2 Cup (500 mL) Milk
1 Cup (250 mL) Thai Kitchen Coconut Milk Regular
1 Small Club House Cinnamon Stick and Club House Ground Cinnamon (for garnish)
1 Cup (250 mL) Thai Kitchen Jasmine Rice
2 tsp (10 mL) Club House Vanilla Extract
3 tbsp (45 mL) Billy Bee Honey
1 Mandarin Orange, peeled and pulled into segments to garnish
Toasted coconut to garnish

Steps:

  • 1. Place the milk, coconut milk and cinnamon stick into a saucepan and bring to a gentle boil. 2. Add the rice, vanilla and honey. Reduce heat and simmer uncovered. Stir occasionally to prevent sticking. 3. While the rice is cooking, heat a small pan to medium heat and gently toast the coconut until it is slightly golden brown. 4. Once rice is cooked and mixture is creamy, approximately 15 minutes, transfer to a bowl and garnish with the mandarin orange pieces, some cinnamon and toasted coconut.

2 cups unsweetened vanilla-flavored almond milk, divided
1 cup orange juice
1 cup Arborio rice
¼ teaspoon salt
1 egg, lightly beaten
1 teaspoon orange extract
⅓ cup cream of coconut (such as Coco Lopez®)
1 teaspoon grated orange zest

Steps:

  • Combine 1 3/4 cups almond milk, orange juice, rice, and salt in the pot of an electric pressure cooker (such as Instant Pot®). Seal pressure cooker, choose the "Manual" setting and high pressure. Set the timer for 4 minutes.
  • Allow pressure to release naturally for 10 minutes; release any remaining pressure with the quick-release valve.
  • Whisk the remaining 1/4 cup milk, egg, and orange extract together in a small bowl. Add 1/2 cup of the the cooked rice; stir constantly until well combined. Pour mixture into the pot; select "Saute" mode. Add cream of coconut and orange zest. Cook and stir until egg is set, about 2 minutes. Stir.

ORANGE-CINNAMON RICE PUDDING

1 strip orange peel, plus 1/2 teaspoon grated zest
1 tablespoon unsalted butter
Kosher salt
1 cup arborio rice
4 cups whole milk
3/4 cup granulated sugar
2 cinnamon sticks
2 teaspoons vanilla extract
1/2 cup mascarpone cheese
3 tablespoons confectioners' sugar
Ground cinnamon, for sprinkling

Steps:

  • Combine the orange peel, 2 cups water, the butter and a pinch of salt in a saucepan and bring to a boil. Add the rice and return to a boil, then reduce the heat to low and cook, shaking the pan occasionally, until the liquid is absorbed, about 15 minutes.
  • Bring the milk, granulated sugar, cinnamon sticks and vanilla to a low boil in another saucepan. Add the rice and simmer over medium-low heat, stirring, until the liquid is mostly absorbed, about 15 minutes. Stir in the grated orange zest and 1/4 cup mascarpone.
  • Transfer the rice pudding to a large bowl and let cool, then cover with plastic wrap and refrigerate until cold and set, about 2 hours.
  • Beat the remaining 1/4 cup mascarpone and the confectioners' sugar in a bowl. Remove the cinnamon sticks and orange peel from the pudding. Serve topped with the mascarpone and cinnamon.

1/2 cup mandarin orange liquid (can)
1/2 cup white sugar
3 tablespoons butter, melted
1 teaspoon vanilla
3 eggs, beaten
1/2 cup raisins
1 cup drained mandarin orange section

Steps:

  • Combine all ingredients except mandarin oranges.
  • Mix well.
  • Place in lightly buttered crockpot.
  • Cover and cook on Low for 4 to 6 hours or High for 2 to 3 hours.
  • Stir after first 30 minutes.
  • Stir in mandarin oranges during last half hour.
  • Serve warm.
