Yield Serves 8 to 12 people

Number Of Ingredients 14

Four-six bone-in or boneless rib-eye, T-bone, and/or strip steaks cut over 1"
Sea salt or kosher salt
Freshly ground black pepper
Canola oil or vegetable oil
Baste:
1/4 cup olive oil
4 Tbsp unsalted butter
10 crushed garlic cloves
1/4 cup finely chopped savory herbs such as rosemary, thyme, marjoram, oregano, and/or sage
Board Dressing:
6 Tbsp olive oil
2 Tbsp finely chopped fresh flat-leaf parsley
Sea or kosher salt to taste
Freshly ground black pepper to taste

Steps:

  • Generously season the steaks with salt and pepper. Press in the seasoning, and dab the meat onto the board to collect any excess.
  • Glisten the meat with canola oil, using the first steak to brush oil onto the others.
  • Preheat the BBQ to medium-high.
  • Combine the baste ingredients in a foil pan or heatproof pan and warm on the side of the grill.
  • Put the meat on the well-oiled grill and cook until medium-rare (or cook to desired doneness).
  • Baste regularly, stacking and/or flipping the meat if the flames get out of control.
  • When the steaks are nicely caramelized and charred on both sides, approximately 15 to 25 minutes total, they are done. (You can check the temp with an instant-read thermometer if that is more comfortable; the steaks should register 125°F).
  • Combine the board dressing ingredients.
  • Let the steaks rest for 2 minutes, then pour the board dressing onto a cutting board and slice the steaks, turning to coat the slices.
  • *When steaks come off the grill looking all charred and gorgeous, it'll be tough to resist digging in right away. But letting them rest is essential. Otherwise, a lot of the lovely, tasty juices will spill out when you slice in.

  • Let the steak come to room temperature. Open the package and blot the steak dry with paper towels. Let the steak sit at room temperature for about 30 minutes on the counter; this helps it cook more evenly.
  • Heat the skillet under the broiler 20 minutes before cooking. Turn on your oven's broiler to high and place an oven rack 6 to 8 inches below the broiler element. Put the skillet on the rack to heat up with the oven.
  • Rub the steak with oil. Drizzle a little oil over the steak and use your fingers or a brush to spread it evenly over the steak and on the sides. Sprinkle with half the salt and a few grinds of fresh pepper. Flip the steak and repeat on the other side.
  • Place the skillet over high heat. Turn on a stove burner to high heat. Carefully remove the hot skillet from the oven using an oven mitt. Place it on the stovetop burner.

HOW TO GRILL A RIBEYE STEAK - 101 COOKING FOR TWO

From 101cookingfortwo.com
  • Start with prime or choice ribeye steaks. I like a 1 1/4 to 1 1/2 inch thick that will be 12-16 ozs. each. One of the most important steps is resting the steaks at room temperature for 30 or so minutes. This raises the temperature of the meat making getting your desired internal temperature much easier.
  • While the steaks are resting, get your grill temperature about 450°-500°. Just over medium for me but more medium-high on most grills. Of course, clean and oil the grill.
  • If there is a layer of trimmable fat, remove most of it. Give the steaks seasoning of your choice. Do it just before grilling; I use a nice sprinkling of my 7:2:2 seasoning but just a nice sprinkle of coarse salt and pepper will do.
  • Place the steaks on the grill. Close the lid. Grill on the first side for 6 minutes. Rotate half the way through if you want these nice crossed grill marks. Flip and grill until you reach the correct internal temperature for your taste. For me, I do another 6 minutes (with the rotation) and get about 145° internal temperature. For rare, you will want less time on both sides.
