PIGEON PEAS AND COCONUT (GANDULES CON COCO)

Pigeon Peas and Coconut (Gandules Con Coco) image

Pigeon peas and coconut originated from the Samaná region of the Dominican Republic. It is a savory dish with a hint of sweetness from the coconut milk. Serve over white rice. Swiped shamelessly from the 'net for ZWT9. I personally will leave the cilantro out! You can get pigeon peas (gandules) dried, frozen or canned.

COCONUT RICE WITH PIGEON PEAS

Coconut Rice With Pigeon Peas image

In 2002, Florence Fabricant spoke with Mark Militello, the chef and owner of the now-closed Mark's Las Olas in Fort Lauderdale, Fla., who brought this recipe to The Times. The chef uses Uncle Ben's converted rice here on the advice of his cooks Pascal Dieumeme and Orenus Olean. It's parboiled, and less sticky, to yield firm, separate grains, a nice counter to the earthy pigeon peas. You can start the peas from from scratch, but it's also fine to use canned or frozen. The whole dish is finished with scallions, bell pepper, thyme and more coconut milk. As tempting as it may be, don't rush the rice to the table: Let it rest off the heat. It'll help its texture and flavor.

Categories     one pot, side dish

Time 1h

Yield 6 servings

Number Of Ingredients 11

4 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
1 red Scotch bonnet chile
1 1/2 cups Uncle Ben's rice or long grain rice, rinsed until water runs clear
3/4 cup unsweetened coconut milk
1 cup cooked pigeon peas (gandules); canned or frozen can be used
2 1/4 cups chicken stock
Salt and freshly ground black pepper
1/3 cup finely chopped scallion (green part only)
1 medium red bell pepper, seeded, cored and diced
1/2 tablespoon fresh thyme leaves

Steps:

  • Heat oil in heavy saucepan. Add onion, and cook over medium heat until soft. Stir in chili and rice, and cook a few minutes. Fold in 1/2 cup coconut milk and pigeon peas. Add stock. Bring to a simmer. Season to taste with salt and pepper.
  • Cover pan with double layer of plastic wrap so wrap clings tightly to pan, extending about an inch below rim. Place cover of pan over plastic wrap to make a tight seal. Cook over low heat 15 minutes. Remove pan from heat, and set aside 15 minutes.
  • Uncover pan, and remove plastic, using mitts because the steam can burn. Stir rice. Spread out in shallow baking dish to cool.
  • To serve, remove chili. Fold in scallions, bell pepper and thyme. Check seasonings. Return to saucepan, cover, and gently reheat. Fold in remaining coconut milk, and serve.

VEGAN ARROZ CON GUANDULES (RICE WITH PIGEON PEAS)

Vegan Arroz con Guandules (Rice with Pigeon Peas) image

Creamy, hearty, and flavorful, this Vegan Arroz con Guandules is a classic Puerto Rican dish. Perfect as a side, but also delicious enough for a main!

Provided by Caitlin Shoemaker

Categories     Side

Time 45m

Number Of Ingredients 18

2 tbsp Neutral Cooking Oil (can sub with Water or Veggie Broth)
½ Yellow Onion, diced
¼ each Red, Yellow, Green Peppers
3 cloves of Garlic, minced
2 tbsp Tomato Paste
1 cube of Vegan Chicken-Flavored Bouillon
2 tsp Capers
2 Bay Leaves
1 tsp Salt-Free Seasoning Blend*
1 tsp Cumin
½ tbsp Badia's Sazon Tropical
1 tsp Goya's Sazon con Azafran
2 tbsp Tamari
1 15.5 oz can Guandules Secos, with liquid ("Dry Pigeon Peas," NOT Green!)
1 13.5 oz Can Full-Fat Coconut Milk
2 cup White Rice
1 bunch Cilantro, coarsely chopped
Black Pepper and Oregano, to taste (Optional)

Steps:

  • First, add the cooking oil to a medium pot and raise to medium-high heat. Add the Onion, diced Bell Peppers, ½ of the bunch of chopped Cilantro, Bay Leaves, and Garlic to the pot. Sauté until the Onions are translucent, about 3-5 minutes. Use a wooden spoon to cook everything; plastic and metal affect the final flavor of the dish!
  • Add the Vegan Chicken-Flavored Bouillon and Tomato Paste to the pot and use the spoon to "mash" them into the Vegetables. Sauté for an additional 2-3 minutes.
  • Then, add the Capers, entire can of Guandules Secos, Tamari, Cumin, and Sazon con Azafran. Sauté until the spices are fragrant and evenly distributed, about 3 minutes.
  • Add ½ of the remaining Cilantro to the pot along with the can of Coconut Milk and remaining spices, then bring everything to a simmer over high heat.
  • Rinse the Rice under cold water, then immediately add it to the simmering mixture. Once a few grains of rice start to float to the top of the mixture, add the rest of the Cilantro, mix well, and cover. Reduce the heat to low and let simmer for 20 minutes. Fluff with a fork, serve, and enjoy! Leftovers will keep in the fridge for up to 5 days.

  • Heat your caldero or Dutch oven to medium heat, and add your olive oil, bacon/ham (if using) and sofrito. Stir constantly until fragrant and tender, but not browned, about 4 minutes.
  • Add in the drained pigeon peas, Italian seasoning or oregano, bay leaves, and water/broth. Add the cilantro and/or olives, if using. Allow the liquid to come up to a boil, and taste it for salt. If it needs more saltiness, add in another chicken bouillon cube. You want this liquid to be highly seasoned, as it will determine the final seasoning of the rice.
  • Once the mixture is boiling, add the rice. Stir the rice to get it submerged and distribute the pigeon peas throughout.
