Vegetable oil cooking spray
2 tablespoons olive oil
3 ounces thinly sliced pancetta, chopped into 1/4-inch pieces
1/2 medium onion, finely chopped
3/4 cup ricotta cheese
1/3 cup grated Parmesan
1/2 cup frozen petite peas, thawed
Kosher salt and freshly ground black pepper
24 (2 to 3-inch long) sweet baby peppers

Steps:

  • Place an oven rack in the center of the oven and preheat to 350 degrees F. Spray a baking sheet with vegetable oil cooking spray and set aside.
  • In a medium skillet, heat the oil over medium-high heat. Add the pancetta and cook, stirring frequently, until brown and crispy, about 5 to 7 minutes. Using a slotted spoon, remove the pancetta and drain on paper towels. Add the onion to the pan and cook until translucent and soft, about 5 minutes. Set aside to cool for 10 minutes.
  • In a medium bowl, combine the onion, pancetta, cheeses, and peas. Season with salt and pepper, to taste.
  • Using a paring knife, cut 1/2-inch from the stem-end of the peppers. Remove the seeds and veins. Using a small dessert spoon, fill each pepper with the ricotta mixture. Place the filled peppers on the prepared baking sheet and bake for 15 to 18 minutes until the peppers begin to soften. Remove from the oven and cool for 10 minutes.
  • Arrange the peppers on a platter and serve.

4 bell peppers, cut in half lenghwise
1 1/2 lbs whole ricotta cheese
2 eggs
1/2 cup kalamata olive, chopped
1 cup raw walnuts, chopped
1/2 cup parsley, minced
2 tablespoons basil, slivered or 2 teaspoons dried basil
1 tablespoon lemon zest, grated
fresh ground black pepper, to taste
2/3 cup parmesan cheese, grated

Steps:

  • Preheat oven to 350 degrees.
  • Cut bell peppers in half and remove seeds.
  • In a large skillet, bring 2 cups of water to a boil. Add bell peppers, reduce heat to low and simmer until just tender, about 5 minutes. Remove from pan, drain and set aside to cool.
  • In a medium bowl, combine ricotta cheese, eggs, olives, walnuts, parsley, basil, lemon zest and black pepper. Mix well with a fork.
  • Mound into pepper halves.
  • Sprinkle with Parmesan cheese.
  • Place in an ovenproof baking dish and add water to 1/4 inch depth in dish to prevent burning.
  • Bake until heated through, about 20 to 30 minutes. Place under broiler briefly to brown.

4 oz soft cream cheese (room temperature)
2 oz Ricotta cheese
1-2 tablespoons the oil from the jarred peppers
salt and pepper (to taste)
chopped basil

Steps:

  • In a bowl, combine cream cheese and Ricotta cheese, stirring until evenly incorporated.
  • Add the oil from the jarred peppers as needed, 1 tablespoon at a time, to thin out filling if necessary. (The filling should be the consistency of whipped cream cheese).
  • Season to taste with salt and pepper.
  • Fill each Piquante with about 1/2 teaspoon of filling (depending on the size of the pepper).
  • If needed, with clean hands, press the filling into the pepper with your fingers.
  • Serve immediately or refrigerate for up to 2 hours; let come to room temperature for 15 minutes prior to serving.
  • Sprinkle with chopped basil before serving.

¼ lb Chopped Spinach
1 cup Whole Milk Ricotta
1 cup Orzo
1 cup Heavy Cream
1 cup Water
salt & pepper (as per taste)
¾ cup Parmesan Cheese (grated)
2 Bell Peppers Sliced in Halves (any color)
½ cup Mozzarella Cheese
chopped Cilantro

Steps:

  • Heat butter & olive oil in a pan. As the butter melts, add the minced garlic and saute until the garlic gets fragrant. Add chopped spinach and cook until the spinach wilts.
  • Add the Ricotta along with Salt & Pepper. Stir to combine.
  • Add the Orzo, and stir to combine. Add heavy cream and water and cover cook for 5-7 minutes so that the Orzo puffs up and gets cooked. Once the Orzo gets cooked, turn off the heat and stir in the grated Parmesan Cheese.
  • Chop the Bell Pepper in half. Remove the seeds of the Bell Pepper. Stuff in the Spinach Ricotta Orzo in the Bell Pepper. Top with Mozzarella Cheese & pop it in the oven to get baked at 350F or 180C for 12-15 minutes.
  • Once baked, get it out of the oven, top with chopped cilantro, and serve.

1 onion, chopped
4 cloves garlic, chopped
½ lb ground beef
½ lb sweet italian sausage
1 teaspoon salt
1 teaspoon pepper
28 oz diced tomato, 1 can
28 oz tomato sauce, 1 can
15 oz whole milk ricotta cheese
1 cup grated parmesan cheese
½ cup fresh basil, chopped
1 egg
4 lasagna noodles, cooked and quartered
1 cup shredded mozzarella cheese
2 tablespoons oil

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Cut the top off of each pepper and remove the seeds. Transfer to a square baking dish. Bake for 20 minutes, to soften.
  • Heat 2 tablespoons of oil in a large pot, or dutch oven, over medium high heat. Add the onion and garlic, cook until softened.
  • Add the ground beef, sausage, salt, and pepper. Cook until the meat has browned on all sides.
  • Add the diced tomatoes and tomato sauce. Bring the mixture to a light simmer. Simmer for 5-10 minutes, remove from heat and set aside.
  • In a small bowl, combine ricotta, parmesan, basil, and egg. Mix together with a fork, set aside.
  • Remove the peppers from the oven, drain any excess water that accumulated inside.
  • Cut the lasagna noodles into quarters and set aside.
  • Assemble the lasagna in each pepper. Alternate 2 tablespoons of sauce, 1 lasagna noodle, 2 tablespoons ricotta mixture, and 1 lasagna noodle until the peppers are full. Top with mozzarella cheese.
  • Bake in preheated oven for 20-25 minutes, until the cheese is melted and slightly browned.
  • Rest for 10 minutes before serving.

8 ounces ditalini pasta
6 large bell peppers (any color)
3 tablespoons olive oil
2 cloves garlic, minced
1 small yellow onion, diced
1 pound Italian sausage, removed from casings
2 cups marinara sauce
1/4 teaspoon freshly ground black pepper
1/2 cup ricotta cheese
1 cup shredded mozzarella
Fresh basil leaves, to garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a large pot of salted water to a boil. Cook the pasta in the boiling water for 1 to 2 minutes less than the package instructions. Drain and rinse under cold water, then set aside.
  • Cut the tops off the peppers. Remove and discard the stems, then finely chop the pepper flesh from the tops and set aside. Scoop out the seeds and as much of the membrane as you can. Place the peppers upright in a baking dish just large enough to accommodate them.
  • Heat 2 tablespoons of the olive oil in a large skillet over medium heat. Add the garlic, onion and diced pepper tops. Cook until softened, 2 to 3 minutes. Add the Italian sausage, crumbling it as you go, and stir until it is cooked and nicely browned, 6 to 8 minutes. Stir in the marinara sauce and black pepper, then remove the skillet from the heat. Fold in the ricotta, half of the shredded mozzarella and the reserved pasta. Stir until well combined. Divide the mixture among the prepared peppers. Top the peppers with the remaining mozzarella and drizzle with the remaining 1 tablespoon olive oil.
  • Add 1/2 cup water to the bottom of the baking dish. Cover with foil and bake for 25 minutes. Remove the foil and bake until the peppers are soft and the cheese is bubbly, another 15 minutes.
  • Serve garnished with fresh basil.
