A lovely, crispy waffle perfect for the morning.

2 cups all-purpose flour
1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
2 eggs
1 ½ cups warm milk
⅓ cup butter, melted
1 teaspoon vanilla extract

Steps:

  • In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.
  • In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.
  • Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

Wonderful Waffles image

I've tried other waffle recipes, and this is one is by far the best! The texture is moist, not dry - and they freeze well. Cool on wire racks before freezing, then just pop them in the toaster to reheat.

2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
¼ cup butter
¼ cup brown sugar
3 egg yolks
2 cups buttermilk
3 egg whites

Steps:

  • Preheat waffle iron. In a medium bowl, sift together flour, baking soda, baking powder and salt; set aside.
  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg yolks. Blend in flour mixture alternately with buttermilk.
  • In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.
  • Spray waffle iron with non-stick cooking spray, or lightly brush with oil. Ladle the batter onto preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

Scandinavian Sweetheart Waffles image

Heart-shaped waffles are a traditional treat throughout Scandinavia, made crisp in Sweden and soft-textured in Norway. Topped with jam or berries and whipped cream, or wafer-thin slices of gjeitost (Norwegian brown goat cheese), they're a favorite with coffee or as a snack. This recipe is my adaptation of Norwegian-style waffles served by my friends Megan and Sverre in Trondheim, Norway.

2 eggs, separated
¼ cup white sugar
1 teaspoon vanilla sugar
¼ cup water
3 tablespoons butter, melted
1 cup buttermilk
1 ½ cups all-purpose flour
¼ teaspoon ground cardamom
1 pinch salt

Steps:

  • Place egg yolks into a large mixing bowl with the sugar, and beat until light and frothy. Mix in the vanilla sugar and water until evenly combined, and stir in half the melted butter, half the buttermilk, half the flour. When mixture is smooth, mix in remaining butter, buttermilk, flour, cardamom, and salt, and beat again to a smooth batter.
  • In a separate bowl, beat the egg whites with an electric mixer until they form stiff peaks; gently fold the egg whites into the batter, incorporating as much volume as possible.
  • Preheat a waffle iron according to manufacturer's directions.
  • Spoon about 1/3 cup of batter into the preheated waffle iron, close the lid, and cook until the waffle is golden brown, about 5 minutes. Remove waffle to a plate. If using a heart-shaped iron, break the waffle into individual hearts to serve. Repeat with remaining batter.

The Best Buttermilk Waffles image

In creating this recipe, we tried out many different methods-folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

1 3/4 cup all-purpose flour (see Cook's Note)
2 tablespoons granulated sugar
1 3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 3/4 cup well-shaken buttermilk
2 large eggs
2 teaspoons vanilla extract
1 stick unsalted butter, melted and slightly cooled
Nonstick cooking spray
Maple syrup, jam, berries or yogurt, for serving

Steps:

  • Preheat a waffle iron to medium-high.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  • In a medium bowl, whisk together the buttermilk, eggs and vanilla. Whisk the buttermilk mixture into the flour mixture until a batter is formed. Whisk in the butter until incorporated, being careful not to overmix the batter.
  • Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. (Take into consideration that the batter will spread once the lid is closed.) Close the iron and cook until the waffles are a deep golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron has a well-seasoned or nonstick surface, it may not be necessary to spray it between each batch.)
  • Serve the waffles immediately with butter, syrup, jam, berries or yogurt.

CAROL'S CINNAMON WAFFLES



Carol's Cinnamon Waffles image

If you like those cinnamon waffles from the frozen food department of the grocery store, you'll love these! I developed this recipe because I don't care for syrup. Most waffles need the sweetness of syrup to make them special. These waffles are yummy just as they are; no syrup necessary! Whipped cream and fruit are a great addition if you want to go all out or just add butter and powder sugar to the top. These may brown quicker than standard waffles because of the sugar in them, so test the first one and adjust the time. I have also added 2 tablespoons ground flaxseed; you can't taste a difference. Enjoy!

We love to serve these on Waffle Wednesdays for dinner or for large group gatherings. These are high in fiber and flavor with whole wheat flour, flax seed meal, and wheat germ, and are quite delicious and filling. Serve with homemade blueberry syrup, butter syrup, yogurt, peanut butter and honey, or fresh strawberries and whipped cream. Make a huge batch with a mixer and freeze the uneaten waffles for easy weeknight meals or quick and hearty breakfast warmed and crisped in the toaster.
