Craig Claiborne and Pierre Franey brought this recipe to The Times in 1988, when a properly-made risotto was still a relatively new dish for the home cook. It would make a wonderful meatless main dish or as an accompaniment to roast chicken or grilled steak.

2 cups finely shredded escarole
2 tablespoons butter
1/3 cup finely chopped onion
1 pound Arborio rice, available in specialty food shops, about 2 1/3 cups
1/2 cup dry white wine
4 cups simmering fresh or canned chicken or vegetable broth
Salt to taste, if desired
Freshly ground pepper to taste
1/3 pound smoked mozzarella cheese, cut into small cubes, about 1 1/2 cups
1/4 cup olive oil
1/4 cup freshly grated Parmesan cheese

Steps:

  • Prepare the escarole and set it aside.
  • Heat the butter in a saucepan and add the onion. Cook, stirring, until the onion is wilted. Add the escarole and cook until it is wilted. Add the rice and cook, stirring, about one minute. Add the wine and cook, stirring, about two minutes, or until the wine is absorbed.
  • Add the simmering broth, salt and pepper and cook over moderately high heat, stirring often from the bottom, about eight minutes. Add the mozzarella cheese and olive oil. Cook one minute and stir in the Parmesan cheese. Cook, stirring from the bottom, about three to five minutes.

2 tablespoons extra virgin olive oil
2/3 cup finely chopped onion
1/2 cup finely chopped fennel bulb
3 cloves garlic, minced
1 cup risotto rice, preferably Vialone Nano
1/2 cup dry white wine, preferably verdejo
About 4 cups warm chicken stock
Salt and freshly ground white pepper
1/2 pound boneless, skinless smoked trout, in small chunks
1 teaspoon grated lemon zest
1 tablespoon minced chervil

Steps:

  • Heat oil in a heavy 3-quart saucepan. Add onion, fennel and garlic and sauté over low heat until soft. Stir in rice. Cook a few minutes. Add wine. Cook over medium heat, stirring, until most of the wine has been absorbed.
  • Add stock, 1/2 cup at a time, stirring, adding more as each portion is absorbed. After adding 1 1/2 cups, season with salt and pepper and fold in trout. Keep adding stock until rice is al dente but mixture is still creamy, about 17 minutes total.
  • Fold in lemon zest and chervil. Check seasoning and serve.

250 grams Arborio rice
1 onion
1 Tbsp butter
300 milliliters white wine
600 milliliters fish stock
2 Tbsps chopped parsley
salt
peppers
2 trout
2 Tbsps lemon juice
1 Tbsp Pastry flour
4 Tbsps vegetable oil
Sage

Steps:

  • Peel onion, halve and finely dice. Fry onion in a pan with butter until translucent. Add rice and cook briefly. Pour a little white wine into rice, stirring constantly and season with salt and pepper. Pour in remaining white wine and stock and simmer until rice is cooked and creamy, but not mushy. Shortly before serving, add parsley and adjust seasonings.
  • Rinse trout, cut into pieces and season with lemon juice, salt and pepper. Turn pieces in flour. Heat oil in a pan and add fresh sage leaves. Fry trout pieces in pan, skin side down, for about 3 minutes, then turn, remove from heat and allow to sit in pan until done.
  • Put portions of risotto in preheated deep plates, sprinkle with coarsely ground pepper and put trout on top. Garnish with sage to taste.

Delicate smoked trout makes a great base for a smooth Italian rice pot with added mascarpone cheese, lemon and chives

1 small onion , chopped
1 tbsp olive oil
200g risotto rice
750ml hot vegetable stock
150g smoked trout , skin and bones removed, gently flaked into chunks
50g light mascarpone
zest 1 lemon , plus a squeeze of juice
small bunch chives , snipped

Steps:

  • In a frying pan, gently fry the onion in the oil until softened. Tip in the risotto rice and cook for 2 mins, stirring continuously. Add a third of the stock, and simmer, gently stirring until the stock has been absorbed. Add half the remaining stock and carry on cooking, stirring a bit more, until that has been absorbed too.
  • Tip in the final lot of stock and cook until creamy and the rice is just tender. Stir in the trout, mascarpone, lemon zest, most of the chives and some seasoning - it won't need too much salt. Cover and leave for 5 mins to rest. Finally season with a squeeze of lemon juice, divide between two bowls and top with the remaining chives. Great with a green salad on the side.

I saw this on a cooking show today, and made it for dinner tonight. I made a couple of changes, namely substituting smoked trout for the smoked salmon, dill for the chervil and I used regular veg stock and added freshly cracked black pepper to the finished dish.

2 tablespoons butter (plus extra) (optional)
1 chopped onion
1 cup arborio rice
3 cups reduced-sodium vegetable stock (total of 750ml)
1/2 cup grated parmesan cheese
1/2 cup fresh mixed herbs, such as basil, parsley & chervil
200 g smoked salmon

Steps:

  • Melt butter in casserole dish in microwave set on high for 2 minutes.
  • Stir in chopped onion and microwave on high for 2 minutes.
  • Add rice, microwave on high for 4 minutes.
  • Add stock and cook on high for 9 minutes.
  • Remove dish from microwave, stir rice mixture, then cook on high for an additional 9 minutes.
  • Remove dish from microwave and let sit for a couple of minutes, then stir in a dollop of butter (optional), parmesan and chopped herbs. Serve risotto topped with slices of smoked salmon.

  • Start by preparing the aromatic stock. In a small pot pour the water, then add thyme, rosemary and sage. Add the salt, too.
  • Bring the water to a boil over medium heat. When it starts boiling, lower the heat and let it simmer for about 2 minutes. Put this aside. If you use it immediately you will not need to reheat it, but if you make it well in advance, be sure to warm it up before using it for the risotto.
  • Now it's time for the risotto. Finely chop the onion (if you do not feel to master the knife skills properly, use a cutter, but do not chop it too much or it will become a mush).
  • In a larger shallow pan, add half the butter, the chopped onion and half a teaspoon of salt: the salt will help you to cook the onion without burning it. Sauté the onion in the butter over low heat until it becomes translucent and soft. Just a few minutes will be enough.
