CREEPING CRUST COBBLER
It's called Creeping Crust because the CRUST WILL RISE TO THE TOP AND CREEP OVER THE FRUIT. My family loves cobblers and this recipes adapts to any fruit and is the best I've made or eatten. Serve warm or cold and don't forget the ice cream.

Steps:
- Melt BUTTER in 10 inch baking dish and set aside.
- Mix FLOUR, SUGAR, BAKING POWDER together in bowl.
- Add MILK to flour mixture and GENTLY STIR BY HAND until all flour is wet. DO NOT OVER MIX DOUGH - overmixing makes the crust tough.
- Evenly Spoon DOUGH over the butter in your baking dish (do not mix or blend, just let the butter go where it wants to go).
- Place FRUIT over dough. - You can always use more or less fruit.
- BAKE at 350 degrees for about 30 minutes depending on your oven.
- CRUST WILL RISE TO THE TOP AND CREEP OVER THE FRUIT.
SOUTHERN PEACH COBBLER
Everybody loves this recipe, even my friends who do not like sweets. Excellent with fresh whipped cream or vanilla ice cream.

- Preheat oven to 350 degrees F (175 degrees C). Place butter in a deep 2 quart baking dish and place in oven to melt.
- In a medium bowl, mix sugar and flour. Stir in milk, a little at a time, until wholly incorporated. Pour carefully over melted butter in dish. Spoon peaches and syrup over batter.
- Bake in preheated oven 35 to 45 minutes, until crust is puffed and golden.

This was the result of letting my 3 baby cousins 'help' me in the kitchen. The oldest was 4. Surprisingly this cobbler turned out pretty well. If a bit messy.

- Preheat an oven to 350 degrees F (175 degrees C).
- Place the butter into a 8x8-inch baking dish, and place into the oven until melted. Stir the sugar, nutmeg, and self-rising flour together in a mixing bowl. Stir in the milk until no lumps remain. Pour the batter over the melted butter in the baking dish. Do not stir. Spoon the sliced peaches over top; gently pour in the juice.
- Return to the oven, and bake until the batter has firmed and the cobbler has risen a bit, 35 to 45 minutes.

EASY PEACH COBBLER

- Preheat the oven to 350 degrees F.
- Drain 1 can of peaches; reserve the syrup from the other. Place the butter in a 9- by 12-inch ovenproof baking dish. Heat the butter on the stove or in the oven until it's melted. In a medium bowl, mix the flour and sugar. Stir in the milk and the reserved syrup. Pour the batter over the melted butter in the baking dish. Arrange the peaches over the batter. Bake for 1 hour. The cobbler is done when the batter rises around the peaches and the crust is thick and golden brown. Serve warm with fresh whipped cream
- Chill a large metal mixing bowl and the wire beater attachment in the freezer for about 20 minutes. Pour the chilled cream and sugar into the cold mixing bowl and beat until it forms soft peaks, about 5 minutes. The mixture should hold its shape when dropped from a spoon. Don't overbeat or you'll have sweetened butter!
DOUBLE CRUSTED PEACH COBBLER
Steps:
- Crust:
- Place flour, sugar, and salt in a food processor and process for 5 seconds. Add butter and process until the mixture resembles coarse meal. Add water, a few tablespoons at a time, until the dough just comes together.
- Remove dough and knead lightly on a lightly floured surface until it just comes together. Divide the dough in half and form into disks. Wrap each disk in plastic wrap and refrigerate for at least 30 minutes.
- Once dough is chilled, remove from the refrigerator and roll each disk into a 9-inch square approximately 1/4-inch thick. Place on parchment paper-lined baking sheets and return to the refrigerator to chill until ready to assemble.
- Filling:
- Melt butter in a large high-sided saute pan over medium heat. Add the sugar and water and cook until sugar is dissolved. Add nutmeg, salt, peaches, and flour and cook for 5 minutes.
- Preheat oven to 375 degrees F.
- Place half of the peach mixture in the bottom of a 9-inch square buttered baking dish using a slotted spoon. Top the peaches with 1 layer of dough. Place on a baking sheet and bake until the crust is light golden brown. Remove from the oven and top the crust with the remaining peaches and cover with the other crust. Brush the top crust with heavy cream, sprinkle with sugar, and return to the oven. Bake until the crust is golden brown and the juices are bubbly. Let cool for at least 30 minutes before cutting and serving.
RISING CRUST PEACH COBBLER
Steps:
- Preheat oven to 350 degrees F Melt butter or margarine in an 8X8 glass baking dish. In a medium bowl, combine flour and sugar. Mix well, then stir in milk. Spoon mixture into baking dish, on top of melted butter. Pour peaches over flour mixture and season with cinnamon. Bake in preheated oven for 50 to 60 minutes, until peaches are bubbly and crust is lightly browned.
