RIB-EYE STEAKS THAT ARE SUPERB
I saw this recipe on the Food Network and tried to write it down as closely as I can recall. Very simple to make and quick. I therefore did some experimenting and came up with, I am sure, the same method for cooking the Rib-Eye Steaks. These are the best steaks that I have made and I have made many others. Tender, succulent and so tasty.

Steps:
- Remove steaks from the refrigerator and let them sit for about 30 minutes to take the chill out of the meat.
- Now, coat both sides generously with coarse black pepper and granulated garlic powder.
- Heat an iron skillet or a heavy bottomed frying pan until very hot on high heat.
- For each steak, sprinkle onto the skillet, 3/4 teaspoon of coarse salt and allow salt to heat up for at least 1 minute.
- Place the steaks on the coarse salt and cook for 3 minutes; DO NOT DISTURB at all, DO NOT LOOK or even move the steaks.
- Turn the steaks over and cook for an additional 3 minutes; again DO NOT DISTURB at all.
- The cooking time of 6 minutes gives you a medium-rare steak; DO NOT OVERCOOK.
- If you desire to cook it to medium, then cook for an additional 30 seconds to 1 minute per side.
- Remove steaks to a plate, cover with foil and let rest for 5 minutes, so that all juices are absorbed by the meat.
- Scrape off any excess coarse pepper and salt if desired and discard.
- I prefer to slice the steaks on an angle about 1/4 inch to 3/8 inch thickness.
- Serve with freshly processed horseradish.
- NOTE; Make sure that the heat is on as HIGH as possible without burning at all times during cooking the steaks. This will vary depending on your cooktop.
- Do not use ordinary table salt.
- Beef Tenderloin steaks are also real great cooked in this manner. If using a steak thicker than 1 inch, add 1 extra minute per side for medium-rare.

- Preheat a grill to high heat.
- Place rib-eye steaks on a large platter and season with rub on all sides. Transfer seasoned steaks to the hot grill, and cook for 4 to 6 minutes on each side for medium-rare, longer if desired. Remove steaks and let rest for 5 to 10 minutes before serving.
- In a small bowl, combine all ingredients, to taste. Adjust the ratio of spices to your preference.
GRILLED STEAKS (INDOORS)
Cold outside? No problem grill indoors with your Grill Pan. Just be sure to let your grill pan get very, very hot before cooking. Yes you can use a regular cast iron pan. Start with high quality steaks, choice grade or better like a center cut, be it a filet, rib eye, or strip steak. With marbling, the white ribbons of fat running through the beef. The fat will turn to liquid during cooking, keeping the meat moist and flavorful. Thick is the best way to get a flavorful crust on the outside of the steaks. A steak less than 1.5" thick will cook through before the outside is seared. The steak is coating with my mix Recipe #206538 Which is easy to make or just use the suggested ingredients below. Your exhaust fan should be on because this method creates a fair amount of smoke as the steak is seared.

- Heat grill pan to very very hot.
- Rub seasoning evenly onto steaks then drizzle with olive oil and let it marinate for 10 minutes at room temperature.
- Place steaks in pan searing the steaks for 2 to 3 minutes on each side.
- After the steaks are seared, reduce the heat to moderately hot to hot and continue cooking the steaks to a desired doneness using the timing suggestions below.
- Transfer the steaks to a platter, and let rest 5 minutes before slicing and serving.
- Cooking times below include the initial searing time. Give filet mignon one minute less to cook than other steaks.
- DO NOT OVERCOOK.
- For best results, check the internal temperature for doneness with an instant-read thermometer a couple of minutes before the end of suggested cooking time.

- 1. Remove steaks from refrigerator about 30 minutes prior to cooking. Prick with a fork on both sides and liberally sprinkle Adolph's Meat Tenderizer. Cover and set aside.
- 2. Preheat smokeless grill to 450 degrees. When temperature is reached, brush steaks on both sides with oil. Place steaks on the grill and sprinkle with a few drops of Liquid Smoke, brush to spread evenly. Sprinkle with salt and pepper to taste. Please note that you may not need to add much salt, if any because the Adolph's meat tenderizer contains salt.
- 3. For medium to medium well: Cook 5 to 7 minutes and turn steaks. At this time, I brush on a few more drops of Liquid Smoke. Cook for 3 to 5 minutes. Remove from grill and put on a serving platter. Tent with aluminum foil and let rest for 5 minutes before serving.

- At LongHorn Steakhouse, we recommend a char-grill for bone-in steak like our Outlaw Ribeye®. If grilling outdoors, clean and spray oil your grill, heat to 550 degrees F. - Prepare grill for cooking.
- Let steaks stand at room temperature 30 minutes. Stir together allspice, cumin, and salt. Pat steaks dry and sprinkle spice mixture onto both sides of steaks to lightly coat, pressing to adhere.
- Grill steaks in 2 batches on an oiled rack set 5 to 6 inches over glowing coals 4 to 5 minutes on each side, or until an instant-read thermometer inserted horizontally 2 inches into thickest part of meat registers 130°F for medium-rare. Transfer steaks to a platter and let stand 10 minutes.

- Place the steak on a large plate or sheet tray. Season both sides with the pepper, sugar, Montreal seasoning, and salt. Rub it in with your hands all over until coated evenly.

- Prepare the steaks first and get them marinating. Do not trim the steaks of fat before grilling; the fat will keep the moisture in. Place the steaks onto a tray and drizzle the olive oil and vinegar over each steak, massaging them into the meat. Next, season generously with coarse sea salt, followed by a sprinkling of the herb de provence blend and black pepper. Wrap the tray with plastic wrap and place the steaks into the refrigerator. - Next, prepare the chimichurri sauce. I have separate video recipe for the sauce, linked above in the post. The sauce can be prepared the day before. Thoroughly rinse the cilantro and parsley under cold water. Cut off the hard ends and discard. Place the cilantro and parsley into a food processor along with the remaining ingredients, except for the olive oil. Add 1/4 cup olive oil to start. Turn on food processor and pulse for about 1 minute, then add more olive oil as needed. The sauce needs to have a chunky sauce consistency but shouldn't be too dry.
- Prepare the potatoes last, before grilling the steaks. Place whole baby potatoes into a large pot filled with salted water and bring to a boil. Cook for about 15 minutes, until the potatoes are fork tender, then drain. Cut larger potatoes in half at this time. Preheat a large frying pan over medium heat and add the butter and oil and the cooked potatoes. Season the potatoes generously with salt, then fry the potatoes over medium heat until golden brown. Toss the potatoes every 3 to 4 minutes, cooking for about 20 minutes total. Once the potatoes are golden, season with the remaining spices: paprika, herb de provence, garlic powder and black pepper.
- For grilling the steaks, preheat the grill to 600F (high heat) first. Place the steaks onto the hot grill, spacing at least 6 inches apart. Grill the steaks with the grill lid open; grill for 7 to 8 minutes per side, rotating 45 degrees at the halfway point to achieve even grill marks. After 7 to 8 minutes, turn the steaks and repeat for the other side.

- TAKE STEAK OUT OF FRIDGE 30 MINUTES BEFORE COOKING. Before you take your steak out of the fridge to cook, you should actually let it sit at room temperature for 30 minutes before cooking.

- FINISH COOKING YOUR STEAKS ON THE STOVETOP OR IN THE OVEN. IF ON STOVETOP… Lower the heat to medium. If you're using butter, as the butter melts, baste the butter, garlic and herb mixture over the top of the steak for extra flavor.
- LET YOUR STEAKS REST. Remove the steak to a plate and let it rest for 5 minutes. This is key for a super juicy steak. Allowing it to rest before slicing will let the juices redistribute throughout your entire piece of steak.
