Steps:
- Dissolve yeast in warm water, blend in ginger and 1 T sugar. Let stand in warm place until mix is bubbly (about 15 minutes).
- Stir in remaining sugar, salt, milk and oil.
- Mix in flour one cup at a time. Place dough in well greased 2 lb coffee can. Let rise until doubled in size. Bake 60 minutes or until top is brown.

- Measure ingredients into baking pan of bread machine recommended by the manufacturer. Insert pan into the oven chamber. Select Dough Cycle.
- Remove dough to a lightly floured surface; cover with a large bowl and let rest for 10 to 15 minutes.
- Choose one or more of the shaping and finishing method described below.
- Clover leaf rolls:.
- Divide the dough into 12 portions. Divide each into 3 pieces. Roll into balls. Place 3 in each cup of a lightly greased muffin tin. Cover and let rise in a warm, draft-free place for 30 to 45 minutes or until doubled in volume. Bake at 375°F (190°C) for 15 to 20 minutes or until rolls sound hollow when tapped on the bottom.
- Golden Glaze:
- Brush freshly baked rolls with 1 to 2 tbsp of melted butter.
- Basic Pan Rolls:
- Divide dough into 12 portions and place, just touching in a 8 inch pan.

- In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, oil and 3 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough. , Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down dough. Divide in half and shape into loaves. Place in 2 greased 9x5-in. loaf pans. Cover with kitchen towels; let rise in a warm place until doubled, about 1 hour. Preheat oven to 375°., Bake until golden brown, 25-30 minutes. Remove from pans to wire racks to cool.

EXCELLENT WHITE BREAD
This straightforward loaf is the white bread of your dreams, and its fluffy slices make for evenly browned toast. The 1/3-cup of sugar makes this mildly sweet and perfect for peanut butter and jelly sandwiches, but you can cut it down to 2 tablespoons if you'd rather have something more neutral in flavor. You do need some sugar, however, to feed the yeast and ensure a lofty rise. This recipe makes two loaves, one for now, and one for the freezer or to share with a lucky friend.

- In a large electric mixer bowl, dissolve yeast in 1/4 cup warm milk. Add the remaining warm milk, the sugar, the salt, the butter and the eggs. Add 5 cups flour and mix with paddle attachment until smooth, about 2 minutes. Switch to hook attachment and knead on low speed, adding more flour if necessary until dough is stiff and slightly tacky, about 10 minutes.
- Grease a large bowl with butter and turn dough out into the bowl. Flip over dough so greased side is up, cover with plastic wrap or a kitchen towel and set in a warm, draft-free spot until doubled in size, about 1 1/2 to 2 hours. Generously butter two 9-x-5 loaf pans.
- When dough has doubled in size, turn it out onto floured surface and knead for 3 minutes. Return to greased bowl, cover and let rise again for 30 minutes.
- Press down dough with your hand to expel the air. Divide dough in half and place each half into a loaf pan. Brush tops of loaves with remaining melted butter.
- Cover and let rise until dough is just above the tops of pans, 45 minutes to 1 hour.
- Heat oven to 400 degrees. Bake bread for 10 minutes, then reduce heat to 350 degrees and bake for an additional 20 to 30 minutes, or until loaves sound hollow when tapped, the tops are brown and the internal temperatures are 200 degrees. Remove loaves from pans and let cool on wire racks.

- Grease one flowerpot and two 6 x 3 x 2-inch metal or foil loaf pans set aside.Dissolve yeast and 1 teaspoon sugar in warm water. Let stand until foamy, 5 to 10 minutes.Place flour, butter, 1/4 cup sugar, and salt in a food processor bowl fitted with the metal blade. Process 5 to 10 seconds until combined. Add yeast mixture and egg through the feed tube. Turn on processor and pour cold milk through feed tube continue processing 60 seconds. Remove dough from processor bowl and form into a smooth ball.Place in a greased bowl, turning to coat all surfaces. Cover and let rise in a warm place, free from drafts, until doubled, about 1 to 1 1/2 hours. Punch down dough. Divide into three portions. Form each into a smooth ball. Place in flowerpot and pans. Cover and let rise until doubled, about 45 minutes.Place on a baking sheet and bake in lower third of preheated 375° oven 15 to 18 minutes until browned. Remove from containers and cool on a wire rack.Wrap securely to retain freshness. To give as a gift, return bread to flowerpot and wrap as desired.High Altitude Adjustments: At 6,000 feet, use 1 package yeast. Rising times may vary.
