4 large eggs
1/4 teaspoon fresh ground black pepper
1 tablespoon butter
1/2 cup sharp cheddar cheese, shredded
3 slices bacon, cooked and crumbled
1/4 cup sausage, cooked and crumbled
1/4 cup ham, cooked and chopped

Steps:

  • In small bowl, combine eggs and pepper, whisking to beat well.
  • In a 10-inch nonstick skillet, melt butter over medium heat, rotating pan to coat bottom.
  • Add egg mixture.
  • As eggs begin to cook, gently lift edges with a spatula and tilt pan so uncooked portion flows underneath.
  • Cook for 3-4 minutes, or until just set.
  • Sprinkle cheese, bacon, sausage and ham evenly onto half of omelet.
  • Fold omelet in half.
  • Cook for 1 minute, or until cheese is melted.
  • Serve immediately.

2 tablespoons butter
½ green bell pepper, chopped
½ red bell pepper, chopped
½ Bermuda onion, sliced
7 baby portobello mushrooms, sliced
½ pound beef tip
½ cup egg substitute

Steps:

  • Melt butter in a medium saucepan over medium heat. Stir in green bell pepper, red bell pepper, onion and portobello mushrooms. Cook until tender, about 5 minutes.
  • Stir beef into the vegetable mixture, and cook until evenly brown, 5 to 10 minutes.
  • Stir egg beaters into the mixture, and cook 10 minutes, or until firm.

6 eggs
2 Tbsp water
1/4 tsp salt
1/4 tsp black pepper
1 Tbsp butter
1 can(s) (15 oz.) roast beef hash
1/3 c chopped green bell pepper
1/2 tsp chili powder
1/2 c shredded monterey jack cheese

Steps:

  • 1. In a bowl, beat together eggs, water, salt, and pepper. Melt butter in a large skillet or omelet pan; pour in egg mixture.
  • 2. Cook over low heat, pushing edges in toward center as mixture sets. Tilt and turn pan as necessary to allow uncooked portion to flow to the edge. When surface is set but still moist, slide omelet onto oven-proof plate or baking sheet.
  • 3. In a bowl, combine hash, bell pepper, and chili powder; spoon evenly over top of omelet.
  • 4. Bake in a preheated 400-degree oven for 10 minutes. Sprinkle with cheese. Bake 5 minutes longer. Fold omelet in half.
