PIZZA SNACK CUPS

I make these all the time. They are good for quick suppers or kids birthday parties. My husband loves them.

Yield 10 snacks

Number Of Ingredients 4

1 (10 ounce) can refrigerated biscuits (10 biscuits)
1/2 lb ground beef
1 (14 ounce) jar ragu quick pizza sauce
1/2 cup shredded mozzarella cheese

Steps:

  • Pre heat oven to 375.
  • In 12 cup muffin pan, evenly press each biscuit in bottom and up the side of each cup; chill until ready to fill.
  • In skillet brown beef, drain and add pizza sauce.
  • Evenly spoon mixture into each one of the cups.
  • Bake for 15 minutes.
  • Sprinkle with cheese and bake an additional 5 minutes until cheese is melted and biscuits are golden.
  • Let stand for 5 minutes before serving.

Found this on one of my many search conquests. Not really sure of its origin, but it's good all the same. Hope you enjoy!

Yield 12 pizza cups

Number Of Ingredients 7

1 lb ground beef
2 tablespoons onions
2 garlic cloves
6 ounces tomato paste
1 teaspoon italian seasoning
12 refrigerated biscuits
3/4 cup cheese

Steps:

  • Brown meat, onion and garlic; drain.
  • Stir in tomato paste and seasonings.
  • Cook on low for 5 minutes (until thick, stirring constantly).
  • Press biscuits on bottom and up sides of a greased muffin tin (they won't cover the whole side).
  • Spoon meat mix evenly and sprinkle each with cheese.
  • Bake at 375°F for 10-15 minutes.
  • NOTE: When I first made this, I didn't think it would make much of a "cup" around the meat, but to my surprise they came out in perfect little "cups".

2 tubes (8 ounces each) refrigerated round crescent rolls
1 can (8 ounces) pizza sauce
1/4 cup finely chopped onion
1/3 cup finely chopped green pepper
2 ounces sliced turkey pepperoni, chopped
1 cup shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 375°. Separate tubes of dough into 8 rolls each; halve the rolls. Press dough onto the bottom and up the sides of miniature muffin cups coated with cooking spray. , Spoon pizza sauce into each cup. Sprinkle with onion, green pepper, pepperoni and cheese. Bake until the crusts are browned and cheese is melted, 15-18 minutes.

1 can(s) (12 ounces) refrigerated biscuits (10 biscuits)
1/2 lb ground beef
1 jar(s) (14 ounces) ragu pizza quick sauce
1/2 c shredded mozzarella cheese (about 4 ounces)

Steps:

  • 1. Preheat oven to 375 F. In muffin pan, evenly press 1 biscuit on bottom and up side of each cup; chill until to fill. In 10-inch skillet, brown ground beef over medium-high heat; drain. Stir in Ragu Pizza Quick Sauce and heat through. Evenly spoon beef mixture into prepared muffin cups. Bake 15 minutes. Sprinkle with cheese and bake an additional 5 minutes or until cheese is melted and biscuits are golden. Let stand 5 minutes. Gently remove pizza cups from muffin pan and serve.

These are part of my OAMC rotation. My kids love these. I normally double this recipe as they go fast at my house.

1 egg, beaten
1/2 cup pizza sauce
1/4 cup seasoned bread crumbs
1/2 teaspoon italian seasoning
1 1/2 lbs ground beef
1 1/2 cups shredded part-skim mozzarella cheese
additional pizza sauce (optional)

Steps:

  • In a bowl, combine the egg, pizza sauce, bread crumbs and Italian seasoning.
  • Fold beef into mixture and mix well.
  • Divide meat mixture into 12 greased muffin cups.
  • Press mixture into bottom and up the sides.
  • Fill center with cheese.
  • Bake at 375°F for 15-18 minutes or until meat is no longer pink.
  • Serve immediately with additional pizza sauce and cheese if desired.
  • Or cool, place in freezer bags and freeze for up to 3 months.
  • To use frozen pizza cups:.
  • Thaw in the refrigerator for 24 hours.
  • Heat in microwave on high for 2-3 minutes or until heated through.
  • Top with additional pizza sauce and cheese if desired.
