2 cups of yellow mustard
¼ cup whole grain mustard (optional)
½ cup of apple cider vinegar
1/2 cup of honey
1/2 cup of brown sugar
¼ cup of ketchup
1 tablespoon of chili powder
1 tablespoon of Worcestershire sauce
2 teaspoons garlic granules
2 teaspoons onion granules
1 ½ teaspoons salt
½ tsp black pepper

Steps:

  • Add the ingredients to a medium-size pot and cook over low heat for 15 minutes while occasionally stirring.
  • Cool and serve.

2 boneless rib-eye steaks
Salt and freshly ground black pepper
1 tablespoon vegetable oil
1 medium shallot, minced
1 cup lager or pilsner beer or chicken broth
1 tablespoon whole-grain mustard
2 tablespoons unsalted butter

Steps:

  • Pat the steaks dry with paper towels and season well salt and freshly ground black pepper. Heat the oil in a heavy-bottomed cast iron skillet over medium-heat until just smoking.
  • Add the steaks and brown well, undisturbed, about 3 to 4 minutes. Flip and repeat until browned, about 3 minutes more for medium-rare. Remove to a cutting board, tent with foil, and let rest for 5 minutes.
  • Meanwhile, return skillet to stove, add the shallots and cook until softened, about 1 minute. Stir in the beer and cook until reduced slightly, about 1 minute. Stir in any accumulated meat juices and mustard. Remove the pan from the heat and add the butter. Swirl the pan to melt the butter or use a whisk to incorporate. Season with salt and pepper, to taste, and arrange the steaks on serving plates. Pour the sauce over the steaks and serve immediately.

Lamb Rib Chops With Creamy Whole Grain Mustard Sauce image

1 Tbs. butter
1 Tbs. olive oil
1 rack of lamb, frenched and cut into 6 chops
1 finely diced small shallot
1/3 cup cognac
2 Tbs. whole grain mustard
1/2 cup heavy cream
2 Tbs. torn fresh tarragon leaves
salt and pepper to taste

Steps:

  • Season lamb with salt and pepper. In a large skillet, melt butter and oil over medium-high heat. When skillet and oil are hot, place chops down in a single layer. Cook for 3 minutes per side or according to desired doneness.
  • Transfer chops to a plate and loosely tent with foil to retain heat. Spoon out any fat in excess of 1 tablespoon. Add shallots and saute until softened. Stir in mustard and deglaze with cognac, scraping bottom of pan with a wooden spoon to release any browned bits. When cognac has reduced to about 1 tablespoon, stir in cream. Season to taste with salt and pepper. Stir in tarragon leaves immediately before serving. Place two or three chops on each plate and spoon the sauce over them.

2 bunches green onions, chopped
2 cups chopped white onions
8 large garlic cloves, chopped
2 cups (packed) golden brown sugar
1 cup ketchup
1 cup tomato paste (about 9 ounces)
1 cup whole grain Dijon mustard
1 cup water
1/2 cup Worcestershire sauce
1/2 cup apple cider vinegar
1/2 cup apple juice
1 large dried ancho chili, stemmed, seeded, cut into small pieces
1 tablespoon ground cumin
1 1/2 cups bourbon
For spice rub and ribs
2 tablespoons ground cumin
1 tablespoon chili powder
1 tablespoon dry mustard
1 tablespoon coarse salt
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons ground cardamom
1 1/2 teaspoons ground cinnamon
6 pounds baby back pork ribs (about 3 whole racks)

Steps:

  • Make sauce
  • Heat oil in heavy large pot over medium-low heat. Add green onions, white onions and garlic and sauté until tender, about 15 minutes. Mix in all remaining ingredients, adding bourbon last. Simmer sauce until thick and reduced to 7 cups, stirring occasionally, about 1 hour. Season to taste with salt and pepper. (Sauce can be prepared 2 weeks ahead. Cover and refrigerate.)
  • Make spice rub and ribs
  • Mix first 7 ingredients in medium bowl. Rub spice mixture over both sides of rib racks. Arrange ribs on large baking sheet. Cover and refrigerate overnight.
  • Prepare barbecue (medium heat). Cut rib racks into 4- to 6-rib sections. Arrange ribs on barbecue. Grill until meat is tender, occasionally turning ribs with tongs, about 40 minutes. Using tongs, transfer ribs to work surface.
  • Cut rib sections between bones into individual ribs. Arrange on clean baking sheet. Transfer 3 cups sauce to small bowl; place remaining sauce in small saucepan and reserve. Brush ribs with sauce from bowl.
  • Return ribs to barbecue. Place pan of reserved sauce at edge of barbecue to rewarm. Grill ribs until brown and crisp on edges, brushing with more sauce from bowl and turning occasionally, about 10 minutes. Serve ribs with warm sauce.

1/2 cup (125 mL) paprika
2 Tbsp. (30 mL) garlic powder
2 Tbsp. (30 mL) onion powder
1 Tbsp. (15 mL) dry thyme
1 tsp. (5 mL) grounded bay leaf
1 Tbsp. (15 mL) celery seeds
1/4 cup (60 mL) coarse salt
1 Tbsp. (15 mL) white pepper
1 Tbsp. (15 mL) black pepper
1 Tbsp. (15 mL) cayenne pepper
BBQ sauce:
2 Tbsp. (30 mL) vegetable oil
1 onion, chopped
2 cloves of garlic chopped
1 Tbsp. (15 mL) dry marinade
2 cups (500 mL) ketchup
1/4 cup (60 mL) cider vinegar
1/4 cup (60 mL) brown sugar
1/4 cup (60 mL) molasse

Steps:

  • Trim and peel the pork ribs and cook along with the vegetables and herbs for one hour or until tender.Soak and coat well by rubbing them in the dry marinade. Let marinate in the refrigerator for 2 hours.For the BBQ sauce, melt the onion and garlic in oil. Add the dry marinade, ketchup, vinegar, brown sugar, molasses, mustard, Worcestershire and Tabasco sauces. Cook gently for about 10 minutes.Remove ribs from the refrigerator and sprinkle with the BBQ sauce.Preheat BBQ.Place on the BBQ grill to caramelise well. Cook in direct heat 10 minutes, turning once at mid-cooking in both cases.

1 Cup Mustard, Whole Grain

Steps:

  • Preheat your Grill to 450°F.
  • Combine salt, black pepper, mustard and garlic in a bowl. Evenly rub the seasoning all over coating the entire surface of the roast.
  • Once your grill is preheated, place the roast on the grates, ensuring the ribs are facing the back end of the grill. Once the roast is placed on the grill, shut the lid to the grill.
  • After 45 minutes, lower the temperature of the grill to 325°F. Cook for an additional 2.5 hours or until the internal temperature reaches 125°F. Remove the roast, letting it rest for about 15 minutes. Slice and enjoy!

3-4 sprigs fresh rosemary or 2 tablespoons dried.
6-8 large cloves garlic
Salt
Pepper
1 cup brown sugar, packed
3/4 cup whole grained dijon mustard*
1/3 cup cider vinegar
1/4 cup dark molasses
1 1/2 teaspoons dry mustard

Steps:

  • Season ribs with the rosemary, garlic, salt and pepper. Set on backing sheet or shallow pan and cover with foil. Place in a preheated oven at 250 degrees. Cook for 1 1/2 hours. Cool. Mix remaining ingredients in a saucepan and heat until melted and incorporated. Brush ribs with sauce and grill meaty side down for five minutes, then turn and grill another five minutes. Brush with more sauce and grill meaty side down another five minutes. * The whole grain dijon mustard is what makes this recipe. Do not substitute "plain" mustard. I've added additional mustard seeds to the recipe with good results. Enjoy.

Portion the into 2 oz. balls or as desired. All to rise again until portion have doubled in size, then brush w/ whipped eggs. Bake at 350 degrees until golden brown on top and bottom. Let cool for a couple minutes before serving. Yields 2 dozen.
