- Prepare Rice-A-Roni according to package directions. Add soup, sour cream and chicken. Stir to combine.

- Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray.
- To prepare rice, melt butter in a skillet. Add rice mixture. Sauté over medium-high heat until golden brown.
- Slowly stir in water, seasoning packet, and diced tomatoes. Bring to a boil. Cover and reduce heat to low. Simmer 15 to 20 minutes, until the rice is tender.
- While the rice is cooking, brown ground beef in another skillet. Drain. Add taco seasoning, water, and salsa. Simmer for 5 minutes, until liquid has been absorbed. Remove from heat.
- In a large mixing bowl, combine cooked rice, taco meat, cream of chicken soup, sour cream, and black beans.
- Spread mixture into prepared pan. Top with shredded cheese.
- Bake uncovered for 30 minutes.

- Gather all of the ingredients together beforehand. Preheat the oven to 400° F.
- Using a small pot, cook the rice according to the package instructions.
- Then, using a separate skillet heat the oil over medium heat. You will want to use a large skillet because you will be adding a lot of ingredients to this before you stuff your peppers.
- Next, add the onion and cook it until it is soft, about 4 minutes. To that, add in the tomato paste and garlic, and stir to combine. Cook this until it is fragrant, about 1 minute.
- To this mixture, add ground beef, and work to break up the meat with a wooden spoon. Allow the cooked beef to brown a bit to develop flavors and color. Carefully drain the fat.
- Return the pan to the stove. Next, stir in the cooked rice and diced tomatoes. Season this mixture with oregano, salt, and pepper. Let this mixture of beef, tomato, and rice simmer until the liquid has reduced slightly.
- Next, carefully place the bell peppers cut side up in a 9"-x-13" baking dish. Spoon the beef mixture into each pepper and top them with the Monterey jack cheese.
- Cover the baking dish with foil. Put the dish in your preheated oven, and bake this until the peppers are fork-tender, about 35 minutes.
- Uncover and bake until the cheese is bubbly, 10 minutes more.
- Garnish with parsley before serving.

- Brown turkey in large skillet. Remove from skillet and place in a serving bowl.
- Make chicken rice-a-roni per instructions on box and add 1 tsp chicken soup base.
- During the last 5 minute of cooking time for rice-a-roni add the cooked ground turkey and the frozen peas. Stir and replace lid to skillet. When time is up for the rice-a-roni casserole is done.

EASY RICE-A-RONI CASSEROLE
I made this up when we had a family party and I needed another side dish. You can use any flavor of Rice-a-Roni, I prefer Four Cheese or Broccoli Au Gratin. I've only used chicken or turkey, but feel free to experiment with other types of meat, or add vegetables if you wish. This is a very versatile recipe! :)

- 1. Prepare Rice-A-Roni with butter and water as directed on package (about 25 minutes cooking time).
- 2. Meanwhile, place chicken or turkey in food processor and grind until crumbly.
- 3. When Rice-a-Roni has reached desired consistency, mix with canned soup and chicken/turkey, then pour into 8- or 9-inch square pan. Top with cheese if desired.
- 4. Bake at 375 degrees for 20-25 minutes.
