RICE CRISPY ICE CREAM SANDWICH
Rice Crispy Ice-cream Sandwiches are an easy and fun summer treats kids can enjoy making themselves.

Steps:
- Place the mini marshmallows in a large bowl and slice the butter on top of it.
- Mlet in the microwave, 30 seconds at a time stirring after each time untill melted and the butter has incoporated with the marshmallows.
- Add the rice crispies and using a rubber spatula or a wooden spoon, stir untill all of the cereal has been coated with marshmallows.
- Place the sticky cereal in the pan. With your hands, flatten it untill the pan is completely layered. Use a rolling pin to evenly spread. Set aside and allow to cool.
- When cooled, use a round cookie cutter to cut circles.
- Scoop ice cream and place it ontop of one rice crispy circle. Place another circle on top and gently press to even ice cream.
RICE KRISPIE ICE CREAM SANDWICHES
Steps:
- Coat a 8″ or 9″ cake pan with non-stick cooking spray. NOTE: The smaller the pan the thicker your layers will be.
- Remove your ice cream from the freezer and place on your counter or in the sink for about 10 minutes to slightly thaw.
- In a large non-stick pan, melt butter and mini mashmallows on low heat stiring regularly to ensure the mixture does not burn.
- Slowly start to add rice krispie cereal into the mixture until well combined. Once mixed, turn off the heat.
- Add half of the cereal mixture to your cake pan and press firmly into shape. NOTE: I always wet my hands a little bit to ensure the mixture doesn't stick to them. Also, I try to ensure the two bottom and top layers of rice krispie are half the thickness of the ice cream layer. You are welcome to make them thinner or thicker based on your preference.
- Cover your pan with a lid to keep the remaining mixture warm.
- Place your baking pan with your first layer into the freezer for 10-5 minutes.
- Remove the baking pan from the freezer and spread a thick layer of ice cream onto the bottom most layer of rice krispie cereal. Press firmly to ensure the ice cream layer is well compant and smooth at the top. As noted above, you can choose to layer one layer of ice cream, two or three side-by-side.
- Place the baking pan back into the freezer for an additional 10-15 minutes.
- Remove the baking dish from the freezer and layer the top layer of rice krispie cereal on top of the ice cream. Press firmly into shape. Place back into the freezer for 5+ hours or overnight.
- Cut into squares or shapes and serve!

- Mix corn syrup and peanut butter in a large bowl until smooth; stir in rice cereal. Press cereal mixture into the bottom of a 9x13-inch baking dish. Cover and freeze until firm.
- Cut cereal mixture in half, crosswise. Spread ice cream over half the cereal and press the second half over the ice cream to create a large sandwich. Cover and freeze again until firm.
- Cut sandwich into bars and serve or wrap individually with aluminum foil.

This always bring's back chilhood memories. It's an old time dessert that my mom made quite frequently. You may also use CornFlakes or RiceChex instead of the Krispies.

- Mix all together. (omitting the icecream).
- Spread 1/2 the mixture in a buttered 9x13 inch baking pan.
- Slice icecream (softened) on top.
- Sprinkle with remaining crumbs over the top.
- Refreeze.
- It's already quite sweet, but if you're so inclined, drizzle with a little of your favorite ice-cream topping. Butterscotch, caramel, or hotfudge all work.
RICE KRISPIES ICE CREAM SANDWICHES
A favorite for children and grown ups alike. A combination of corn syrup, peanut butter, and Rice Krispies with your choice of ice cream or yogurt sandwiched in between.Place a piece of plastic wrap on top of the cereal mixture and then press down with your hands if you wish to keep your hands clean. - Line a 13" x 9" dish with heavy duty foil, overlapping the sides by a couple of inches. Spray the foil with non-stick cooking spray and set aside.

- Line 2 9-by-13-inch baking pans with foil, leaving 2-inch overhangs on 2 sides of each pan. Mist with cooking spray. In a large pan, melt butter over low heat. Add marshmallows; stir until melted. Freeze until ice cream hardens, at least 30 minutes. (For longer storage, wrap sandwiches in plastic wrap after they are firm.)
