RIB-EYE WITH MUSTARD-BEER PAN SAUCE

- Pat the steaks dry with paper towels and season well salt and freshly ground black pepper. Heat the oil in a heavy-bottomed cast iron skillet over medium-heat until just smoking.
- Add the steaks and brown well, undisturbed, about 3 to 4 minutes. Flip and repeat until browned, about 3 minutes more for medium-rare. Remove to a cutting board, tent with foil, and let rest for 5 minutes.
- Meanwhile, return skillet to stove, add the shallots and cook until softened, about 1 minute. Stir in the beer and cook until reduced slightly, about 1 minute. Stir in any accumulated meat juices and mustard. Remove the pan from the heat and add the butter. Swirl the pan to melt the butter or use a whisk to incorporate. Season with salt and pepper, to taste, and arrange the steaks on serving plates. Pour the sauce over the steaks and serve immediately.

- Season lamb with salt and pepper. In a large skillet, melt butter and oil over medium-high heat. When skillet and oil are hot, place chops down in a single layer. Cook for 3 minutes per side or according to desired doneness.
- Transfer chops to a plate and loosely tent with foil to retain heat. Spoon out any fat in excess of 1 tablespoon. Add shallots and saute until softened. Stir in mustard and deglaze with cognac, scraping bottom of pan with a wooden spoon to release any browned bits. When cognac has reduced to about 1 tablespoon, stir in cream. Season to taste with salt and pepper. Stir in tarragon leaves immediately before serving. Place two or three chops on each plate and spoon the sauce over them.

- Make sauce
- Heat oil in heavy large pot over medium-low heat. Add green onions, white onions and garlic and sauté until tender, about 15 minutes. Mix in all remaining ingredients, adding bourbon last. Simmer sauce until thick and reduced to 7 cups, stirring occasionally, about 1 hour. Season to taste with salt and pepper. (Sauce can be prepared 2 weeks ahead. Cover and refrigerate.)
- Make spice rub and ribs
- Mix first 7 ingredients in medium bowl. Rub spice mixture over both sides of rib racks. Arrange ribs on large baking sheet. Cover and refrigerate overnight.
- Prepare barbecue (medium heat). Cut rib racks into 4- to 6-rib sections. Arrange ribs on barbecue. Grill until meat is tender, occasionally turning ribs with tongs, about 40 minutes. Using tongs, transfer ribs to work surface.
- Cut rib sections between bones into individual ribs. Arrange on clean baking sheet. Transfer 3 cups sauce to small bowl; place remaining sauce in small saucepan and reserve. Brush ribs with sauce from bowl.
- Return ribs to barbecue. Place pan of reserved sauce at edge of barbecue to rewarm. Grill ribs until brown and crisp on edges, brushing with more sauce from bowl and turning occasionally, about 10 minutes. Serve ribs with warm sauce.

- Trim and peel the pork ribs and cook along with the vegetables and herbs for one hour or until tender.Soak and coat well by rubbing them in the dry marinade. - Combine salt, black pepper, mustard and garlic in a bowl. Evenly rub the seasoning all over coating the entire surface of the roast.
- Once your grill is preheated, place the roast on the grates, ensuring the ribs are facing the back end of the grill. Once the roast is placed on the grill, shut the lid to the grill.
- After 45 minutes, lower the temperature of the grill to 325°F. Cook for an additional 2.5 hours or until the internal temperature reaches 125°F. Remove the roast, letting it rest for about 15 minutes. Slice and enjoy!

- Season ribs with the rosemary, garlic, salt and pepper. Set on backing sheet or shallow pan and cover with foil. Place in a preheated oven at 250 degrees. Cook for 1 1/2 hours. Cool. Mix remaining ingredients in a saucepan and heat until melted and incorporated. Brush ribs with sauce and grill meaty side down for five minutes, then turn and grill another five minutes. Brush with more sauce and grill meaty side down another five minutes. * The whole grain dijon mustard is what makes this recipe. Do not substitute "plain" mustard. - In a large saucepan, bring the wine to a boil over moderately high heat. Remove from the heat and add the carrots, leek, garlic, parsley and thyme sprigs and bay leaf. Let the marinade cool. Spread the short ribs in a large shallow baking dish in a single layer. Pour the marinade over the ribs, cover and refrigerate overnight.
- Preheat the oven to 300°. Remove the short ribs from the marinade. Strain the marinade, reserving the liquid and vegetables separately. Discard the herb sprigs and bay leaf.
- Season the ribs with salt and pepper and dredge them in the flour. In a large skillet, heat 2 tablespoons of the oil until almost smoking. Add half of the ribs and cook over moderately high heat until well browned, about 4 minutes per side. Transfer the ribs to a large roasting pan. Brown the remaining ribs in the remaining 2 tablespoons of oil and add them to the roasting pan in a single layer.
- Pour off all but 1 tablespoon of fat from the skillet. Add the reserved vegetables and cook over high heat until beginning to brown, about 4 minutes. Spoon the vegetables over the ribs. Add the marinade to the skillet and bring to a boil. Pour the marinade over the ribs and add the veal stock. Cover with foil and bake for about 3 hours, or until the meat is very tender and almost falling off the bone. Transfer the ribs to a large baking dish. Leave the oven on.

- Combine all ingredients together in a mixing bowl, except the cheese. Knead on medium speed for 10 minutes or until bread is firm and tacky. On low speed add in cheese, then switch to medium speed for 2 minutes to fully combine cheese into the dough. Transfer dough into a light grease pan and cover with a black trash bag; then place in a warm spot to all the dough to rise for 45 minutes. Punch down dough and let rest for few minutes. Portion the into 2 oz. balls or as desired. All to rise again until portion have doubled in size, then brush w/ whipped eggs. Bake at 350 degrees until golden brown on top and bottom. Let cool for a couple minutes before serving. Yields 2 dozen.
- Heat a sauté pan on medium heat and add all ingredients. Turn down to low heat sauté for 45 minutes until there is nice a nice caramel color. Yields 1 cup.
