Ingredients

1 head romaine lettuce
1 head iceberg lettuce
1 (10 ounce) jar artichoke hearts, drained
1 (10 ounce) can hearts of palm, drained and chopped
1 (4 ounce) jar pimiento, diced and drained
1 large red onion, thinly sliced
salt and pepper
shaved deli hard salami (optional,but wonderful)
1/2 cup olive oil
1/3 cup red wine vinegar
1/2 cup parmesan cheese

Steps:

Mix all salad ingredients together.
Mix dressing together.
Toss and serve.

Ingredients

6 large cloves garlic, minced and divided
2 tablespoons fresh lemon juice
1/4 cup olive oil
2 pounds boneless, skinless chicken breast, cut into 1-inch-wide strips
3/4 cup Italian-seasoned dry bread crumbs
1/4 cup ( 1/2 stick) butter

Steps:

Combine 2/3 of the garlic with lemon juice and oil in a self-sealing plastic bag. (Cover and refrigerate remaining garlic.) Add chicken to the bag, turning to coat. Remove the air from the bag, seal and refrigerate for 2 to 12 hours, turning the bag occasionally.
Prepare a medium-hot fire in the grill. Thread chicken strips on skewers. Spread bread crumbs on a plate. Roll chicken in bread crumbs to coat.
Grill chicken skewers for about 8 to 12 minutes or until cooked completely, turning halfway through.
While chicken cooks, in a small skillet, melt butter over medium-low heat. Add the remaining garlic; cook just until softened.
Remove chicken from skewers. Drizzle with garlic butter and serve.

Ingredients

1/2 cup olive oil
5 tablespoons white wine vinegar
1 tablespoon mayonnaise
1 tablespoon sugar
1 1/2 teaspoons dried oregano
1 garlic clove, finely grated
Kosher salt, freshly ground pepper
1 small head of iceberg lettuce
1/2 small red onion, sliced into rings
2 ounces provolone piccante cheese, thinly sliced
1 cup drained small mozzarella balls, torn
10 peperoncini, halved if large

Steps:

Whisk oil, vinegar, mayonnaise, sugar, oregano, and garlic in a small bowl. Season with salt and pepper.
Cut lettuce in half through stem end. Tear apart into large pieces. Arrange on a platter and scatter onion, provolone, mozzarella, and peperoncini over, nestling in among leaves. Drizzle with dressing to coat to your liking (you'll probably have some extra) and top with more black pepper.

Dressing:
1 head iceberg lettuce
1 head romaine lettuce
1 medium red onion, sliced thin
1 jar pimentos
1 can hearts of palm
1 can artichoke hearts
1/2 cup parmesan
1/3 cup red wine vinegar
2/3 cup oil
salt and pepper

Steps:

Mix dressing and refrigerate a couple hours. Mix salad ingredients and refrigerate. (I mix salads in a small trash bag) When ready to serve, add dressing to bag (or bowl) and mix thoroughly. Shake some parmesan on top for serving.

This salad is a copycat of the salad served at Rich & Charlie's Restaurant in St. Louis. They serve it out of a barrel so the lettuce is a little wilted, but unique and tasty.

1 red onion, sliced thin
1 (4 ounce) jar pimentos
1 (14 ounce) can artichoke hearts
1 cup parmesan cheese
1 (15 ounce) can black olives
8 ounces fresh mushrooms, sliced
1/2 cup olive oil
1/3 cup red wine vinegar
1 -2 tablespoon sugar

Steps:

Mix and toss the salad ingredients.
Mix the dressing, add to salad and toss.
Let stand in the refrigerator for 2-3 hours before serving.

1 Head of Romaine lettuce (washed and torn into bite-size pieces)
Cauliflower florets
1 cup Parmesan cheese (shredded)
1 small red onion (sliced or chopped)
1 can artichoke hearts, quartered
1 lb bacon, cooked crispy and broken into pieces
croutons (optional)
Dressing:
1 cup mayo (I use lowfat Hellman's)
1 pkg Hidden Valley Ranch dressing mix

Steps:

Mix dressing together and chill for several hours. Put lettuce into large bowl, add remaining ingredients and toss. Just before serving, toss salad with dressing. (I don't use all the dressing)
