I love this recipe because it's the ultimate comfort food. It's easy and can be made ahead and kept in the fridge until later.

4 boneless skinless chicken breasts
1 (10 3/4 ounce) can cream of chicken soup (10 3/4 oz, do not use cream of mushroom..yuckola)
1 1/2 cups crushed Ritz crackers
1/2 cup butter, melted

Steps:

  • Place chicken in casserole dish.
  • Spread soup over chicken.
  • Sprinkle crackers over soup.
  • Pour butter over crackers.
  • Bake 350 for 45 minutes.

2 sleeves Ritz crackers (about 60 crackers), divided in half
8 tablespoons (1 stick) unsalted butter (melted and divided in half)
1 (10 3/4-ounce) can condensed cream of chicken or cream of mushroom soup
1 (8-ounce) container sour cream (about 1 cup, regular or reduced fat)
1/2 cup chicken broth (low sodium or unsalted)
1 1/2 pounds (4 medium) boneless chicken breasts (cooked and diced)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 325 F. Lightly grease a 2-quart casserole dish.
  • In a bowl, combine the soup, sour cream, chicken broth, and diced, cooked chicken.
  • Crumble 1 sleeve of Ritz crackers into the bottom of the prepared casserole dish. Drizzle half of the melted butter over the crackers.
  • Spoon the mixture over the Ritz cracker layer.
  • Crush the remaining sleeve of crackers and toss them in a bowl with the remaining melted butter. Sprinkle the buttered cracker crumbs over the chicken mixture.
  • Bake the casserole in the preheated oven for 30 to 40 minutes, or until hot and bubbly.

This was a hit with my family. I hope you'll enjoy it, too. You can also use light mayonnaise with success as well. I use small chicken breasts or butterfly large chicken breasts and split them in half so the chicken is not too thick to bake. I usually double the recipe then because my family always likes extra.

1/4 cup mayonnaise
1 tablespoon fresh lemon juice
25 Ritz crackers, finely crushed
1/4 parmesan cheese, grated
2 teaspoons dried basil
1 teaspoon dried parsley flakes
1/2 teaspoon garlic powder
fresh ground black pepper, to taste
4 small boneless skinless chicken breasts

Steps:

  • Mix mayonnaise and lemon juice; set aside.
  • In separate bowl, combine crushed crackers, cheese, basil, parsley, garlic powder and pepper.
  • Dip chicken breasts in mayo mixture, then roll in cracker crumbs mixture.
  • Place on nonstick baking sheet (I like to use the nonstick aluminium foil for this, it works great!).
  • Bake at 400 degrees F for about 20-25 minutes or until chicken is done.

2 packages Ritz crackers
1 can cream of chicken soup
8 ounces sour cream
1/2-1 cup chicken broth
4 -6 boneless skinless chicken breasts, cooked
1/2 cup margarine, melted
muenster cheese (optional)
10 -12 Ritz crackers, crushed (optional)

Steps:

  • Crumble one sleeve of Ritz crackers in the bottom of a 2-1/2qt.
  • Casserole dish.
  • Drizzle ½ of the melted margarine over the crackers.
  • Mix the soup, sour cream and broth Place the chicken breast on top of the crackers and pour the soup mixture over top of the Chicken.
  • Crush the remaining sleeve of crackers overtop of the chicken mixture.
  • Drizzle the remaining melted margarine over the crackers.
  • Bake 300 degrees for 30 – 45 minutes.
  • Place Cheese and cracker crumbs over cooked chicken- bake 10 more minutes until cheese is melted.

condensed cream of chicken soup, undiluted
3/4 cup milk
1/2 cup sour cream
1/2 teaspoon poultry seasoning
1/4 teaspoon salt
1 dash pepper
2 cups cubed cooked chicken
1/2 cup crushed Ritz cracker (about 12 crackers)
2 tablespoons butter, melted

Steps:

  • Cook noodles according to package directions; drain.
  • In a bowl, combine the soup, milk, sour cream, poultry seasoning, salt and pepper until blended.
  • Stir in the noodles and chicken.
  • Transfer to a greased 1 1/2 quart baking dish.
  • Combine cracker crumbs and butter; sprinkle over the top.
  • Bake, uncovered, at 350 degrees for 30-35 minutes or until bubbly and golden brown.
