1 cup chopped carrots
1 celery rib, chopped
1 medium onion, chopped
2 teaspoons canola oil
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
2 cups fresh or frozen corn
2 cups cubed cooked chicken breast
1/2 teaspoon minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon dried tarragon
1/4 teaspoon pepper
3/4 cup all-purpose flour
1 large egg, beaten

Steps:

  • In a large saucepan, saute the carrots, celery and onion in oil until tender. Add the broth, corn, chicken, parsley, salt, tarragon and pepper. Bring to a boil., Meanwhile, for rivels, place the flour in a bowl; mix in egg with a fork just until blended. Drop dough by teaspoonfuls into boiling soup, stirring constantly. Cook and stir for 1-2 minutes or until rivels are cooked through.

4 cups 2% milk
Minced fresh parsley and coarsely ground pepper

  • In a small bowl, combine flour and salt. Cut in egg with a fork until crumbly., In a large saucepan, heat milk over medium heat until bubbles form around sides of pan. This will forever be a soup that makes me think of my grandma. Rivels are kind of simple little dumplings dropped into any flavor of broth. When I asked my grandma how to make it, she said, "take some eggs and some flour, a little salt, and rivel 'em up!" We often ate this soup with bbq grilled chicken during the summer. (When I was younger we always had chicken rivels, but recently I made a stock with the ham bone from christmas, added some ham soup base, and diced up some leftover ham to add in. This also produced great results!)

2 large eggs
1/4 teaspoon salt
10 cups chicken broth

Steps:

  • Bring broth to a boil while you make the rivels.
  • To make rivels:
  • Put flour and salt in a bowl.
  • In a separate bowl, scramble eggs with a fork.
  • Add eggs to flour/salt mixture and "rivel 'em up" (just stir around with a fork until mixture becomes crumbly).

1/2 tsp. Salt
Pinch of Ground White Pepper
1 Large Egg, beaten
3/4 to 1 Cup Flour, as needed

Steps:

  • Stir salt and pepper into egg and add 2/3 cup flour and beat. Keep adding and beating in flour until mixture is crumbly but a bit sticky. Rub between hand or pinch off pea-sized pieces and drop them into simmering soup. Cover loosely and let cook for about 15 minutes or until rivels solidify. To make the rivels ahead of time, cook them in lightly salted boiling water or some extra soup stock and then drain and reserve them to be reheated in the soup just before it is served. Good in Chicken Soup or potato soup.

4 slices bacon, cut into 1/4-inch pieces
4 russet potatoes, peeled and cubed
½ (15.25 ounce) can yellow corn, drained
2 stalks celery, chopped
1 small onion, diced
1 carrot, chopped
4 cloves garlic, minced
1 ½ cups chicken broth
3 tablespoons butter
3 tablespoons all-purpose flour
2 ½ cups milk
2 eggs
1 cup all-purpose flour
1 cup shredded Cheddar cheese
1 cup shredded Swiss cheese
1 tablespoon finely minced fresh parsley
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Heat a skillet over medium heat. Add bacon and fry until crisp, 3 to 5 minutes. Pour bacon and grease into a large pot. Add potatoes, corn, celery, onion, carrot, and garlic. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer until vegetables are tender, about 15 minutes.
  • Melt butter in a saucepan over medium heat. Add 3 tablespoons flour and whisk until smooth. Pour in milk, bring to a boil, reduce heat, and simmer until soup is thickened, about 2 minutes.
  • Beat eggs in a bowl. Add 1 cup flour and stir with a fork until rivel dough is completely moistened.

I wanted to thin out some of my cookbook collection so I decided to place some of my favorite recipes here. This is from the Amish Friends cookbook. This is a traditional Amish soup. Rivels are similar to tiny dumplings. Chopped carrots, celery and onion may be added if desired.

1 egg, well beaten
1 1/2-2 quarts chicken broth or 1 1/2-2 quarts beef broth

¼ cup (50 g) orzo or long-grain rice
3 cups (720ml) chicken or vegetable stock
1 tbsp cornstarch
1 egg yolk
1 cup (240 g) Greek yogurt
1 tbsp dried mint
1 good pinch saffron threads or ½ tsp ground turmeric
Black pepper
¾ cup (120 g) canned chickpeas, drained and rinsed
Salt
Extra-virgin olive oil for serving
Sumac for serving
Aleppo pepper for serving

Steps:

  • Cook the orzo or rice in boiling salted water for about 10 minutes, until done (check the package instructions), and then drain. Meanwhile, bring the stock to a boil in a separate pan.
  • In a bowl, beat the cornstarch and egg yolk together with a fork until smooth, then beat in a spoonful of the yogurt until well blended. You can then add the remaining yogurt and beat until combined. Stir in the mint, saffron or turmeric, and some black pepper.
  • Take the stock off the heat and pour in the yogurt mixture, whisking vigorously. Stir over very low heat until the soup begins to simmer. Continue to stir for 3 to 5 minutes, until it thickens slightly, then add the chickpeas and heat through. Season with a little salt.
  • A few minutes before serving, mix the cooked orzo or rice into the soup.
  • Serve with extra-virgin olive oil, sumac, and Aleppo pepper for people to sprinkle on the soup if they want to.
