- Firstly, sieve the all purpose flour, cocoa powder and baking powder in a bowl. Set aside
- In another heatproof bowl, add the salted butter, coffee powder, and chopped dark chocolate. Microwave or place the mixture on a double boiler until melted. Set it aside to cool a little
- In a big bowl, whisk the sugar and eggs until the sugar melts and the mixture becomes pale. This should take about 2 mins. Then, add the chocolate & butter mixture to this (make sure this mixture is not hot while adding it to the eggs) Mix well
- Next, add the flour & cocoa powder mixture to it and mix. Make sure there are no lumps
- Throw in the walnuts and chocolate chips into the batter (dont forget to save some to sprinkle on the top of the cake)
- Once the batter is ready, pour this mixture in a 7 inch square baking dish lined with parchment paper or butter paper
- Bake this in a preheated oven at 180 degrees for about 25 to 35 mins. When you insert a skewer into the cake, the cake should have crumbs on it and not come out completely dry
- Once done, let the brownie sit in the baking dish and come to room temperature before cutting into squares. This yields neat pieces that do not crumble or break easily. Enjoy !!

- To begin making the Rich Chocolate Brownies, we will first preheat the oven to 165 C and grease and flour a square baking dish
- If your recipe asks for 3 eggs, measure 9 tablespoons of flax meal along with 6 tablespoons of water. Stir well and let the mixture rest for about 15 minutes. This process of resting helps the flax meal mixture develop a gelatinous consistency similar to eggs.
- Place the rich dark chocolate and butter (oil) in a saucepan over low heat and stir until smooth and all the chocolate has melted. Allow the chocolate to cool slightly
- In a large bowl, whisk together the sugar and Flax Eggs (eggs) until fluffy. Gradually add the flour, cocoa and baking powder and fold in the chocolate mixture and whisk well until well combined. You will notice the mixture thicken due the the warmth of the chocolate. At this point pour the brownie mixture into the prepared baking dish.

- Roast the walnuts in an oven set at 180°C for 10 minutes or until lightly toasted and skins have begun to crack.
- Allow the walnuts to cool then coarsely chop and set aside.
- Melt the butter and dark chocolate in a microwave container and stir until smooth . Allow mixture to cool slightly then transfer to a large bowl.
- Add the brown sugar and white sugar to the chocolate mixture and stir.
- Add the eggs and vanilla extract to the bowl and stir.
- Stir in the flour, salt, walnuts and chocolate chips. Mixture should be quite thick.
- Grease and line a 20cm round cake tin, pour in cake mixture and then smooth the surface.

- Allow cake to cool in the tin before turning out onto a wire rack to cool completely.
- Serve dusted with icing sugar.
