PRETTY PINK LEMONADE

1 pint fresh raspberries
1 (12-ounce) can frozen concentrated lemonade, thawed
1 1/2 cups vanilla vodka
3 cups cold water
2 cups seltzer water, chilled
Mint sprigs, for garnish
1 lemon, sliced into thin rounds

Steps:

  • Put the raspberries in a blender or food processor and puree. Using a rubber spatula press the raspberry puree through a fine mesh sieve into a medium bowl. In a large pitcher combine the frozen concentrated lemonade, strained raspberry puree, the vodka, 3 cups of cold water and the seltzer. Stir and pour into glasses filled with ice. Garnish each glass with a sprig of mint and a lemon slice.

1 ounce simple syrup (equal parts sugar and water, heated until sugar dissolves)
1 1/2 ounces freshly squeezed lemonade
1 ounce raspberry syrup

Steps:

  • Add the simple syrup, lemonade, and raspberry syrup in a glass mixing glass. Shake well. Pour into individual tumbler glasses. Garnish with fresh mint and raspberries.

1 tablespoon pink peppercorns
2 teaspoons sugar
1 teaspoon finely grated lemon zest
2 1/4 cups pink lemonade, chilled
3/4 cup gin
1 750-ml bottle sparkling rose, chilled

Steps:

  • Combine the peppercorns, sugar and lemon zest in a shallow bowl. Smash with the back of a wooden spoon until the peppercorns are crushed. Moisten the rims of 6 glasses with a little lemonade, then dip in the peppercorn mixture.
  • Combine the lemonade, gin and sparkling rose in a pitcher. Fill the prepared glasses with ice, then add the cocktail.

BASIL LEMONADE

1/2 cup water
12 torn basil leaves
1 cup seltzer
2 or 4 tablespoons flavored syrup

Steps:

  • Combine one 12-ounce can thawed frozen pink lemonade concentrate, 1/2 cup water and 12 torn basil leaves in a medium skillet; cook over medium-high heat until syrupy, about 10 minutes. Stir in 8 more torn basil leaves; let cool, then strain. Add seltzer.
  • For each drink, combine 2 to 4 tablespoons flavored syrup with 1 cup cold seltzer in an ice-filled glass.

2 tablespoons unsweetened cranberry juice
1 cup superfine sugar

  • Combine the water, lemon juice, cranberry juice and sugar in a large pitcher. Stir with a wooden spoon until the sugar is dissolved. Add the raspberries. Serve in tall glasses over ice.
