EASIER RIBBON JELLO (SOUR CREAM VERSION)
This is the prettiest ribbon jell-o and it's much easier to prepare and not as SUPER sweet as other ribbon Jello recipes I've come across. I LOVE this recipe! Use different Jello flavors for different colors. Mine posted below makes a rainbow effect.

Steps:
- You will be making two layers from each box of jello. Once you do the first one, you'll have the technique down.
- Use a clear Pyrex dish. The 9X14 size works great for six colors. If your dish is a little smaller, use 5 colors like I did this time.
- I use a 2-cup Pyrex measuring cup to boil my water and a second one for pouring off part of the jello.
- Put one cup of water in your Pyrex measuring cup and boil the water in your microwave. I used the two-minute setting for this.
- Carefully remove the measuring cup from the microwave and add one package of gelatin. Stir until it is completely dissolved.
- Then measure out ¾ cup of the jello into a second container. To this container, add 1/3 cup of sour cream and whisk until it is smooth.
- To the remaining jello, add 2 TB of cold water and mix.
- Pour this into a 9X13 clear baking dish and refrigerate until set.
- After 30 minutes, pull your dish out of the refrigerator and pour the sour cream mixture over the first layer.
- Place the dish back into the refrigerator for another 30 minutes to set.
- Wash your measuring cups and prepare the next layer of jello the same way you made the first layer -- one cup of solid color jello and one mixed with sour cream.
- Pour the clear jello mix over the top of the set layers. Then half an our later, add the sour cream mixture.
- Keep repeating this process until you have all the layers done.
- Cover with foil and refrigerate.

CLASSIC HOLIDAY RIBBON SQUARES (JELLO)
This red, white, and green jello is a classic addition to the holiday table (you can switch colors for other occasions). Recipe from "Celebrating 100 years of Jello." I speed-up the chilling time table by setting each bowl/pan over a larger bowl/pan of ice water (lots of ice). I do this with all my Jello and each stage is done in about 15-20 minutes. You need to check for required texture and not go by clock. I love making these layered desserts!

Steps:
- Stir 1 cup boiling water into each flavor of gelatin in separate medium bowls at least 2 minutes, until dissolved.
- Stir 3/4 cup of the cold water into the red gelatin.
- Pour into 9-inch square pan.
- Refrigerate about 45 minutes or until set but not firm to the touch (gelatin should still stick to the finger when touched).
- Meanwhile, stir lemon gelatin gradually into cream cheese in large bowl with whisk until smooth.
- (I use the blender for this step, because I don't like lumpy Jello).
- Stir in pineapple with the juice.
- Refrigerate about 45 minutes or until slightly thickened (consistency of unbeaten egg whites).
- Stir in whipped topping and mayonnaise.
- Spoon over red gelatin layer in pan.
- Refrigerate about 30 minutes or until set, but not firm (gelatin should stick to finger and should mound).
- Meanwhile, stir remaining 3/4 cold water into lime gelatin.
- Refrigerate about 30 minutes or until slightly thickened (consistency of unbeaten egg whites).
- Spoon over lemon gelatin mixture in pan.
- Refrigerate 4 hours or until firm.
- Unmold and cut into squares.
- Garnish with small dollop of Cool Whip.

RIBBON JELLO
My mom used to make this every Christmas and every 4th of July. It was a real treat and was requested at all my siblings high school graduation open houses. It's yummy and beautiful to look at - so make sure you assemble it in a clear dish. Use your favorite Jello flavors and colors or vary by season! I'm having to guess at the preparation and "cook" (refridgeration) times, just so I can post this - so don't expect them to be exact.

JELL-O RIBBON SALAD
This is the original Jell-O Ribbon Salad, as published in the Joys of Jell-O recipe book that my mom has had--probably since the 1950's. The holidays & other special occasions just wouldn't be the same without this dish on the table!
