1-1/2 cups water
1 cup uncooked arborio rice
1 teaspoon salt
2 large eggs, lightly beaten
2/3 cup sun-dried tomato pesto
2 cups panko bread crumbs, divided
Marinara sauce, warmed

Steps:

  • Preheat oven to 375°. In a large saucepan, combine water, rice and salt; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, 18-20 minutes. Let stand, covered, 10 minutes. Transfer to a large bowl; cool slightly. Add eggs and pesto; stir in 1 cup bread crumbs., Place remaining bread crumbs in a shallow bowl. Shape rice mixture into 1-1/4-in. balls. Roll in bread crumbs, patting to help coating adhere. Place on greased 15x10x1-in. baking pans. Bake until golden brown, 25-30 minutes. Serve with marinara sauce.

1 cup plus 2 tablespoons olive oil or canola oil
4 cloves garlic, finely chopped
1/2 small Spanish onion, finely grated
1/4 cup freshly grated Parmesan
1/4 cup finely chopped fresh flat-leaf parsley
1 tablespoon finely chopped fresh oregano
2 large eggs
Salt and freshly ground black pepper

8 ounces ground chuck (80/20)
8 ounces ground pork (80/20)
4 to 6 tablespoons breadcrumbs
2 cups all-purpose flour
3 eggs
Kosher salt
2 tablespoons olive oil
1 small Spanish onion, finely diced
2 cloves garlic, finely chopped
Pinch of red pepper flakes
One 28-ounce can crushed tomatoes
1 teaspoon finely chopped fresh oregano
Kosher salt and freshly ground black pepper

3 tablespoons chopped fresh basil
Fresh ricotta, for garnish

Steps:

  • For the meatballs: Heat 2 tablespoons of the oil in a small saute pan over medium heat. Add the garlic and onions and cook until soft, about 1 1/2 minutes. Remove from the heat and let cool slightly.
  • Whisk together the Parmesan, parsley, oregano, eggs, 3 tablespoons cold water, the sauteed garlic and onions and some salt and pepper in a large bowl until combined. Add the chuck and pork and gently mix together until combined. Begin adding breadcrumbs a few tablespoons at a time until the mixture just holds together. Cover and refrigerate for at least 1 hour and up to 8 hours. The longer you let the mixture sit, the more the flavor develops.
  • For the fresh pasta: In a food processor, combine the flour and eggs. Pulse until it comes together as a dough. Remove and knead until smooth. Let rest for at least 30 minutes.
  • For the tomato sauce: Heat the oil in a medium saucepan over medium heat. Add the onions and cook until soft, about 4 minutes. Add the garlic and red pepper flakes and cook for 30 seconds. Increase the heat to high, add the tomatoes and oregano and season with salt and pepper. Cook, stirring occasionally, until slightly thickened, about 15 minutes. Taste for seasoning (adding a pinch of sugar if needed) and stir in the basil.
  • Form the meatball mixture into 1 1/2-inch balls. Heat the remaining 1 cup of oil in a large saute pan over medium-high heat until it begins to shimmer. Add the meatballs and fry until golden brown on all sides.
  • Add the meatballs to the sauce, reduce the heat to medium and continue cooking until the meatballs have cooked through and the sauce has thickened more, about 15 minutes longer.
  • To cook the pasta, bring a large pot of water to a boil and add salt.
  • Roll out the dough in portions using a pasta roller. Cut out spaghetti using a pasta cutter and place the fresh pasta on a tray lined with parchment.
  • Boil the pasta until al dente, 1 to 2 minutes. Toss the pasta with some of the warm sauce and a little bit of pasta water in a saute pan.
  • Transfer the sauced pasta to a platter and top with the meatballs (using a slotted spoon). Ladle the remaining tomato sauce over the spaghetti and meatballs. Dollop ricotta on top and grate lots of Parmesan over the top. Garnish with fresh basil sprigs and parsley leaves.

Steps:

½ onion, minced
2 tablespoons olive oil
3 cloves garlic, minced
1 pound ground beef
1 cup whole milk ricotta cheese
¼ cup packed chopped Italian parsley
1 egg, beaten
1 ½ teaspoons kosher salt
½ teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
⅓ cup dry bread crumbs
2 tablespoons olive oil
1 (28 ounce) jar marinara sauce
1 cup water

Steps:

  • Saute onion in 2 tablespoons olive oil in a skillet over medium heat until onion is translucent, about 5 minutes. Stir garlic into onion and turn off heat. Transfer onion mixture to a large mixing bowl.
  • Stir ground beef, ricotta cheese, parsley, egg, kosher salt, black pepper, and cayenne pepper with onion mixture until almost combined; stir in bread crumbs and continue to mix until thoroughly blended.
  • Roll about 2 tablespoons of mixture into a 1-inch ball for each meatball. Pour 2 tablespoons olive oil in same skillet used to cook onions. Place skillet over medium heat and brown meatballs on all sides in hot oil, about 5 minutes. Hold a crumpled paper towel in a tongs and use it to remove excess grease from skillet.
  • Pour marinara sauce and water over meatballs in skillet. Stir to combine and bring to a simmer. Reduce heat to medium-low and simmer, stirring occasionally, until meatballs are cooked through and no longer pink in the center, about 30 minutes.

It's Martedi Grasso (Fat Tuesday) and window displays of pastry shops around Italy are piled high with castagnole (fried sweet dough balls) for the occasion. Why not celebrate with our ricotta balls dipped in orange-infused honey?

14OZ. sheep's milk ricotta
11OZ. honey
9OZ. primo sale cheese
1 1/2CUPS re-milled durum wheat
2/3CUP granulated sugar
4 egg yolks
2 oranges
1PACKET saffron
baking powder
acquavite
peanut oil

Steps:

  • Line two plates with paper towels. Let the ricotta and primo sale cheeses drain for 30 minutes on the plates to absorb the excess liquid.
  • Then vigorously whisk the ricotta with the sugar, until you have a creamy foam.
  • Crumble the primo sale cheese into fine pieces and grate the zest from 1 orange.
  • In a mixing bowl, combine the primo sale, egg yolks, saffron, orange zest, 1 Tbsp. acquavite, 1 1/4 cups re-milled durum wheat semolina, and 1/2 tsp. baking powder.
  • Cover and refrigerate it for 30 minutes.
  • For the orange-infused honey, grate the zest of 1/2 an orange and heat it with the honey, being careful not to bring it to a boil. Remove from the heat and let steep until you are ready to form the balls.
  • Shape the ricotta mixture into 1 1/2" balls and place them on a tray.
  • In a frying pan, add sufficient peanut oil to cover the ricotta balls. Bring oil to 350°F.
  • In the meantime, line a baking tray with paper towels. Dust balls with the remaining semolina and fry until nicely golden and drain on paper towels.
  • Dip in the orange-scented honey and serve on a plate.

Pecorino romano (grated)60 gr

2 eggs
1 garlic clove
Extravergin Olive oil 5 spoons
tomato passata 750 ml

Steps:

  • put the bread crumbs in a bowl with the ricotta, eggs, chopped garlic, grated parmesan and pecorino, chopped parsely, salt and pepper and mix all the ingredients together.
  • in a sauce pan put the garlic, oil and cook for a few min till the garlic gets golden, add the tomato passata with a couple of pinches of salt, bring to the boil and cook for 15 min. Once the sauce is cooked you can start preparing the ricotta balls.
  • Grease your hands with a little oil and roll some mixture to make the balls as big as a walnut and put them one by one in the sauce.
  • Cook for approx. 15 min and serve immediately.

  • If using stale bread slices remove the crusts and blend in a food processor to make breadcrumbs. Drain the ricotta well and then put it in a bowl and mash with a fork.   • While the sauce is simmering put a pot of water on to boil for the pasta. Add salt once it starts to boil and bring to the boil again. Cook the pasta al dente according to the instructions on the packet. When the pasta is ready drain it and put it back into the pot. Add some tomato sauce to the pasta and mix well.
  • While the pasta is cooking add the ricotta balls to the tomato sauce. After 5 minutes turn them gently and continue for another 5-10 minutes. Plate the cooked pasta that you have mixed with some tomato sauce. Put 2-3 ricotta balls onto the pasta with some more tomato sauce.
