead of time and takes very little effort. This calls for Cornish Game Hens but I always use mixed pieces of chicken with the skin on! Just watch because the chicken breasts cook faster than the dark meat. I never alter the ingredients but I do marinate it for at least 4 hours or longer. I serve this with garlic-mashed potatoes and broccoli!! Oh- don't forget the last step with the reserve marinade! Enjoy!!

1/2 cup soy sauce
1/4 cup Dijon mustard
1/4 cup packed dark brown sugar
2 tablespoons finely chopped peeled fresh ginger

Steps:

  • Prepare BBQ (Medium heat).
  • Combine olive oil, chopped thyme, garlic,lemon peel, lime peel, honey, salt, and pepper in a baking dish and stir marinade to blend well.
  • Place hens on work surface and cover with plastic wrap and pound gently with mallet to flatten slightly.
  • Place hen halves in marinade in dish, using fingers, rub both sides of hens with marinade.
  • Let marinate 20 minutes at room temperature.
  • Grill hen halves until just cooked through and skin is lightly charred, brushing with remaining marinade, about 12 minutes per side.
  • Arrange hen on plates and garnish lemon wedges, lime wedges, and fresh thyme sprigs.

2 Cornish hens
1/2 cup ginger orange marmalade
4 garlic cloves, minced
salt & pepper
vegetable stuffing (for Cornish Hen)
vegetable oil (for brushing the birds)
1 orange, sliced

Steps:

  • Wash the hens and dry.
  • Salt and pepper the hens.
  • Stuff the birds with the vegetable dressing.
  • Cover the birds loosely with foil and bake in 375°F oven for 45 minutes.
  • Uncover and continue baking for 15 minutes.
  • Mean while mix the marmalade and garlic in a small pot to melt the marmalade.
  • Paint the birds with the glaze, decorate with the orange slices and continue baking for 15 minutes or until golden and the birds are done (watch you don't burn the birds).
