1 boneless beef chuck roast (3 lb.)
1 bottle (10 oz.) LEA & PERRINS Worcestershire Sauce
1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
2 Tbsp. sugar

Steps:

  • Cook meat in Dutch oven or large deep skillet sprayed with cooking spray on medium-high heat 3 to 5 min. on each side or until evenly browned on both sides.
  • Pour Worcestershire sauce over meat; bring to boil. Cover; simmer on medium-low heat 20 min.
  • Mix pasta sauce and sugar until blended; pour over meat. Simmer an additional 1-1/2 to 2 hours or until meat is tender, turning occasionally.
  • Transfer meat to platter. Let stand 5 min. before serving topped with the pasta sauce mixture.

1 cup olive oil
2 tablespoons Worcestershire sauce
1 teaspoon each dried oregano, basil and thyme
1 teaspoon garlic salt
1 teaspoon salt
1/2 teaspoon pepper
1 beef tenderloin roast (3 to 4 pounds)
STUFFING:
2 cups sliced fresh mushrooms
1/2 cup sliced green onions
1 can (8 ounces) water chestnuts, drained and chopped
1/2 cup butter, cubed
2 cups seasoned bread crumbs
3/4 cup egg substitute
1/4 cup grated Parmesan cheese
1/2 teaspoon dried oregano
1/2 teaspoon dried rosemary, crushed
1 teaspoon fennel seed
1/2 teaspoon pepper

Steps:

  • In a shallow dish, combine the oil, Worcestershire sauce and seasonings. Make a lengthwise slit about three-fourths of the way through the tenderloin. Place in dish; turn to coat. Cover and refrigerate for 4 hours or overnight., In a large skillet, saute the mushrooms, onions and water chestnuts in butter until onion is tender. Remove from the heat. Stir in the remaining stuffing ingredients. Drain and discard marinade. Open tenderloin; spoon stuffing on one side. Close and tie with kitchen string. Place in a greased shallow roasting pan., Bake, uncovered, at 350° for about 1-1/2 hours or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10-15 minutes before removing string and slicing.

800 g (1lb 12oz) beef fillet
2 tbsp. olive oil
1 red onion, finely sliced
300 g (11oz) cherry tomatoes, halved
1 tbsp. red wine vinegar
100 ml (3½fl oz) hot beef or vegetable stock
Small handful of basil leaves, roughly torn

Steps:

  • Preheat the oven to 200°C (180°C fan) mark 6. Season the beef with salt and freshly ground black pepper. Heat 1tbsp olive oil in a large frying pan and fry the beef for 5min, turning, until brown on all sides. Put into a roasting tin and roast for 20-30min - it should still be pink in the middle.
  • Meanwhile, add the remaining oil to the pan in which you fried the beef. Add the red onion and cook for 5-10min over a medium heat until softened and golden. Add the tomatoes and continue to cook for 5min until they're starting to soften.
  • Add the vinegar and stock and bring to the boil. Bubble for 1-2min, then add the basil. Taste and adjust the seasoning.
  • Cover the meat in kitchen foil and allow to rest for 10min. Slice in half and put half aside for Monday's salad (when cool, wrap and chill). Slice the remainder and serve with the sauce.

10 ounces flank steak
4 teaspoons cornstarch, divided
5 teaspoons vegetable oil, divided
1/4 teaspoon salt
Dash white pepper
1 small white onion
2 medium tomatoes
12 leaves fresh basil
1 teaspoon minced garlic
2 tablespoons hoisin sauce

Steps:

  • Cut the beef lengthwise into thin 2-inch long strips. Toss the beef with 2 teaspoons cornstarch, 1 teaspoon vegetable oil, the salt, and pepper. Cover and refrigerate for 30 minutes.
  • Cut the onion into 1-inch squares. Cut the tomatoes into 8 wedges. Wash the basil and pat dry. In a small bowl, combine the remaining 2 teaspoons cornstarch and 1 tablespoon water and set aside.
  • Heat a nonstick skillet over high heat. Add the remaining 4 teaspoons vegetable oil, the beef, garlic, and onion and stir-fry for 1 minute, or until the meat browns. Continue stirring for about 2 minutes over high heat. Stir in the hoisin sauce and cornstarch mixture. As the mixture begins to thicken, after about 1 minute, add the tomatoes and basil, stir for 1 minute. Divide among plates and serve.

25g dried porcini mushrooms
400g wild mushroom
200g shallots
knob of butter , plus extra for roasting
2 tbsp olive oil
1 garlic clove , crushed
2 thyme sprigs
1.5kg/3lb 5oz beef fillet
1 tbsp plain flour
3 tbsp brandy
400ml hot beef stock
2 tsp wholegrain mustard
2 tbsp crème fraîche
handful parsley , chopped

Steps:

  • Tip the porcini into a bowl and pour over 250ml boiling water. Leave for 20 mins to soften and plump up, scoop out the mushrooms with a slotted spoon and finely chop, then strain the liquid (leaving behind the last drop as it might contain grit) and set aside.
  • Set aside about half the wild mushrooms, choosing those with the best shape, then finely chop the remainder. Chop 1 shallot very finely. Heat a large frying pan, add the butter and 1 tbsp olive oil, then cook the chopped shallot and garlic over a medium heat for 3-5 mins until softened. Tip in the chopped porcini and stir around the pan for 2 mins. Add the chopped mushrooms to the frying pan along with the thyme sprigs. Cook for 10 mins until lightly browned and any liquid has evaporated. Leave to cool.
  • Place the beef on a board. Take a sharp knife and make a slice lengthways along the fillet, about one-third of the way down, so it folds out like a book. One side of the beef should now be thicker than the other. Make another lengthways slice along the thick half of beef so the beef unfolds to a flat, evenly thick piece of meat, about the size of an A4 page. Spread the mushroom mixture all over the beef and season really well. Tightly roll up the beef to reform into a log and tie about 8 pieces of string around to secure well.
  • Heat oven to 200C/180C fan/gas 6. Place a large heavy-based roasting tin over a high heat on the hob (ensure that it will fit in your oven beforehand). Heat some more butter and the other 1 tbsp oil in the tin, then fry the beef, turning every couple of mins, until well browned all over. This will take about 10 mins.
  • Tip the whole shallots into the tin around the beef and toss them in the oil. Roast for 20-25 mins for rare, 35 mins for medium and 45 mins for well done. If you have a thick piece of meat, it may take a little longer. Ten mins before the end of cooking, stir the whole mushrooms around the pan, coating well in the oil and juices, then leave to roast alongside the meat and shallots. Leave the meat to rest on a board for 10-15 mins and keep the vegetables warm in a serving dish while you make the sauce.
  • Place the tin back on the hob. Stir in the flour, mixing well into any oil in the pan, then very carefully pour over the brandy, making sure you don't pour straight from the bottle. Use a small whisk to stir in the brandy, scraping up all the lovely browned bits from the tin. When the brandy has nearly boiled away, pour over the strained mushroom liquid and beef stock. Cook for about 5 mins until the liquid just coats the back of a spoon, then stir in the mustard and crème fraîche. Season, sprinkle with parsley and pour into a gravy boat. Cut the beef into thick slices and serve with the vegetables, gravy and some Parmesan puffs, if you like.

6 large thin slices rare roast beef (about 1/4 pound total)
16 fresh basil leaves
8 arugula leaves
Garnish: arugula and fresh basil leaves
Accompaniment: spicy tomato chutney or bottled tomato chutney

Steps:

  • Quarter lavash and spread 1 side of each quarter evenly with 1 tablespoon chutney, leaving a 1/2-inch border all around. On each quarter arrange about 1‚ slices roast beef in one layer over chutney and season with salt and pepper. Spread 1 tablespoon chutney evenly over roast beef and top with basil, arugula, and salt and pepper to taste. Tightly roll up each lavash around filling into a cone and wrap individually in wax paper and plastic wrap. Sandwiches may be made 6 hours ahead and chilled, wrapped in plastic wrap.
  • Garnish sandwiches with arugula and basil and serve with chutney.
