Easy chili recipe for a large number of people.

2 (29 ounce) cans tomato sauce
2 (28 ounce) cans peeled and diced tomatoes
2 cups diced onion
1 tablespoon Italian seasoning
1 pound bacon, diced
2 pounds spicy sausage
3 pounds lean ground beef
1 (32 ounce) bottle hickory smoke barbeque sauce
½ cup chili powder
4 (15.25 ounce) cans kidney beans, undrained
2 (1 ounce) squares unsweetened chocolate, chopped

Steps:

  • In a large pot or Dutch oven over medium heat, combine tomato sauce, tomatoes, onion and Italian seasoning.
  • In a large skillet over medium heat, cook bacon until slightly crisp. Drain and stir into the pot.
  • In the same skillet over medium heat, cook sausage until brown. Drain and stir into the pot.
  • In the same skillet over medium heat, cook the beef until brown. Drain and stir into the pot.
  • Stir the barbeque sauce and chili powder into the pot; taste and adjust seasonings. Stir in the kidney beans and chocolate and simmer until flavors are well blended. Serve.

The Best Chili image

There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

1/4 cup vegetable oil
1 pound ground beef chuck, preferably coarse grind (see Cook's Note)
1 large yellow onion, diced
1 jalapeno pepper, seeded and diced
4 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 teaspoons tomato paste
1 1/2 cups low-sodium beef broth
One 28-ounce can whole peeled tomatoes, crushed
Two 15.5-ounce cans kidney beans, undrained
Sour cream, shredded Cheddar and sliced scallions, for serving
Tortilla chips, for serving

Steps:

  • Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
  • Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
  • Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
  • Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
  • Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
  • Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
  • Top with sour cream, Cheddar and scallions. Serve with tortilla chips.

3 lbs ground chuck
2 tablespoons olive oil
1 whold onion, chopped
3 tablespoons chili powder
2 teaspoons oregano
2 tablespoons cocoa
2 teaspoons garlic powder
1/2 teaspoon red pepper flakes
2 beef bouillon cubes
2 teaspoons cayenne
1 teaspoon cumin
2 teaspoons Worcestershire sauce
6 drops hot pepper sauce
3 tablespoons vinegar
2 -3 corn tortillas, chopped in pieces
2 (10 ounce) cans rotel (mild,med,or hot)
1 (12 ounce) can beer (I sometimes use water)
salt and pepper
1 (14 ounce) can beans (any kind, I like pinto)

Steps:

  • Heat oil, add onion and cook until soft.
  • Add ground beef and brown.
  • Add everything else ,except beans.
  • Cook on simmer for 30 minute.
  • Drain beans and add to chili. Warm up and enjoy.

Rick Stein's Carne con Chile is inspired by his travels in Mexico, where he learned the authentic home-cooked dish that originated the chilli con carne so widely eaten around the world today.

  • In a dry heavy-based frying pan, toast the guajillo chillies until fragrant but not burnt. Transfer them to a bowl and pour over 450ml of just-boiled water. Leave them to soak for 15-20 minutes. In the same pan, dry fry the tomatoes and garlic until softened and charred. Set aside the tomatoes and garlic until cool enough to handle, then peel off and discard the garlic skins and quarter the tomatoes, skin and all. Heat a tablespoon of lard or oil in a large flameproof casserole and brown the cubes of beef all over. It's best to do this in batches, adding another tablespoon of lard or oil as needed. Transfer each batch of meat to a plate. Then add the remaining lard or oil to the pan and fry the onion for 3-4 minutes until softened. Add the cumin, oregano, allspice and bay leaf. Cook for 2 minutes, then turn off the heat. Preheat the oven to 180°C/ Fan 160°C. Put the soaked chillies and about 150ml of their soaking liquid in a blender and add the garlic, tomatoes, salt and chipotles en adobo. Blend until as smooth as possible, then tip into the casserole with the onions and add the browned beef. Stir in about 300ml of the chilli soaking water. Reserve the rest in case you need more later. Bring to the boil, then turn down to a simmer, cover and cook for 1½ to 2 hours until the beef is tender. Check the water a couple of times during cooking and make sure that the meat doesn't dry out. Add a little more water if necessary. While the meat is cooking, prepare the tortillas and a selection of toppings. Serve with warmed tortillas, toppings and beans or rice, if desired.
