HOMEMADE RICE-A-RONI
This homemade rice-a-roni is a blend of rice and pasta cooked in butter, chicken broth and seasonings until light and fluffy. An easy side dish that tastes WAY better than the store bought kind!

Steps:
- Melt the butter in a large pan over medium heat.
- Add the pasta to the pan and cook until browned, about 3-5 minutes.
- Add the rice to the pan and cook for 1 more minute.
- Add the chicken broth, salt, garlic powder, onion powder and pepper to the pan.
- Bring the mixture to a simmer. Cover the pan and turn the heat to low.
- Cook for approximately 15 minutes or until all the liquid is absorbed. Fluff with a fork and sprinkle with parsley.
- Stir in tomatoes if using, then serve.

BUTTERY SEASONED RICE

Economical way to make a really tasty rice side dish that will go with anything! Makes 6 cups cooked rice (fluffed), serves 6 - 8 as a side. Make a big batch, refrigerate 4 days or freeze 3 months!

Steps:
- Place all Rice ingredients in a large saucepan and give it a stir.
- Bring to simmer over medium high heat (edges bubbling, entire surface rippling), put the lid on and turn stove down to medium low (LOW for strong stoves). It should be simmering gently.
- Cook for 13 minutes - do not lift lid!
- Tilt pot then QUICKLY peek to ensure all water is absorbed.
- Remove from stove, stand 10 minutes with lid on.
- Add butter and fluff rice with a rubber spatula. Serve!
- Storage - please read Note 4.
- Rice cooker - Same ingredients, water and rice ratio. Pop it all in your rice cooker and cook per manufacturer directions, stir through butter at end.

- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken quarters in a 9x13 inch baking dish and bake in preheated oven, covered, for 45 minutes.
- Meanwhile, in a large bowl combine rice and seasoning packages, water, soup, sour cream, crushed garlic, minced garlic and broccoli. Mix well.

- 1. Micro the 2 cups of water or broth adding 2 TB of any packaged flavors after heating, Set aside. I have used dry spagetti mix, dry burrito seasoning, dry ranch dressing or italian dressing mix with great success.Leftover chicken stock with herbs is great too!
- 2. Break up the pasta pretty small into the 3/4 c. of rice. Empty into a 3 QT. glass bowl and add the butter. Microwave uncovered for 3 min. or until the butter and pasta have browned to your liking. Remove with potholders and add the warmed broth. Put a glass microwavable plate over the bowl and return it to the microwave. Zap 12 min on high, let stand a min or two, fluff and serve!
EASY CARIBBEAN-STYLE RICE-A-RONI

RICE-A-RONI FRITTATA
I cut this recipe out of a magazine but I can't remmeber which one. We love rice-a-roni and all the other ingredients. I added mild diced green chilies and thats the only change I made. It is a great recipe with or without the green chilies.

- Preheat oven to 350.
- In large skillet over medium high heat saute' zucchini in 1 tbsp margarine or butter for 3 minutes or until tender-crisp.
- Remove from skillet and set aside.
