APPLE CRISP - PERFECT AND EASY
I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
- Arrange apple slices evenly in prepared baking dish. Sift flour, sugar, cinnamon, and salt in a bowl. Cut in butter using a pastry blender or 2 knives until mixture resembles coarse cornmeal; sprinkle over apples.
- Bake in preheated oven until topping is golden, 40 to 45 minutes. Cool slightly before serving.

APPLE CRISP
Try this moreish apple crisp. 'Crisp' is the American version of a crumble, with the topping a mix between a nutty flapjack and a traditional British crumble.

Steps:
- Put all the topping ingredients and a pinch of sea salt in a bowl and rub together with your fingers until combined into a crumb-like texture - this can also be done in a food processor. Chill until needed. Will keep chilled for up to two days.
- Toss the apples with the sugar and lemon zest and juice until evenly coated, and tip into a 23cm round baking dish that's at least 5cm deep, or a 20cm square dish. Flatten down with your hand and scatter over the topping. Will keep covered and chilled for a day.
- Heat the oven to 190C/170C fan/ gas 5. Sit the crisp on a baking tray and bake for 40 mins until the topping is a deep golden and the fruit is bubbling at the edges. Leave to cool for 10 mins, then serve with ice cream or custard.

RICE APPLE CRISP
This recipe is adapted from Lundberg Rice and uses brown rice syrup instead of sugar or HFCS. This would be delicious served along side coconut ice cryym!!!!

Steps:
- Cook the apples, cane sugar, and water over medium heat until apples are soft.
- Combine the cooked rice, apples with sauce, lemon juice, rice syrup and pour into a 9x13 inch pan prepared with non-stick oil spray.
- Mix the flour, oats, brown sugar, cinnamon, salt and cut in vegan butter until crumbly. Stir in nuts. Sprinkle over rice-apple mixture.
- Bake at 350F for 30 minutes or until brown and bubbly.
