BOOZY FRUITCAKE RECIPE - MAKE-A-HEAD CHRISTMAS FRUITCAKE RECIPE
A traditional brandy soaked rich fruit cake is as boozy as it can get. The secret to making this boozy cake is making it ahead of time so the flavors mature and the alcohol has macerated with the fruit. Which is why I call it a boozy Christmas cake or make-a-head Christmas cake.

Steps:
- Add all the fruit in a large glass bowl and combine with the brandy. Cover and leave overnight. (do not use metal bowls for soaking)
- Preheat the oven at 150C / 300 F
- Line a 7-inch square deep loose bottom pan with parchment paper.
- Cream butter and sugar until light and fluffy
- Add eggs one at a time
- Followed by the treacle, vanilla, orange and lemon zest.
- Add the flour and combine well.
- Next, add the soaked fruits with all the juices and alcohol - stir well to combine
- Lastly, add the mixed chopped nuts - combine well
- Pour into the prepared baking pan
- Wrap the outside of the pan with a damp tea two. (Dip a tea towel in water and squeeze out the water so it's damp but not wet. Then wrap it around the cake. If necessary use a pin to secure it in place)
- Bake for approximately 4 hours or until a skewer inserted in the center comes clean. If the top starts browning too quickly tent loosely with a foil
- Remove from the oven and let cool completely before you invert on to a cooling rack.
- When cooled turn upside down - use a skewer and make some holes in the base.
- Carefully spoon the cherry liquor over letting it soak as you spoon the alcohol.
- Place it back upside on a place so it will continue to soak any leftover on the plate.
- Double wrap in greaseproof papers well.
- Followed by aluminum foil making sure the foil does not come in contact with the cake.
- Store in a tin in a cool dry place.
- Feed once a week with more brandy or cherry brandy up to Christmas. Making sure to wrap it well and store again.

RICH BRANDY CHRISTMAS FRUITCAKE

- The night before you cook this place all the fruit fruit peel and nuts into a bowl and soak for 12 hours in the brandy and orange juice; Stir every time you go into the kitchen!
- pre-heat oven to 275ºF/140ºC.
- Grease and line with greaseproof paper an 8 inch/20cm round cake tin.
- Sift the flour salt and spices into a large mixing bowl.
- In a separate bowl cream the butter and sugar together until the mixtures fluffy.
- Beat the eggs and add them a little at a time.
- Fold in the flour and spices.
- Stir in the fruit that has been soaking along with any excess liquid.
- Mix in the treacle.
- Spoon into the cake tin and spread out evenly.
- Cover the cake with a double square of greaseproof paper with a small hole in the top.
- Bake the cake on the lower shelf for 4& 1/4- 3/4 hours.
- When the cake is cold wrap in double greaseproof paper and store in an airtight tin.
- Feed the cake every two days for the first 2 weeks with a spoonful of brandy and/or orange juice and/or glacè cherry syrup.
- First poke little holes in the cake with a knitting needle or a skewer.
- Come Christmas you will have a very very rich fruit cake.
- Use royal icing to ice it or almond paste and royal icing, I don't like almond paste!
GRANDMA'S MOLASSES FRUITCAKE

- Preheat oven to 300°. Grease and flour three 9x5-in. loaf pans. Line bottoms with waxed paper; grease and flour the paper. Combine currants, raisins, walnuts, candied citron and 1/4 cup flour. Toss to coat; set aside., Cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in molasses. In another bowl, whisk baking soda, cinnamon, nutmeg, cloves and remaining flour; add to creamed mixture alternately with coffee. Stir into currant mixture and mix well., Transfer to prepared pans. Bake until a toothpick inserted in the center comes out clean, 1-1/4 to 1-1/2 hours. Cool in pans 10 minutes before removing to wire racks to cool completely. Wrap tightly and store in the refrigerator for at least 2 days to blend flavors. Slice and bring to room temperature before serving. Refrigerate leftovers.

BRANDY-AGED FRUITCAKE
Traditional Aged Fruitcake with dried fruits, spice and lots of brandy. This cake should be made at least 4 weeks before serving and can be made 3-4 months ahead of time. Serve unadorned or with the marzipan and fondant to finish.

- Combine all the nuts and dried fruits with the lemon zest and juice. Add the 2/3 cup of brandy and toss to coat the fruit and nuts with the liquor. Cover the bowl and let it sit overnight.
- Preheat the oven to 350F. Line a 9" cake pan with a parchment round. (see note)
- Sift together the flour, baking powder, cinnamon,nutmeg, ginger and salt. Set aside.
- In a large mixing bowl, cream the butter and sugar until light and aerated. Scrape down the bowl and the beater. Add the eggs, two at a time. Mix until combined then scrape down the bowl and the beater.
- With the mixer running on low speed, add the dry ingredients in 3 batches and mix until combined. Fold in the soaked fruit and all the liquid.
- Pour the batter into the prepared cake pan and spread it out to an even layer. Bake until a toothpick poked in the center of the cake comes out clean, about 55 minutes. As soon as the pan is removed from the oven pour 1/4 cup of brandy over the top of the cake.
- Cool the cake to room temperature before removing from the pan. Wrap the cake in two layers of plastic wrap and set aside at room temperature.
- Once a week for at least 4 weeks, unwrap the cake and generously brush on all sides with more brandy.
- Unwrap the cake. Glue the cake to a cardboard cake circle using a dab of royal icing. Trim the cake cardboard to the same size as the cake. Place on another cardboard circle or serving plate. Ice the cake with apricot preserves.
- Roll the marzipan to a 14" round. Roll the marzipan onto the rolling pin then transfer and unroll onto the cake. Trim the marzipan flush with the bottom of the cake and board. Brush the marzipan with brandy.
- Roll the fondant to a 14" round and cover the cake over the marzipan. Trim the fondant flush with the bottom of the cake and board.
- Add dragees, stencils, glitter and marzipan holly or other decorations as you like.

RICH FRUIT CHRISTMAS CAKE
This dark rich moist fruit cake can be prepared in advance. Feed it regularly with Brandy, Rum or Whisky and it will mature over time. It's a great Christmas cake recipe is the perfect size for a single tier wedding cake.

- In a large bowl, mix together the dried fruits, glace cherries, and orange zest. Pour over the Brandy and orange juice and mix well. Cover the bowl with a clean tea towel and leave for at least 6 hours, preferably overnight. Stirring occasionally. Allowing all the fruits to soak up the brandy and orange juice.
- THE NEXT DAY
- Preheat the oven to 170c deg Fan assisted oven
- Grease and line 1 x 8 inch/20cm round deep-sided loose bottom cake tin with baking parchment. Line the outside of the tin with a folded sheet of brown paper. Tied with string. This will help prevent the edges of the cake from baking too dry and possibly burning.
- In a large separate bowl, mix together the flour, salt and mixed spice. Using your finger tips rub in the butter until you have a breadcrumb consistency.
- Add the sugar and ground almonds. Using your hands or a wooden spoon. Mix until well combined. Break up any remaining clumps of sugar and butter.
- Add the soaked fruit, eggs and treacle and gently mix together until everything is well combined. This part can be done a lot easier and quicker when using a good electric mixer with a large bowl.
- Pour the batter into the prepared tin making sure the top is level and smooth. Bake in the oven for 1hr 20mins. Then turn the temperature down to 160c Fan and bake for a further 55 - 60 mins or until the cake is fully baked. Testing the centre of the cake with a skewer until it comes out clean. To help prevent the top of the cake from over baking, you can place a sheet of baking parchment across the top and over the cake.
- If the skewer still has uncooked mixture left on it, continue baking at the same temperature. Testing again every 10 mins until the skewer comes out clean.
- Leave in the tin to cool completely.
- Take out of the tin and leave the inner lining on the cake. Feed the cake with a couple of tablespoons of Brandy.
- Wrap in more baking parchment and feed every other day for a few weeks. Leave wrapped and in an airtight container until required.

RICH CHRISTMAS FRUITCAKE
I have been making this particular fruit cake recipe for about 28 years now. It's a traditional cake for weddings, birthdays and Christmas in Australia. Although I submitted the original recipe, I personally would soak the fruit for a day or two in port or brandy before I baked the cake, as I like a really moist and boozy fruit cake. I double or triple the recipe depending on the size tins I will be using, and often make about 12 of these in varying sizes as gifts for Christmas.

- Line a 8-inch round, or 7-inch square tin with 3 layers of paper.
- Having said that, I find it easier to line it with one, then wrap the OUTSIDE of the tin in several layers of newspaper, tied with kitchen string.
- Weigh and measure ingredients.
- Sift flour salt and spices.
- Cream butter and sugar.
- Gradually add the eggs to the creamed mixture.
- Mix well.
- It may look a bit curdled at this stage, but that's OK.
- Add the fruit, nuts, then the flour and liquid.
- Stir gently and thoroughly. I do this with my (clean) hands.
- Place in the prepared tin, hollowing out the centre a little to allow for rising.
- You can decorate the top with blanched whole almonds now if you wish.
- Bake in a 325°F oven (decreasing the temp gradually as the cake cook) for 3- 3 1/2 hours.
- When baked, leave in the tin for at least 10 minutes before turning out-until completely cold is better though.
- This is good made in about October, and stored wrapped in foil in an airtight container until Christmas.

- Start the cake the day before you want to bake it. Remove the hard stalk from the figs and chop the figs, apricots and dates into small pieces and place in a large bowl with the cranberries and candied peel.
