EASY FRIED RICE



Easy Fried Rice image

This Easy Fried Rice recipe is perfect for weeknight dinners when you want something tasty, fast, and filling for the whole family!

Number Of Ingredients 9

3 tablespoons light oil (such as avocado, vegetable, or canola oil)
4 to 6 large eggs
5 cup cooked rice (leftover or hot cooked, it doesn't matter)
1 to 1.5 cups cooked diced ham (or other protein of choice)
1 to 1.5 cups frozen mixed peas and carrots
1/4 cup soy sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Additional salt and pepper, to taste

Steps:

  • Heat a very large skillet or saute pan over medium-high heat.
  • In a small bowl, crack the eggs and use a fork to whisk them together well (you can use as many eggs as you like, we like a lot of scrambled eggs in our fried rice so I normally use 6).
  • When the pan is hot, add 1/2 tablespoon of oil (reserving the remaining 2.5 tablespoons) and swirl the pan to spread the oil across the bottom of the pan.
  • Add your eggs and cook, stirring often, to scramble and cook the eggs. When the eggs are cooked through remove them from the pan and place them in a small bowl, set aside.
  • Return the pan to the heat and add the remaining 2.5 tablespoons of oil.
  • Add the cooked rice and saute in the oil, breaking up the rice. If it starts to stick the to bottom lower the heat and feel free to add some additional oil.
  • Add the cooked ham and mixed peas and carrots, stir to combine, and cook for a minute or two until the vegetables warm through.
  • Add the soy sauce, onion powder, and garlic powder. Stir to combine well.
  • Add salt and pepper to taste and feel free to adjust the soy sauce, onion powder, and garlic powder to your liking.
  • Stir in the scrambled eggs.
  • Remove from the heat and serve hot.

It may look a mess, but it's a very useful mess of food. You can eat this as is, spooned over cornbread and topped with olives and sour cream. Or spoon it over a pile of tortilla chips with the same toppings and eat like nachos. You may serve in a bowl as a dip or spoon onto flour tortilllas and roll for a burrito. You'll probably think of other ways to serve it also. Recipe from Gooseberry Patch.

1 lb ground beef
1 onion, chopped
1 green pepper, chopped
2 garlic cloves, chopped
1 (10 ounce) can tomatoes and green chilies (Rotel brand suggested)
1 (1 ounce) envelope taco seasoning mix
8 ounces Velveeta cheese, cut into smallish cubes
tortilla chips, for serving (or use cornbread or flour tortillas)

Steps:

  • Brown the beef in a large skillet over medium heat; add the chopped onion, green pepper and garlic. Cook until the onion is transparent; drain.
  • Add the tomatoes and chilies, the taco seasoning mix and velveeta cheese. Continue cooking until the cheese is melted.
  • Stir well. Serve as desired, using suggestions above or other ideas.

2 cups water
1 cup uncooked rice
1 tablespoon butter
1 small onion, chopped
1 clove garlic, minced
1 pound ground beef
1 (8 ounce) can sliced mushrooms, drained
salt and ground black pepper to taste
1 (15 ounce) can tomato sauce
4 slices Cheddar cheese

Steps:

  • In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • Heat butter in a skillet over medium heat. Saute onion and garlic until tender. Remove from skillet, and set aside. In the same pan, brown the ground beef until no pink shows; drain excess fat. Return the onion mixture to pan, and stir in mushrooms. Season with salt and pepper. Stir in cooked rice and tomato sauce. Top with sliced cheese, and allow to stand until cheese is melted.
