This steak is one of the top dishes served at Hudson's on the Bend, a popular Austin, TX, restaurant known for its game cooking and big-flavored, robust dishes. "These guys could cook a horseshoe and make it delicious," says CBS news anchor and frequent Hudson's diner Dan Rather in the foreword to their new book." Chef Jeff Blank offers creativity and originality in the kitchen to make him one of the most celebrated chef's in the country. Jeff has owned Hudson's on the Bend Restaurant in Austin since 1984. Prior to that, he owned and operated Wineskin Restaurant in Aspen, Colo. He was praised by the New York Times, Texas Monthly, and Chef's Magazine. In 1996 and 1997, Jeff won the People's Choice Award at the Texas Wine and Food Festival. Hudson's on the Bend was named to the "Top 50 Restaurants in America" list. 6 (14 -16 ounce) rib eye steaks
1 (12 ounce) bock beer, I use Shiner Bock
2 tablespoons garlic, chopped
2 tablespoons red onions, diced fine
2 tablespoons Worcestershire sauce
4 dashes Tabasco sauce
2 limes, juice of
1/4 cup brown sugar, packed
1 tablespoon coarse brown mustard (Creole is good)
2 tablespoons olive oil
2 teaspoons salt

Steps:

  • Combine all ingredients except salt. Salt in the marinade draws too much moisture from the meat over an extended time.
  • Pour over steaks and marinate from 4 hours to overnight.
  • Cook the steaks over medium-high heat to your taste- about 4 minutes each side for medium rare to medium, longer for steak that is more done.
  • Of course everything tastes better when it is cooked outside BUT you can broil this inside and it comes out great!
  • Season with salt to taste after cooking.

1/2 cup soy sauce
1/4 cup real maple syrup
6 garlic cloves, minced
1 tablespoon grated fresh ginger
1 teaspoon mustard powder
1/2 teaspoon sesame oil
1/4 teaspoon hot pepper sauce
1/2 cup beer
4 (10 ounce) rib eye steaks

Steps:

  • In a medium size mixing bowl, combine soy sauce, pancake syrup, chopped garlic, grated ginger root, sesame oil, Tabasco sauce, and mix well to blend. Now add beer and stir lightly to mix.
  • Prepare steaks by scoring any fatty outside areas on steak with a knife, (this prevents the steaks from curling when barbecuing). Place steaks in a casserole dish and pour marinade over.
  • Using a fork, punch holes in steaks so that the marinade penetrates into the steaks. Turn steaks over and repeat punching holes.
  • Cover with clear wrap or foil and let marinate in the refrigerator for at least 1 hour or longer. You can also refrigerate and marinate overnight.
  • Prepare and preheat barbecue to high heat. Place steaks directly on grill and sear one side for about 15 seconds. Turn steaks over and cook for about 5 minutes, then turn over and cook.

2 (16 ounce) beef sirloin steaks
¼ cup dark beer
2 tablespoons teriyaki sauce
2 tablespoons brown sugar
½ teaspoon seasoned salt
½ teaspoon black pepper
½ teaspoon garlic powder

Steps:

  • Preheat grill for high heat.
  • Use a fork to poke holes all over the surface of the steaks, and place steaks in a large baking dish. In a bowl, mix together beer, teriyaki sauce, and brown sugar. Pour sauce over steaks, and let sit about 5 minutes. Sprinkle with 1/2 the seasoned salt, pepper, and garlic powder; set aside for 10 minutes. Turn steaks over, sprinkle with remaining seasoned salt, pepper, and garlic powder, and continue marinating for 10 more minutes.
  • Remove steaks from marinade. Pour marinade into a small saucepan, bring to a boil, and cook for several minutes.
  • Lightly oil the grill grate. Grill steaks for 7 minutes per side, or to desired doneness. During the last few minutes of grilling, baste steaks with boiled marinade to enhance the flavor and ensure juiciness.

1 cup guinness beer (may sub another stout)
1/2 cup finely chopped sweet onion
1/3 cup reduced sodium soy sauce
2 tablespoons molasses (not blackstrap)
1 tablespoon chopped fresh rosemary (may sub 1 teaspoon dried)
1 tablespoon minced garlic
1/4 teaspoon Worcestershire sauce
1 lb boneless rib-eye steak, 1 1/2 inches thick

Steps:

  • Combine beer, sweet onion, soy sauce, molasses, rosemary, garlic and Worcestershire sauce in a large sealable plastic bag. Add steaks. Seal the bag, shake and turn it, and refrigerate, flipping over and shaking the bag from time to time, for 12 to 18 hours.
  • Preheat a grill to medium. Remove the steaks from the marinade and pat dry. Reserve 1 cup marinade (discard the rest). Grill the steaks until browned on the first side, 5 to 7 minutes. Turn over and grill until an instant-read thermometer inserted into the center of the steak registers 125°F for medium-rare. Remove from the grill and let rest for 5 to 10 minutes.
  • Meanwhile, place the reserved 1 cup marinade in a small saucepan and bring to a simmer over medium-high heat. Boil until reduced by about half, 7 to 10 minutes.
  • Drizzle each steak with about 1 tablespoon of the reduced sauce and serve.

2 tablespoons sea salt
2 tablespoons lemon pepper
2 (12 fluid ounce) cans or bottles beer of choice

Steps:

  • Place the steaks in a large, shallow container with a lid. Season each side of the steaks with the salt and lemon pepper. Gently pour the beer over the steaks (making sure the seasoning doesn't wash off). Cover, and refrigerate for 1 to 2 hours.
  • Preheat grill for high heat.
  • Lightly oil grill grate. Place steaks on grill, and discard beer marinade. Cook for 5 minutes per side, or to desired doneness.

2 lbs rib eye steaks
salt and pepper
1 tablespoon olive oil
3 tablespoons butter
2 crushed garlic cloves
1/2 lb sliced mushrooms
2 tablespoons flour
1/2 cup marsala wine
1 cup beef broth
1/4 teaspoon dried rosemary

Steps:

  • Heat olive oil in skillet over high heat.
  • Salt and pepper steaks to taste.
  • Place steaks in hot skillet and immediately turn down heat to medium high.
  • Cook steaks for 4 minutes on each side or to your taste.
  • Remove steaks to a platter and cover with foil to keep warm.
  • Remove skillet from heat and add butter and garlic.
  • Return to heat and add mushrooms and saute until done.
  • Add flour and cook for about a minute,decrease heat to medium low, then add wine and broth.
  • Bring to a boil, stirring constantly until thick.
  • Remove pan from heat and add rosemary.
