Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
- Boil zucchini and onion in a large pot for about 10 minutes; drain. To the zucchini and onion add the butter, cheese, eggs, salt and pepper. Transfer to prepared baking dish and sprinkle cracker crumbs on top.
- Bake in preheated oven for 1 hour.

RITZ ZUCCHINI CHEDDAR CASSEROLE
This ritz cracker zucchini cheddar casserole is truly addicting! You can use yellow squash and or zucchini. I have made it for gatherings and people who don't usually like zucchini, love it!

Steps:
- 1. In a large frying pan, saute, in butter, zucchini and onion till soft and transparent. Add salt and pepper to taste. Set aside.
- 2. I a large bowl, mix crushed crackers and cheddar cheese. Place 1/2 of cracker/cheddar mixture into sauteed zucchini and onions. (reserving the other 1/2 as the topping.)
- 3. In a separate medium bowl, whisk the eggs and milk well. Pour this into the zucchini mixture and blend well. I use the same big frying pan to mix all these steps.
- 4. Place zucchini mixture into a 2 quart baking dish. Top with remaining cracker/cheddar mixture.
- 5. Bake in a preheated oven at 400 degrees for about 20-25 minutes, until golden brown on top.
DELICIOUS ZUCCHINI CASSEROLE
You've got to try this! This is my mom's recipe--it's delicious and easy to prepare! Kids love it, too! The recipe calls for bread crumbs, but we prefer crushed Ritz crackers. Depending on the size of your zucchini, most people can eat two halves.

Steps:
- Wash zucchini; boil whole for 5 to 10 minutes--no more.
- Cut off ends and slice in halves lengthwise.
- Place in single layer in buttered casserole dish.
- Melt butter and mix in cheddar cheese, sour cream, salt, paprika, and chives.
- Pour over zucchini.
- Sprinkle with bread crumbs or crackers and then parmesan cheese.
- Bake at 350 for 45 minutes or until bubbly.

This Southern squash casserole is topped off with a buttery Ritz cracker topping, then baked to perfection. An easy and delicious side dish, that pairs wonderfully with any main dish.

- Preheat oven to 350 degrees F. and grease an 8x8 baking dish with cooking spray or softened butter.
- Slice the squash into 1-inch rounds.
- Melt 4 tbsp of butter in a large skillet over medium-high heat. Add the squash and onions, cover, and cook for 10 minutes, stirring occasionally. Stir in the fresh garlic, Italian seasoning, sugar, and season with salt and pepper.
- Place the squash mixture in a colander and let it sit for 5 minutes.
- In a large bowl, mix the shredded Gruyere cheese, mayo, sour cream, and eggs until well combined.
- Add the onion and squash mixture into the mayo mixture and mix well. Season with salt and pepper.
- In a medium-sized bowl, mix the crushed ritz crackers and 2 tbsp melted butter until well combined.
- Place the squash mixture into the prepared baking dish and top it off with the ritz cracker mixture. Bake for 25 minutes uncovered and enjoy!

- Position a rack in the center of the oven and preheat the oven to 350 degrees F. Spray a 9x13 casserole dish with non-stick cooking spray, set aside.
- Heat a large skillet on medium-high heat. Add 1 tablespoon of of butter with 1 teaspoon of olive oil and sauté the zucchini squash about 4 minutes, turning half way in between. - Add 2 tablespoons of butter and 1 teaspoon of olive oil to the same skillet and sauté the crushed crackers for 1-2 minutes or until they start to get golden brown. Add 1/2 of the crackers to the bowl with the zucchini, yellow squash, and onions.
