I took a few ideas a created my own rice pudding recipe. My family loves it (me particularly), and it is quick and easy to make.

¾ cup uncooked short-grain white rice
1 ½ cups water
2 cups 2% milk
1 teaspoon maple flavored extract
½ cup white sugar
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
1 pinch ground cloves
1 tablespoon butter

Steps:

  • Combine the rice and water in a saucepan over medium heat. Bring to a boil, and let simmer over low heat for 20 minutes, or until all of the water has been absorbed.
  • Stir in 1 3/4 cups of the milk, sugar and maple flavoring, bring to a boil, and let simmer over medium heat until thick and creamy, about 15 minutes. Stir in the remaining milk, nutmeg, cinnamon, cloves and butter. Cook stirring over low heat for another 5 minutes. Pour into a casserole dish, or serving bowls, and let stand for 5 minutes before serving. This can be served cold also.

2 cups milk
2 tablespoons (1/4 stick) unsalted butter, more for greasing pan
1 tablespoon minced or grated ginger
3/4 cup sugar (plus 1 tablespoon, optional)
Pinch salt
1 1/2 to 2 cups cooked rice
2 eggs, beaten

Steps:

  • Heat oven to 350 degrees. In a small saucepan over low heat, warm milk, butter, ginger, 3/4 cup sugar and salt just until butter melts; cool slightly. Butter a 4-to-6-cup baking dish; put rice in it.
  • Add eggs to cooled milk mixture and whisk; pour mixture over rice. Bake for 30 to 45 minutes, or until custard is set but still a little wobbly. If you like, sprinkle top with extra sugar and run under broiler for about 30 seconds. Serve warm or at room temperature.

1 quart milk

Steps:

  • Combine rice, milk, sugar, fresh and ground ginger, and salt in a medium saucepan, and bring to a simmer over medium heat. Cook, stirring occasionally, until most but not all of the liquid has been absorbed and rice is tender, about 20 minutes. Remove from heat, and stir in heavy cream until combined. Serve warm.

Steps:

  • Rice pudding:
  • Combine ginger, coconut milk, milk, rice, sugar, and salt in a large saucepan. Scrape in seeds from vanilla beans; add pods. Bring to a boil, stirring occasionally. Reduce heat, cover, and simmer until rice is al dente, 15-18 minutes. Uncover and cook, stirring often, until rice is tender and mixture coats spoon, 5-8 minutes longer. Transfer to a large bowl and cover with plastic wrap, pressing directly onto surface. Let cool. Remove ginger and vanilla pods.
  • Do ahead: Rice pudding can be made 2 days ahead; chill. Bring to room temperature before serving.
  • Topping and assembly:
  • Toast amaranth with chia and sesame seeds in a dry medium skillet over medium heat until they begin to pop and sesame is golden, about 3 minutes. Transfer to a small bowl; stir in cookies, raw sugar, and cinnamon
  • Serve rice pudding topped with toasted seed mixture, mango, and a few mint leaves.

Just like the Creamiest Rice Pudding recipe my mum used to make me when growing up in Ireland, this is one sweet dessert you won't want to miss.

1/2 cup (4oz/115g) starchy rice ((Aborio, Calrose, Sushi rice))
3 cups (24floz/675ml) whole milk
1/2 cup (4floz/115ml) cream*
1/4 cup (2oz/57g) sugar
2 tablespoons (1oz/28g) butter
1/8 teaspoon cinnamon
1 teaspoon vanilla extract

Steps:

  • Into a medium saucepan over low heat add in all of the above ingredients and allow to come to a gentle simmer.
  • Cook on low for roughly 35-40 minutes or until the rice is tender and the liquid has thickened but not absorbed fully. Stir occasionally.
  • Remove from the heat while the rice pudding is still quite 'saucy' and allow to sit for 20 minutes. During this time the rice will continue to absorb the liquid leaving you with a rich and creamy rice pudding.
  • Serve warm or cold with a dollop of raspberry jam on top.
  • Once cold, store in the fridge for up to 4 days.

1 (1 1/2- to 2-pound) piece pumpkin or butternut squash, halved and seeded
1 tablespoon unsalted butter
2/3 cup plus 2 teaspoons granulated sugar
2/3 cup long-grain white rice
1/2 teaspoon salt
5 cups whole milk
8 large egg yolks
1 teaspoon vanilla
1/4 cup finely chopped crystallized ginger (2 ounces)
2 tablespoons turbinado sugar such as Sugar in the Raw (optional)
Special Equipment
a blowtorch (optional)

Steps:

  • Bake pumpkin:
  • Put oven rack in middle position and preheat oven to 450°F.
  • Arrange each piece of pumpkin, cut side up, on a sheet of foil. Top each with 1/2 tablespoon butter and 1 teaspoon granulated sugar. Wrap separately in foil and bake, cut sides up, in a shallow baking pan until flesh is tender, about 1 hour.
  • Open foil and cool pumpkin slightly, then scoop flesh into a food processor and purée until smooth.
  • Reduce oven temperature to 350°F.
  • Cook rice while pumpkin bakes:
  • Heat rice, salt, 4 cups milk, and remaining 2/3 cup granulated sugar in a 2- to 3-quart heavy saucepan over moderate heat, stirring, until very hot. Transfer to a large metal bowl set over a large saucepan of simmering water (or to a double boiler) and cook over low heat, covered, stirring occasionally, until rice is tender and most of milk is absorbed, 1 to 1 1/4 hours. (Add more simmering water to saucepan if necessary.) Remove pan from heat and keep rice warm, covered.
  • Make pudding:
  • Lightly whisk yolks in a large bowl, then whisk in vanilla, ginger, 1 1/3 cups pumpkin purée (reserve remainder for another use), and remaining cup milk. Gradually stir in warm rice, then pour mixture into a buttered 2-quart flameproof shallow baking dish (not glass). Set baking dish in a roasting pan and bake pudding in a hot water bath , uncovered, in oven until set, 50 minutes to 1 hour.
  • If caramelizing pudding, sprinkle evenly with turbinado sugar, then move blowtorch flame evenly back and forth over sugar until sugar is melted and caramelized. Serve warm or at room temperature.

Rice pudding prepared in an electric pressure cooker is both speedy and simple - the kind of thing you can whip up in minutes in between other kitchen tasks. This version calls for short-grain rice, which turns plump and pleasingly sticky as it cooks in a combination of milk and heavy cream. Adding a vanilla bean lends deeply aromatic notes, but if you don't have one, just stir 1 tablespoon vanilla extract into the pudding along with the egg yolks. Or skip the vanilla and add a teaspoon of whole cardamom pods to the pot to round out the spicy flavor of the cinnamon. Whipped cream might be overkill on a pudding this rich, but only in the very best way.

Large pinch of fine sea salt
1/2 cup heavy cream
2 egg yolks
1/2 cup raisins (optional)

Steps:

  • In the pressure cooker pot, stir together the rice, milk, sugar, cinnamon stick, orange zest (if using), vanilla bean and seeds, and salt.
  • Lock the lid into place and cook on high pressure for 10 minutes. Let the pressure release naturally for 10 minutes, then manually release the remaining pressure.
  • Open the lid and discard the cinnamon stick, orange zest and vanilla bean.
  • In a small bowl, whisk together the cream and yolks. Whisk into the rice and continue to stir until slightly thickened, about 2 minutes. (It will still look soupy at this point.) The residual heat of the rice will cook the yolks, and chilling will thicken the pudding. Stir in the raisins, if using.
  • Spoon the pudding into serving bowls, then cover with plastic wrap and chill for at least 2 hours. Serve with a sprinkle of ground cinnamon or cardamom and whipped cream, if you'd like.
