12 oz. wide rice noodles
1/4 cup extra-virgin olive oil
6 garlic cloves, thinly sliced
1 Fresno chile or red jalapeño, thinly sliced
2 large sprigs basil, plus torn leaves for serving
3 pints cherry tomatoes, halved if large
Chili oil and toasted sesame seeds (for serving)

Steps:

  • Bring a large saucepan of salted water to a boil. Remove from heat; add noodles. Let sit, stirring occasionally, until al dente, about 4 minutes (time may vary by brand). Drain and rinse under cold running water.
  • Meanwhile, heat olive oil in a large skillet over medium. Cook garlic, stirring often, until softened and golden, about 3 minutes. Add chile and basil sprigs; cook, stirring, just until softened, about 1 minute. Add tomatoes and 1/4 cup water and cook, stirring occasionally, until most of the tomatoes have burst and are jammy, 8-10 minutes. Season with salt.
  • Add noodles to sauce and toss to coat. Season with more salt if needed. Divide among bowls; drizzle with chili oil and top with sesame seeds and torn basil.

12 ounces rice stick noodles
2 tablespoons peanut or vegetable oil
1 tablespoon minced garlic
1 teaspoon minced hot chilies, or crushed red pepper flakes, or to taste
1 teaspoon sugar
Salt and freshly ground black pepper
2 tablespoons nam pla, or to taste
1 tablespoon lime juice, or to taste
1/2 cup roughly chopped Thai or other basil or mint

Steps:

  • Soak the rice noodles in hot water to cover for about 30 minutes. Meanwhile, bring a pot of water to a boil. When the noodles are soft, drain them and then immerse them in the boiling water for about 30 seconds. Drain and rinse.
  • Heat the oil in a deep skillet (preferably nonstick) over medium-high heat. Add the garlic and chilies and cook about 30 seconds, stirring. Raise the heat to high, add the noodles and sugar and toss to coat. Season with salt and pepper.
  • When the noodles are hot, add the nam pla and lime. Taste and adjust seasonings, then stir in the basil or mint and serve.

These Thai Basil Noodles are perfect if you're craving some bold flavor for dinner. The recipe is easy to make and ready in about 30 minutes.

1 package of firm organic/non-GMO tofu (drained, pressed, and cubed (see tofu notes))
2-3 Tablespoon olive oil ((or sesame oil))
1 small onion (chopped)
3 cloves of garlic (minced)
2 cups mushrooms ((I used shiitake), chopped*)
4 small bok choy
8 oz rice noodles (or other noodles of choice, cooked to package directions)
1/2 cup Thai holy basil cut into ribbons** (or Thai basil)
1/4 cup Tamari (or soy sauce or liquid aminos)
1 Tablespoon sambal oelek*** (or chili garlic sauce)
1 teaspoon maple syrup
1/2 teaspoon garlic powder
1 Tablespoon rice wine vinegar

Steps:

  • Heat 1 TB oil in a large pan and add the tofu. Cook for a few minutes on each side until golden brown. Remove from pan and set aside. (see tofu notes)
  • In the same pan, heat 1 TB oil and add onions and garlic. Cook for 3-5 minutes until onion is translucent.
  • Add mushrooms and bok choy (as well as another TB of oil if needed) and cook until tender.
  • Meanwhile, heat a large pot of water for rice noodles. When water is boiling, turn off heat and add rice noodles for about 4 minutes or until al dente. You don't want them too soft because they will cook more later on. When noodles are al dente, drain and add to the pan with the vegetables.
  • Whisk together the sauce ingredients, add to pan and cook everything for another 3-5 minutes.
  • Turn off heat and add basil and mix through.
  • Fold in tofu and top with sesame seeds.

One of my favorite Vietnamese dishes is bun thịt nuong, which consists of cold or room temperature rice vermicelli topped with grilled pork and pickled and fresh vegetables. When I can't get to my favorite Vietnamese restaurant, I make this easy and tasty riff at home. It's layered with incredible flavor, which comes from sweet and tangy stir-fried chicken, aromatic basil and the best-ever quick pickles. Don't have the rice noodles? Swap in your favorite grain, pasta or spiralized vegetable.

8 ounces rice noodles
2 tablespoons canola oil
1 Persian cucumber, thinly sliced
1/2 small red onion, very thinly sliced
1/2 jalapeno, very thinly sliced
1/4 cup plus 1 tablespoon rice vinegar
1/4 cup sweet chili sauce, such as Mae Ploy
2 tablespoons soy sauce
1 teaspoon cornstarch
1 1/4 pounds boneless skinless chicken thighs, cut into bite-size pieces
Sweet or Thai basil leaves, for serving

Steps:

  • Bring a medium saucepan of water to a boil, then add a small handful of salt. Cook the noodles according to the package directions. Drain in a colander and rinse under cold water. Add 1 tablespoon of the canola oil and toss to coat.
  • While the noodles cook, in a medium bowl, mix the cucumber, onion and jalapeno with the 1/4 cup rice vinegar and a generous pinch of salt. Let stand for 10 minutes, stirring occasionally.
  • Meanwhile, in a small bowl, whisk the sweet chili sauce with the soy sauce, cornstarch and the remaining 1 tablespoon of the rice vinegar. In a large cast-iron skillet or wok, heat the remaining 1 tablespoon canola oil over medium-high heat. Add the chicken and cook, stirring occasionally, until lightly browned and just cooked through, about 5 minutes. Stir in the chili sauce mixture and cook until the chicken is glazed, about 2 minutes.
  • Transfer the noodles to bowls and top with the chicken. Serve with the pickled vegetables and basil leaves.

7-8 oz. Asian rice noodles, brown or white
3-4 cups fresh cut up vegetables (see note)
2 green onions, chopped
1/2 cup fresh chopped cilantro
3-4 Tbsp. thinly sliced basil
Optional: roasted peanuts or sliced almonds, chopped
3 Tbsp. neutral oil, such as avocado oil
3 Tbsp. low-sodium soy sauce
3 Tbsp. honey
1 Tbsp. sesame oil
1 Tbsp. chili garlic sauce
2 Tbsp. fresh lime juice, about 1 lime
1 Tbsp. grated fresh ginger
1 garlic clove, minced or grated

Steps:

  • Cook rice noodles according to package directions or see above how I make mine so they don't break or stick. Immediately drain and rinse under cold water. Set over a colander to drain.
  • Meanwhile prepare the dressing by whisking all of the ingredients together in a small bowl.
  • Combine the drained noodles, vegetables, green onions, cilantro, and basil with the dressing. Refrigerate the salad for 15-30 minutes before serving.

  • Prepare the shrimp by shelling and cleaning them well. In Thailand you will often get them with the heads on, but here I have removed them. Any size is fine and you can add more shrimp if using smaller ones.
  • Depending on what size you have, you'll need 1 or 2 ordinary ramen noodle squares. The plain ones are better for a more authentic flavor. Discard the seasoning pack for making soup, or save it to season something else another time.
  • It's important to use the right basil when you make a Thai chili and basil stir fry. Our name for the dish is Pad Kraprow, and we use our basil called Bai Kraprow.
  • I usually use between 2 - 4 Thai hot chilies with a couple of large garlic cloves, but you can adjust the amount of chili to your own tastes. If you leave the chili out it will still be delicious, but in Thailand this dish is usually made very spicy.
  • Pluck the leaves and flower tops from the basil until you have at least a cup or more. The more basil you add, the more flavorful your noodles will be.
  • Split the baby corn ears into long, thin strips. Cut the green beans into 2 inch pieces, and the onion into thick slices.
  • Boil a big pot of water so the noodles float and cook freely. As soon as they loosen up and cook a little, about a minute, drain the water and replace it with cool water to stop them from cooking.
  • The noodles should be a little firm so they don't fall apart when you fry them. Drain the water away and let them dry well.
  • Heat the oil in a wok or large pan over low flame. Fry the garlic and chili lightly until fragrant, for about 30 seconds.
