3/4 cup water (70° to 80°)
1 tablespoon vegetable oil
1 tablespoon molasses
1 teaspoon salt
1-2/3 cups bread flour
1/2 cup cooked wild rice, cooked
1/2 cup whole wheat flour
1 teaspoon caraway seeds
1 teaspoon active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

1-1/2 cups water
1/4 cup butter (or coconut oil, melted and cooled; avocado oil may be fine too)
1/4 cup psyllium husk powder ((needs to be husk powder; or put husks into coffee grinder, then measure powder))
2 Tablespoons maple sugar (or coconut sugar (or other granulated sweetener you use))
2 Tablespoons gelatin ((see link for sustainable brand and use code BEAUTIFUL10 at check out for 10% off your entire order))
2 egg whites
1/2 teaspoon baking soda (, sifted)
1/2 teaspoon sea salt

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Grease loaf pan and line with one strip of parchment paper, to make it easy to pull out/remove baked loaf.
  • In large mixing bowl, combine dry ingredients: rice flour, psyllium husk powder, sweetener, gelatin, baking soda and sea salt.
  • In medium bowl, combine liquid ingredients: warm water, fat of choice and egg whites. (If making sourdough version, use only 1-1/4 cups water, and sub in the remaining liquid [1/4 cup] with sauerkraut juice or whey.)
  • Add liquid ingredients to dry ingredients and mix well. Electric beaters may be used. (Do not over-mix.) Roll dough into a giant jelly roll shape in bowl. Roll batter into prepared loaf pan, and shape the top with spatula or wetted fingers, so it's slightly mounded in the middle.
  • Bake approximately 1 hour, until loaf is well risen, very golden brown and sounds a bit hollow when tapped on the bottom side.
  • Allow to cool briefly in pan. Then slide knife along each end to free from pan, and lift up on parchment ends to pull loaf out. Allow to cool on wire rack before slicing.

1 medium cauliflower head, cut into bite-sized pieces (or 3 cups cauliflower rice)
1 large egg, lightly beaten
½ cup shredded part-skim mozzarella cheese
¼ tsp sea salt (or Himalayan salt)
¼ tsp ground black pepper

Steps:

  • Preheat oven to 450º F.
  • Line large baking sheet with parchment paper. Lightly coat with spray. Set aside.
  • Place half of cauliflower in food processor; pulse until cauliflower is chopped into pieces about the size of rice. Repeat with the other half. Place in microwave-safe bowl.
  • Microwave cauliflower on high for 6 to 8 minutes, or until cooked.
  • Place cauliflower on cheesecloth, in small batches; squeeze dry. (No cheesecloth? Use a heavy-duty paper towel.) Don't skip this step -cauliflower needs to be dry.
  • Combine cauliflower, egg, cheese, salt, and pepper in a medium bowl; mix well.
  • Place cauliflower mixture onto baking sheet in four even portions. Form into squares.
  • Bake for 15 to 17 minutes, or until golden. Cool for 10 minutes before carefully removing from baking sheet.

1/4 cup wild rice, raw
2 cups water
1 package dry yeast
1/3 cup warm water
2 cups milk, scalded
2 tablespoons butter, melted
1/2 cup honey
2 teaspoon salt
1/2 cup rolled oats, uncooked
1/2 cup rye flour
1 1/2 cups whole-wheat flour
1/2 cup bran
3 1/2 cups unbleached flour, plus 1 cup, as needed
1 egg, beaten
1 tablespoon water
1/4 cup hulled sunflower seeds

Steps:

  • Bring water to a boil in a small saucepan. Add rice to boiling water and cover. Cook over very low heat until water is absorbed and rice is tender. Cool.
  • Preheat oven to 375 degrees F.
  • Stir yeast into 1/3 cup warm water and let stand 5 minutes. Stir together milk, butter, honey, salt and oats. Add cooled wild rice to milk mixture.
  • Stir together rye flour, whole-wheat flour, bran and 3 1/2 cups of the unbleached flour, using a wooden spoon. Stir in milk and yeast mixture until soft dough forms. Add more of the unbleached flour as needed.
  • Turn the dough out onto a floured board and knead until soft and elastic, about 10 minutes. Place dough in greased bowl and turn so that the top is greased. Let rise 2 hours. Punch dough and shape into two loaves. Place in 2 greased 9 1/2 by 5 1/2-inch pans. Let rise again, about 1 hour. Bake for 45 minutes. During last 15 minutes of baking, brush loaves with 1 beaten egg mixed with 1 tablespoon of water and sprinkle with sunflower seeds.

  • Combine 1 1/2 cups water and rice in a medium saucepan over medium-high heat; bring to a boil.
  • Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
  • Spoon rice into a large bowl; cool to room temperature.
  • Stir in 1 1/4 cups warm water.
  • Add 2 cups flour and yeast to rice mixture; stir well to combine.

Steps:

  • Grease an 8″x4″ metal loaf pan.
  • In a large mixing bowl, whisk the brown rice flour, psyllium husk powder, instant yeast, sugar, baking powder, xanthan gum, and salt together.
  • Add the warm water, sunflower oil, and eggs to the dry ingredients and mix well to get a wet and shaggy dough (the dough is supposed to be shaggy, so don't worry).
  • Transfer the dough to the greased loaf pan and smooth out the top with a spatula.
  • Cover the dough pan with a kitchen towel and let the dough rise approximately 30 to 40 minutes in a warm, draft-free place until it has almost doubled in size. (Tip: I like to place the loaf pan in my microwave with the power off - it creates the perfect draft-free and warm environment for rising dough).

1 cup brown rice flour
2 ½ teaspoons xanthan gum
1 teaspoon unflavored gelatin

2 ¼ teaspoons active dry yeast
3 eggs
1 teaspoon cider vinegar
3 tablespoons walnut oil
½ cup warm water (110 degrees F/45 degrees C)

Steps:

  • To help insure success have all ingredients at room temperature before proceeding. Combine the white rice flour, brown rice flour, xanthan gum, and salt. Mix very well. The flours need to be completely combined.
  • Combine the gelatin, sugar, egg replacer, milk powder, beaten eggs, vinegar and oil. Beat until well combined.
  • Combine the flour mixture, egg mixture and yeast together and beat well. A standup mixture works best for this. Add tepid water to dough if mixture is to dry. The dough should be somewhere between a normal bread dough consistency and a batter.
  • Pour into greased 9x5 inch bread pan and allow to rise in a warm, still place until doubled in bulk. Bake in a preheated oven at 325 degrees F (165 degrees C) until crust is a light to medium brown. Cool ten minutes in the pan, then to room temperature outside the pan before slicing.
