ROAST CHICKEN WITH MAPLE BUTTER AND ROSEMARY

Roast Chicken With Maple Butter and Rosemary image

This simple roast chicken combines the classic fall flavors of maple and rosemary with melted butter, which is basted over the bird as it cooks to keep it juicy. The butter browns slightly and helps caramelize the outside thanks to the sugars in the maple syrup. The result is a fragrant, sweet-and-salty chicken that makes the house smell great. There will be plenty of buttery pan juices left over, which you should most certainly pass around the table, but they would also be delicious spooned over rice pilaf.

Categories     dinner, weekday, poultry, main course

Time 1h

Yield 4 servings

Number Of Ingredients 5

1 (3 1/2-pound) whole chicken
Kosher salt and black pepper
2 to 3 rosemary sprigs, plus 2 1/2 teaspoons finely chopped rosemary
4 tablespoons unsalted butter
2 tablespoons maple syrup

Steps:

  • Heat the oven to 375 degrees. Pat the chicken dry and season it well with salt and pepper, both inside and out. Place the chicken breast-side up in a 10-inch cast-iron or ovenproof skillet and stuff the rosemary sprigs into the bird's cavity.
  • In a saucepan, melt the butter over medium-low heat. Add the chopped rosemary and the maple syrup, and cook together until the rosemary is fragrant and the mixture has thickened slightly, about 1 to 2 minutes. Spoon all of the mixture over the chicken, making sure it is evenly covered. A decent amount will end up on the bottom of the pan, and that's O.K.
  • Roast the chicken, basting with the pan juices every 15 to 20 minutes or so, until the chicken is glossy and golden brown and registers 165 degrees with an instant thermometer in the thickest part of the thigh, about 55 to 60 minutes. Remove from the oven and baste an additional time, if desired. Allow the chicken to rest for 10 minutes before carving. Whisk remaining juice and pass at the table.

Roast Chicken with Maple-Soy Glaze image

Categories     Chicken     Ginger     Poultry     Roast     Christmas     Orange     Sherry     Winter     Maple Syrup     Soy Sauce     Bon Appétit

Yield Makes 4 servings

Number Of Ingredients 10

1/4 cup pure maple syrup
1 tablespoon soy sauce
1 tablespoon rice vinegar
1/2 teaspoon hot pepper sauce
3/4 cup dry Sherry
1 4 1/2-pound chicken, fat and giblets removed, rinsed and patted dry
2 tablespoons (1/4 stick) butter, room temperature
1/2 orange, cut into 4 pieces
2 1/2-inch slices fresh ginger, smashed
2 garlic cloves, smashed

Steps:

  • Preheat oven to 375°F. Whisk maple syrup, soy sauce, rice vinegar, and hot pepper sauce in small bowl for glaze. Simmer Sherry in small saucepan until reduced to 1/2 cup, about 3 minutes.
  • Run hands under chicken skin to loosen; rub most of butter under skin over breast and thighs. Rub remaining butter over outside of chicken. Sprinkle cavity with salt and pepper. Place chicken in roasting pan. Squeeze some juice from each orange piece over chicken. Stuff cavity with orange pieces, ginger, and garlic. Tuck wing tips under. Pour Sherry over chicken.
  • Roast chicken 20 minutes. Add 1/4 cup water to pan. Roast 15 minutes longer. Brush chicken with glaze. Roast chicken until thermometer inserted into thickest part of thigh registers 170°F, brushing chicken with glaze every 10 minutes, about 40 minutes longer. Tilt chicken to allow juices from cavity to run into roasting pan. Transfer chicken to platter. Let stand 10 minutes (internal temperature will rise).
  • Spoon fat from surface of pan juices. Add any remaining glaze to pan juices. Place roasting pan over 2 burners; bring sauce to boil. Serve sauce alongside chicken.

Maple-Glazed Chicken Breasts image

Here's an easy main dish that's sure to set you on your own quest for the best syrup. Start the chicken breasts marinating on a Saturday afternoon for a quick meal later in the day, just about the time you come in from raking the last of the winter leaves off the garden.

Provided by EatingWell Test Kitchen

Categories     Low-Fat Chicken Recipes

Time 2h20m

Number Of Ingredients 7

2 tablespoons pure maple syrup
1 tablespoon reduced-sodium soy sauce
2 teaspoons lemon juice
1 clove garlic, minced
1 teaspoon minced fresh ginger
¼ teaspoon freshly ground pepper
2 boneless, skinless chicken breasts, (about 8 ounces), trimmed and tenders removed (see Tip)

Steps:

  • Whisk syrup, soy sauce, lemon juice, garlic, ginger and pepper in a small, shallow dish. Add chicken and turn to coat with the marinade; cover and refrigerate for 2 hours, turning once.
  • Coat an indoor grill pan with cooking spray and heat over medium heat. Remove the chicken from the marinade (reserving the marinade) and cook until an instant-read thermometer inserted into the thickest part of the breast registers 165 degrees F, 3 to 5 minutes per side.
  • Meanwhile, pour the reserved marinade into a small saucepan and bring to a simmer over medium heat. Cook until reduced by about half, about 4 minutes. Liberally baste the chicken with the reduced sauce and serve.

Provided by Tracy

Categories     chicken

Time 23m

Number Of Ingredients 8

1 tablespoon olive oil
2 tablespoons real 100% pure maple syrup
3 tablespoons soy sauce
2 tablespoons apple cider vinegar

  • After another about 10 more minutres of cooking, or until the glaze has mostly cooked off and chicken has reached 165 degrees, remove from heat and serve immediately.

  • Make the honey glaze by combining honey and olive oil in a small bowl. Brush the glaze all over the chicken skin, and insert the chicken in the oven. Allow it to cook for the suggested amount of time without opening the oven.
  • The exact cooking time will vary depending on the size of your chicken. Usually when you buy a whole chicken, you can find the estimated cooking time and other instructions on the package. In general, the cooking time is 20 minutes + 40 minutes per hour. A 2 kg chicken therefore takes 1 hour 40 minutes to roast.

  • Add chicken drumsticks to a large resealable plastic bag (skin on or off as desired). Combine ½ cup maple syrup, ½ cup chili sauce, ¼ cup apple cider vinegar, 1 tsp minced garlic and salt and pepper as desired. Pour over drumsticks in bag.
  • Seal bag and turn to coat drumsticks. Place in the refrigerator to marinate for 2-8 hours (I marinated mine just a couple hours).
  • Preheat grill to about 400 degrees F (I had 2 sides on, and one side off so I could move them to indirect heat if need be). Either grease the grill with oil or non-stick, or spray a piece of tin foil with non-stick spray and place on the grill over the heat (*see post for additional explanation). Place drumsticks on the grill, and cook, turning every so often, for 20-25 minutes or until meat starts to fall away from the bone. Keep an eye on them so they don't burn! Move to indirect heat if need be.
  • While drumsticks are cooking (or you can do this ahead of time if you need to), combine ¼ cup maple syrup, ¼ cup chili sauce, ⅛ cup apple cider vinegar and ½ tsp minced garlic in a small pot. Bring to a low simmer over medium heat and cook, stirring often, until reduced and thickened (about 10-15 minutes). Turn off heat and keep warm until chicken is done.
