CHICKEN PARMESAN

Chicken Parmesan image

The most perfect and simple recipe for Chicken Parmesan! The best meal for date nights at home, an easy family dinner or an Italian themed dinner party!

Provided by Gaby

Categories     Main Course

Time 30m

Number Of Ingredients 10

1 24-ounce jar of your favorite tomato based pasta sauce
4 boneless skinless chicken breasts, pounded thin to about 1/2 inch
½ cup all purpose flour
3 eggs, beaten with 2 tablespoons water and seasoned with salt and pepper
1 cup Italian seasoned panko breadcrumbs
¼ cup olive oil
1 lb fresh mozzarella (thinly sliced)
1/2 cup freshly grated parmesan
Kosher salt and freshly cracked black pepper to taste
Pasta or Salad on the side to serve

Steps:

  • Preheat oven to 400 degrees F.
  • Season chicken on both sides with salt and pepper. Dredge each breast in the flour and tap off any excess flour, then dip in the egg mixture and let excess drip off, then dredge on both sides in the bread crumbs.
  • Heat oil in a large cast iron pan and heat over high heat until almost smoking. Add 1 or 2 chicken breasts to the pan, however many will fit and cook until golden brown on both sides, about 2 minutes per side. Transfer to a plate and repeat with the remaining chicken breasts.
  • Once the chicken is cooked, carefully wipe out the excess oil and brown bits from the cast iron skillet and add ½ of the pasta sauce in the bottom of a large skillet. If the skillet doesn't fit all the chicken breasts, use a large baking dish instead.
  • Add the pan fried breaded breasts on top of the pasta, and spoon the rest of the sauce over the chicken along with a few slices of the fresh mozzarella, salt and pepper, and equal amounts of the freshly grated parmesan. Transfer to the pre-heated oven and bake until the chicken is cooked through and the cheese is melted, about 8-10 minutes. Remove from the oven and garnish with basil. Serve over a bowl of pasta.

Time 45m

Number Of Ingredients 20

2 large eggs
1 tablespoon minced garlic
2 tablespoons fresh chopped parsley
Salt and pepper (to season)
3 large chicken breasts (halved horizontally to make 6 fillets)
1 cup Panko breadcrumbs
1/2 cup breadcrumbs ((Italian or golden))
1/2 cup fresh grated parmesan cheese
1 teaspoon garlic or onion powder
1/2 cup olive oil (for frying)
1 tablespoon olive oil
1 large onion (chopped)
2 teaspoons minced garlic
14 ounces (400 g) tomato puree ((Passata))
Salt and pepper (to taste)
1 teaspoon dried Italian herbs
1 teaspoon sugar ((optional))
8 ounces (250 g) mozzarella cheese (sliced or shredded)
1/3 cup fresh shredded parmesan cheese
2 tablespoons fresh chopped basil or parsley

Steps:

  • Preheat oven 430°F | 220°C. Lightly grease an oven tray (or baking dish) with non stick cooking oil spray; set aside.
  • Whisk together eggs, garlic, parsley, salt and pepper in a shallow dish. Add chicken into the egg, rotating to evenly coat each fillet in the mixture. Cover with plastic wrap and allow to marinate for at least 15 minutes (or overnight night if time allows for a deeper flavour).
  • When chicken is ready for cooking, mix bread crumbs, Parmesan cheese and garlic powder together in a separate shallow bowl. Dip chicken into the breadcrumb mixture to evenly coat.
  • Heat oil in a large skillet over medium-high heat until hot and shimmering. Fry chicken until golden and crispy, (about 4-5 minutes each side).
  • Place chicken on prepared baking tray / dish and top each breast with about 1/3 cup of sauce (sauce recipe below). Top each chicken breast with 2-3 slices of mozzarella cheese and about 2 tablespoons parmesan cheese. Sprinkle with basil or parsley.
  • Bake for 15-20 minutes, or until cheese is bubbling and melted, and the chicken is completely cooked through.
  • Heat oil in a medium-sized pot. Fry onion until transparent (about 3 minutes), then add the garlic until fragrant (about 30 seconds).
  • Add the tomato puree, salt and pepper to taste, Italian herbs and sugar (If using). Cover with lid to simmer for about 8 minutes, or until sauce has thickened slightly. Taste test and adjust salt and pepper, if needed.

RITA'S CHICKEN PARMESAN

Provided by Food Network

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 14

8 ounces pasta
1 pound boneless, skinless chicken breasts (2 large breasts, halved)
Coarse-grained salt
Freshly ground black pepper
2 egg whites
2 slices bread, stale, coarsely processed into bread crumbs
1 tablespoon olive oil
3 cups tomato sauce, recipe follows
2 ounces skim milk mozzarella, grated
2 tablespoons olive oil
4 medium cloves garlic, minced
1 (28-ounce) can crushed or diced tomatoes with juice
Coarse-grained salt and freshly ground black pepper
1/4 cup basil leaves, hand torn

Steps:

  • Bring a large pot of water to a boil. Add the salt. Add the pasta and cook until al dente.
  • While the pasta is cooking, pound the chicken breasts between 2 pieces of plastic wrap with the flat side of a meat mallet. Season the chicken with salt and pepper.
  • In a shallow dish, whisk together the egg whites and salt and pepper. Add a splash of water if the mixture is too thick. Place bread crumbs in a shallow dish.
  • Dip the chicken first in the egg white and then in the bread crumbs. Let the chicken rest on a rack for 5 minutes.
  • Preheat oven to 375 degrees F.
  • In a large skillet, heat the olive oil over medium heat. Add the chicken and cook, turning once, until lightly golden, about 3 to 4 minutes per side (to reduce the calories even further, bake the chicken at 350 degrees F for 10 to 12 minutes instead of sauteing the chicken in oil).
  • Place a thin coating of tomato sauce in the bottom of a 9-by-13-inch baking dish. Lay the chicken over sauce. Cover the chicken with more sauce, sprinkle with cheese and bake until cheese is bubbly and golden brown, about 5 to 10 minutes.
  • Pour remaining sauce over pasta. Taste and adjust seasonings. Serve immediately.
  • Combine olive oil and garlic in a large saute pan and turn heat to medium. Cook until garlic is fragrant but not brown. Stir in tomatoes and salt and pepper to taste. Reduce heat to medium low and simmer until sauce has thickened slightly, stirring occasionally, 10 to 15 minutes. Taste and adjust seasonings. Add basil and simmer for 1 minute more.
