2 teaspoons extra-virgin olive oil, or to taste
1 sweet onion, cut into thin slivers
1 pound lean ground turkey
8 ounces sliced mushrooms
salt and ground black pepper to taste
1 (26 ounce) jar spicy roasted red pepper tomato sauce
1 (14 ounce) can diced tomatoes
1 teaspoon bottled minced garlic
8 ounces multi-grain penne pasta

Steps:

  • Heat olive oil in a large skillet over medium heat. Cook and stir sweet onion in hot oil until translucent, about 5 minutes. Add turkey to the skillet in small chunks; cook and stir until the turkey is no longer pink, 5 to 7 minutes. Stir mushrooms into the turkey mixture; cook and stir until softened, 3 to 5 minutes. Season the mixture with salt and pepper.
  • Pour tomato sauce and diced tomatoes over the turkey mixture; add garlic and stir. Bring the mixture to a simmer and cook until the tomato sauce thickens, about 20 minutes.
  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain pasta and stir into the turkey mixture; toss to coat.

This is absolutely delicious! Try this on people who claim they don't like ground turkey. They shouldn't be able tell this isn't ground beef. Warmed up leftovers are even tastier. I did not use the parmesan cheese when I made this.

1 lb ground turkey
2 tablespoons olive oil
1 medium onion, chopped
2 stalks celery, thinly sliced
1 small green pepper, chopped
1 (8 ounce) can sliced mushrooms, drained
1 (28 ounce) can tomatoes, cut up, with liquid
2 garlic cloves, pressed
2 cups dry pasta (twists or other)
1 teaspoon italian seasoning
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon onion powder
1/2 teaspoon garlic powder
grated parmesan cheese (optional)

Steps:

  • Cook turkey in olive oil until no longer pink. Add onion and celery, cook until onion is soft. Add green pepper and garlic, cook several minutes. Add tomatoes with liquid, mushrooms, along with other seasonings.
  • While mixture simmers, cook pasta according to directions. Be sure pasta is not overcooked before adding to mixture as it will continue to soften. Add drained pasta into sauce, cover and let simmer about 1/2 hour to absorb flavor. Stir occasionally. Sprinkle with parmesan cheese if desired.

150 grams Long grain rice
1 tsp soybean oil
500 milliliters Vegetable broth
600 grams turkey breasts
1 onion
2 garlic cloves
100 grams small button Mushroom
1 Tbsp vegetable oil (for frying)
1 Tbsp chopped thyme
2 Tbsps Brandy
100 milliliters Red wine
1 Tbsp Mustard
2 tsps Worcestershire sauce
200 grams diced tomatoes (canned)
120 grams Crème fraiche
salt
freshly ground peppers
vegetable oil (for the baking dish)
Fresh herbs (for garnish)

Steps:

  • Sauté the rice in oil in an oven-safe skillet and pour in the broth. Bring to a boil, cover, turn the oven to the lowest temperature setting and cook the rice in the oven for about 20 minutes. During the last 5 minutes, remove lid and allow the remaining cooking liquid to evaporate.
  • Cut the turkey meat into cubes. Peel the onion and garlic and chop finely. Trim the mushrooms and cut into slices. Fry turkey meat until golden brown in hot oil. Remove and keep warm. Add the onions, garlic and thyme to the pan drippings and sauté. Add mushrooms and fry for another 2 minutes. Deglaze with brandy and cook until liquid evaporates. Add the wine and pour in 100 ml (approximately 1/4 cop plus 2 tablespoons) of water, mustard, Worcestershire sauce and diced tomatoes. Simmer over low heat. Finally add the crème fraiche and the turkey meat. Season with salt and pepper.
  • Coat a baking dish with oil, pour in the rice, press slightly to firm and unmold on a serving platter. Arrange the turkey goulash over the rice and garnish to taste with herbs.

1/2 pound elbow macaroni
Salt
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 tablespoon butter
1 package, 1 1/3 pounds average weight, ground lean white turkey
2 to 3 cloves garlic, chopped
1 medium onion, chopped
1 red bell pepper, seeded and chopped
2 tablespoons sweet paprika
1 teaspoon ground cumin
1 teaspoon dried marjoram
Black pepper
1 cup chicken stock, available in small 8 ounce paper containers on soup aisle of market
1 cup sour cream
2 tablespoons chopped flat-leaf parsley
2 tablespoons chopped dill

Steps:

  • Bring a pot of water to boil for pasta. When it comes to a boil, add pasta and salt to season the cooking water. Cook pasta 6 minutes to al dente.
  • While water comes to a boil and pasta cooks, heat a deep skillet over medium high heat. Add extra-virgin olive oil then butter then ground meat. Break up meat and crumble, 2 to 3 minutes. Add garlic, onions, red bell peppers and seasonings to the turkey. Cook 5 or 6 minutes then add chicken stock and sour cream to the pan. Bring to a bubble and reduce heat to low. Add cooked pasta and stir. Let pasta absorb some sauce, a minute or so. Adjust seasonings and serve. Garnish the prepared dish with chopped parsley and dill.

Healthy and easy rice cooker dish that you don't have to babysit, inspired by a Moosewood creation. This will be more like a casserole consistency than a stew, because the barley soaks up the cooking liquid. You can sub a can of diced tomatoes for the tomato paste and water. You may top with shredded cheddar cheese if you wish. This reheats wonderfully.

1/2 cup chopped onion
1/4 cup chopped celery
1 red bell pepper, diced
1 carrot, shredded
3/4 cup barley
1 (6 ounce) can tomato paste
1 1/2 cups water
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 garlic clove, minced
1 tablespoon Worcestershire sauce (optional)
2 tablespoons red wine (optional)
2 teaspoons sweet paprika (optional)

Steps:

  • Set rice cooker to "Quick Cook", or if you don't have that setting just turn on the rice cooker. Toss in first five ingredients, closing cover in between chopping to keep the heat inside. Peek every few minutes and stir to break up turkey clumps, then close the cover again.
  • When turkey is cooked, add rest of ingredients. If you don't have the final three spices, you can leave them out or substitute your own favorites.
  • Close cover and set rice cooker to brown rice setting. If you don't have a brown rice setting, set it for white rice. When it finishes, check to ensure barley is cooked through. If barley is still too chewy, let it run another cycle. It should take about 40 minutes. If mixture is too dry, add a little more water.
  • Top with cheddar or parmesan cheese if you wish.

I make do sometimes, as most of us do. A simple recipe in a rice cooker. Inexpensive and pantry friendly. This is probably bland for some people, but it would be tummy friendly to sensitive stomachs, as well as filling. Use a rice cooker, except for the skillet to crumble and brown the ground turkey in. Substitute as you like. (Use left over chicken or diced roast, perhaps?) Keep it simple.

1 (10 1/4 ounce) can golden mushroom soup
2 cups jasmine rice
4 cups water
1 lb ground turkey
1 (15 ounce) can sweet peas

Steps:

  • Add rice, water, and Golden Mushroom soup to rice cooker.
  • Set cooker on white rice setting.
  • In a skillet, crumble in and brown ground turkey.
  • After about 12 minutes, open the rice cooker and stir the ingredients, then stir in the ground turkey.
  • Drain the peas and stir in the rice cooker also.
  • Close the rice cooker and finish cooking, maybe 5 more minutes.
  • Serve and add pepper and salt to taste at the table.

  • Heat the olive oil in a large skillet over medium-high heat. When the skillet is hot swirl the oil to coat the bottom and add in the ground turkey, onion, chili powder, cumin, salt and pepper. Use a wooden spoon or potato masher to crumble the meat.
  • When the turkey is almost cooked through, lower the heat to medium and add in the garlic, green chiles, zucchini, corn and tomato. Cook for several more minutes or until the zucchini is tender.
  • Add in the cooked rice and half of the cheese. Stir everything together until heated through and the cheese is melted.
  • Turn off the heat and remove the skillet from the hot burner. Stir in the Greek yogurt until everything is combined and then top with the remaining cheese.
