BEEF PLOV (BEEF RICE PILAF) RECIPE

This recipe makes a big batch which is great since it reheats really well. That's my favorite way to eat it; crisped over a skillet and served with a pickle.

1 1/2 lbs Beef chuck (beef sirloin or good quality beef stew meat)
1/3 cup canola oil (or extra light olive oil (not extra virgin))
2 medium onions (finely chopped)
3 medium carrots (cut into matchsticks or grated)
1 tsp salt for the meat and veggies + 1 1/2 tsp salt for the rice
1/2 tsp freshly ground black pepper
1 tsp paprika
1 tsp cumin
3-4 bay leaves
1 3/4 cups hot water for braising meat
3 cups long grain rice (Basmati or Jasmin rice work great!)
4 cups hot water when cooking rice
1 tsp ground coriander
1 head of garlic

Steps:

  • Trim beef of excess fat and sinews (aka the chewy stuff), pat the meat dry with a paper towel and chop into 1/2" to 3/4" pieces.
  • Preheat your dutch oven (or your large soup pot with a heavy bottom), to high heat. Once it's hot, stir in your 1/3 cup canola oil. Once oil is hot, add chopped meat and saute uncovered 7 min over high heat until meat is browned, stirring every minute or so so it doesn't scorch to the bottom of the pan. Note: it's important to preheat the dutch oven first for the meat to sear over very high heat, otherwise it will juice out and become dry.
  • Reduce heat to medium and Add chopped onion, stirring often until onion is softened (5 minutes). Stir in sliced carrots, 1 tsp salt, 1/2 tsp pepper, 1 tsp paprika, 1 tsp cumin, 3-4 bay leaves and continue to cook over medium heat 5 minutes until carrots are softened.
  • Add 1 3/4 cups hot water, cover and simmer over medium/low heat 45 min or until meat is tender.
  • Meanwhile, rinse rice until water runs clear, then drain and set aside (this gets rid of the starch so you won't end up with a sticky rice).
  • Spread rice over the meat and add 4 cups hot water. Sprinkle the rice with 1 1/2 tsp salt (DO NOT STIR), bring to a boil then reduce heat to low and Let cook uncovered until most of the water is absorbed (10 min).
  • Cut off the base of your whole garlic head to expose the cloves. Put your head of garlic, cut side down into the center of the rice and sprinkle the top of the rice with 1 tsp ground coriander.
  • Poke 7-10 holes through the rice to allow steam to escape to the surface, reduce the heat to low then cover and cook an additional 15 minutes or until rice is cooked through. Remove the garlic head and bay leaves and stir everything gently to combine and you're done.

One Pot Meal - Beef Rice Pilaf Recipe (Uzbek Plov) image

1 1/2 - 2 lb beef sirloin or good quality beef (I used Beef Round Top from Costco)
2 medium onions (sliced)
5 medium carrots (peeled & julienned)
2 1/2 cup Basmati rice (washed)
1/2 cup extra virgin olive oil
2 teaspoon kosher salt (more if needed)
1 teaspoon ground cumin (divided)
1/2 teaspoon saffron
1 whole garlic (top cut off)
black pepper (to taste)
5 cups water

Steps:

  • Get all of the ingredients ready by cutting 2 lb beef into 1 inch cubes, slicing 2 onions and julienning 5 carrots.
  • Pour 1/2 cup olive oil into your dutch oven and heat on medium/high heat until it is super hot. Carefully add 2lb cubed steak, and cook until browned about 7-10 minutes, stirring few times.
  • Now, add 2 sliced onions, 1/2 teaspoon ground cumin, 2 teaspoons kosher salt and black pepper to taste. Stir and cook on medium/high, until onion is cooked thru about 10 minutes.
  • Add 5 julienned carrots, 1/2 teaspoon ground cumin and 1/2 teaspoon saffron. Mix and cook until carrots are cooked thru about 5 -7 minutes, stirring few times.
  • Pour 5 cups of water, bring it to a boil, cover and simmer on low for about 4o minutes or until meat is tender.
  • Then add 2 1/2 rice and 1 whole garlic. Bring it to a boil. Season with salt and pepper, to taste. Cover and simmer on low until rice is cooked thru, about 30 minutes. Serve warm with Crazy Delicious Greek Salad or Loaded & Baked Eggplants. Grab a fork and enjoy!

2 tablespoons butter or extra virgin olive oil
1/2 pound ground meat (lamb, pork, turkey, chicken, beef or a combination)
Salt and pepper
1 medium onion, chopped
3 bay leaves
1 cup white rice
1/2 teaspoon ground cinnamon
1 1/2 cups chicken, beef or vegetable stock
1/2 cup chopped fresh parsley
2 tablespoons fresh lemon juice

Steps:

  • Place 1 tablespoon butter or oil in a large, deep skillet over medium heat. Crumble meat and add it to pan, along with a large pinch of salt; cook, stirring occasionally to break up lumps, until meat loses its color. Remove with a slotted spoon.
  • Add remaining butter or oil to skillet, followed by onion and a little more salt; cook, stirring occasionally, until onion turns translucent, 5 to 10 minutes. Add bay leaves and rice, and cook, stirring occasionally, until rice is glossy and begins to brown, 3 to 5 minutes. Return meat to pan, stir mixture and sprinkle with salt, pepper and cinnamon.
  • Add stock and stir. Raise heat, and bring mixture to a boil; cook for a minute or two, then reduce heat to low, and cover. Cook about 15 minutes, or until most of the liquid is absorbed. Turn heat to absolute minimum, and cook another 15 to 30 minutes; if you have an electric stove, turn heat off and let pan sit on burner for same amount of time. Stir in parsley and lemon juice, and serve.

4 -6 slices bacon, diced.
1 cup long grain rice
7 ounces chicken broth
1/2 teaspoon salt
1/2 medium onion, diced
5 ounces frozen peas

  • Brown diced bacon, and drain on a paper towel.
  • Drain all but 1/4 c.
  • drippings.

Uzbek Beef Plov - a fluffy rice pilaf with beef, carrots, onions and a unique spice blend - is originally an Uzbek dish that pretty much every Russian family knows and cooks. Traditionally it is cooked outdoors in a large cast iron pot over a fire. This recipe make a large batch which lends itself perfectly for reheating or freezing.

1 1/2 pounds stewing beef (or any inexpensive beef cut)
1/3 cup cooking oil (I like olive or avocado)
2 medium onions (chopped)
3 medium carrots (cut into matchsticks)
2 1/2 teaspoons salt (divided)
1/2 teaspoon black pepper (freshly ground)
1 teaspoon paprika powder
1 teaspoon ground cumin
3-4 bay leaves
5 3/4 cups hot water (divided)
3 cups long grain rice (parboiled rice makes for great texture results)
1 head of garlic
1 teaspoon ground coriander

Steps:

  • Trim any excess fat off the beef and cut into bite-sized pieces. Heat a large non-stick pot or dutch oven over high heat. Add the cooking oil. Once oil is hot add the beef and sear uncovered for about 7 minutes until meat is nicely browned. Stir often.
  • Turn heat to medium and add chopped onion. Cook for about 5 minutes until onions soften.
  • Stir in carrot matchsticks (you could shred the carrots but the matchstick size leaves more bite and texture), 1 tsp salt, 1/2 tsp pepper, 1 tsp paprika, 1 tsp cumin and bay leaves and cook for another 5 minutes until carrots soften.
  • Add 1 3/4 cups of boiling water, cover and simmer over medium low heat for 45 minutes until the meat is soft.
  • In the meantime using a strainer rinse the rice under cold water until the water runs clear (this is essential for fluffy rice otherwise you risk ending up with sticky rice mush). Spread the rice over the meat, sprinkle with 1 1/2 tsp salt and add 4 cups of boiling water (do NOT stir!). Bring to a boil over high heat.
  • Once boiling reduce heat to medium and cook uncovered until most of the water is absorbed (10 minutes).
  • Cut the bottom off the garlic head to expose the cloves. Press garlic head into the center of the rice. Sprinkle the rice with 1 tsp coriander. Poke 8-10 holes into the rice to let the steam to escape and cover. Turn heat to low and cook until rice is soft.
  • Remove garlic and bay leaves, stir gently to combine everything. Serve (with dill pickles) and enjoy!

RAINBOW RICE PILAF

1/2 yellow onion, diced
1/2 cup diced celery (from 1 rib)
1 orange bell pepper, seeded and diced
1 1/2 cups long-grain rice
1/2 cup orzo
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon minced fresh thyme
Kosher salt and freshly ground black pepper
4 cups vegetable broth
1/2 cup dried cranberries
1/4 cup toasted sliced almonds
1/4 cup chopped fresh parsley

Steps:

  • Heat the oil in a large deep-sided skillet with a lid over medium-high heat. Add the onions, celery and pepper and cook, stirring occasionally, until they are just beginning to soften, about 3 minutes. Add the rice and orzo and cook, stirring constantly, until the orzo begins to brown, 3 to 5 minutes. Add the garlic, oregano, thyme, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook, stirring occasionally, until the garlic is fragrant, about 2 minutes.
  • Stir in the vegetable broth, bring to a simmer and then lower heat and cook, covered, until the liquid is absorbed and the rice is tender, about 15 minutes. Remove from the heat and let sit, covered, for about 10 minutes. Fluff the rice with a fork and transfer to a serving dish. Top with the cranberries, almonds and parsley. Serve warm.

3 tablespoons butter
1/2 cup chopped onion
1/4 cup chopped celery
1/2 cup chopped cremini or button mushrooms
1 clove garlic (minced)
2 cups long grain rice
1 1/2 teaspoons coarse salt
1 teaspoon ground black pepper
4 cups chicken (beef, or vegetable broth)
2 bay leaves
Chopped parsley

Steps:

  • In a dutch oven or pot, melt butter over medium heat. Add onion, celery, and mushrooms and cook until vegetables have softened and just started to turn brown, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Add rice, salt, and pepper and cook until rice starts to look slightly transparent, about 2-3 minutes.
  • Stir in broth. Increase heat to high and bring to a boil.
  • Once boiling, add bay leaves, cover pot with a lid, and decrease heat to low.
  • Let rice simmer, covered, for about 15 minutes.
  • Once all liquid appears to have been absorbed, turn off heat and let sit, covered, for 5 minutes.
  • Discard bay leaves and fluff with a fork. Stir in parsley. Serve immediately.

1/2 medium onion (finely diced)
1 stalk celery (finely diced)
1 carrot (finely diced)
1/4 c. dry white wine ((can sub chicken or vegetable broth))
1 bay leaf
1 c. uncooked long-grain white rice ((or the type of rice you prefer))
2 c. low sodium chicken or vegetable broth

Steps:

  • Melt butter in a large skillet over medium heat.
  • Add the onion, celery and carrots and saute until they start to soften, about 4 minutes.
  • Add the wine (or broth), stir and cook until the liquid has reduced by about half.
  • Add the bay leaf, the rice, the broth and salt and pepper to taste.
  • Reduce the heat to low, cover the pot and let the rice simmer for 18-20 minutes, until the liquid has absorbed and the rice is perfectly cooked.
  • Turn off the heat and with a fork, lightly fluff the rice. Remove the bay leaf.
  • Sprinkle with minced fresh parsley, if desired, and serve.

1 c slivered blanched almonds or pine nuts, toasted
2 Tbsp butter
2 c parboiled rice
2 tsp salt
1/2 tsp pepper

1/2 tsp nutmeg
3 1/2 c water

Steps:

  • 1. Lightly brown the blanced slivered almond or pine nuts in the 2 tbsp butter, on medium, until golden. Don't leave these unattended as they burn easily.
  • 2. In separate pan, brown meat in 1/4 cup butter.
  • 3. Add the salt & all spices. Stir for 2 minutes.
  • 4. Add the hot water.
  • 5. Bring to a boil, then down to a simmer.
  • 6. Cover & simmer over low for about 25 minutes or until water is abosorbed & rice is tender.
  • 7. Add the toasted pinenuts reserving a small amount for garnish.

cooking oil (for frying)
1 large onion (diced)
2 to 3 medium carrots (diced)
8 to 10 small cloves of garlic (roughly chopped)
1 cup garbanzo beans (chickpeas, drained)
4 cups beef broth
1 teaspoon freshly ground black pepper
1 1/2 teaspoons salt
1/2 teaspoon smoked paprika

1 cup long grain basmati rice

Steps:

  • Season the cubed beef generously with salt and pepper. Preheat large, nonstick heavy sauté pan or Dutch oven to medium/high heat and add a splash of olive oil. Once oil is hot, add the beef and fry, stirring frequently, until it develops a dark brown color. Remove the beef from the pan and set aside. Next, add the onion, carrot and garlic. Sauté until golden brown, about 5 to 6 minutes.
  • Return the beef to pan, add the spices and stir everything together with a spatula, cooking for 1 minute. Add the broth to the pan and bring to a simmer over high heat. Cover, reduce the heat to low and simmer for 1 to 1 1/2 hours, or until meat is tender.
  • Once meat is tender, stir in the garbanzo beans and the white raisins, if desired. Sprinkle the uncooked rice over the meat and broth. DO NOT stir the rice and meat together, simply sprinkle the rice in an even layer over the meat, and arrange it so it is submerged under the broth. The rice should be covered with about 1-cm of liquid; add more broth or water as needed.
  • Cover and continue to cook over medium/low heat for 20 to 25 minutes, until the rice is done and all liquids have evaporated. Do not stir the rice while it's cooking. Stirring is avoided to create light and airy rice that is not mashed together: don't worry, it will not burn!
  • Allow the rice to stand for 10 minutes once done cooking. When ready to enjoy, fold together rice and beef and fluff the rice with a fork. Serve this beef plov with pickles or pickled tomatoes for a traditional meal.

The first time I ate black garlic, I thought of the marriage between fermented black beans and garlic. It is an umami bomb. I immediately wanted to put it into a rice pilaf dish because it can be cooked indoors or outside. This is truly the reason cast-iron pans were invented-you can put them on top of coals or on a grill with foil, and you have a perfect side dish that just may be even better than the meat course.

1 red onion, small dice
1 red bell pepper, small dice
1 head fermented black garlic, minced
3 cups long-grain rice, washed and drained dry

  • Preheat a grill for cooking over indirect medium-high heat.
  • Heat a 12-inch cast-iron pan over medium-high heat on the stovetop and add the oil. Once heated, add the onion, bell pepper and black garlic, stirring to combine.
