Pasta alla Norma is a classic and famous vegetarian Sicilian pasta dish is full of Mediterranean summer flavours. It's easy to make and perfect for family meals and special occasions.

400 g Rigatoni ((14oz) or other pasta tubes)
500 g San Marzano tomatoes ((1lb) or tomato passata or half and half)
2-4 eggplants (Depending on size)
3 garlic cloves (peeled)
10-12 basil leaves (chopped)
150 g Ricotta Salata ((5oz) grated)
extra virgin olive oil. (as required)
salt (for pasta water and to taste)
ground black pepper (to taste)

Steps:

  • Cut the eggplants into slices and place them in layers in a dish or colander with some salt sprinkled between the slices. Let them sweat for 30 minutes to draw out the moisture. When ready rinse off the salt and pat dry.

Pasta alla Norcina: the traditional recipe image

An ancient, very popular Umbrian recipe that requires few, simple ingredients which are typical of the region.

350 gr pasta
300 gr sausage
200 gr fresh ricotta
1/2 onion
extra virgin olive oil (to taste)
white wine (to taste)
salt (to taste)
pepper (to taste)
parmesan (to taste)

Steps:

  • Heat the extra virgin olive oil with onion in a large pan.
  • Peel and crumble the sausage.
  • Place it in the pan and let it brown for a few minutes.
  • Deglaze with white wine.
  • Meanwhile, cook the pasta in plenty of salted water.
  • Add the ricotta along with a little boiling water.
  • Mix and season with salt and pepper.
  • Drain the pasta al dente and toss with the sausage sauce for at least 1 minute (add a sprinkling of black truffle if desired).
  • Serve and garnish with Parmesan.

1 pound Rigatoni
1 pound Sweet Italian Sausage
1 pint Heavy Whipping Cream
4 ounces Pancetta
1 package Parmesan Cheese Wedge

Steps:

  • Lightly brown Pancetta
  • Add Sweet Italian Sausage to Pancetta and cook through
  • In a large pot, boil Rigatoni
  • Add Heavy Whipping Cream to Pancetta and Sausage. Bring to a light boil
  • Add fresh grated Parmesan to the Heavy Whipping Cream and stir thoroughly
  • Combine Rigatoni and meats. Stir and serve
