1/2 cup butter, softened
1-1/4 cups sugar, divided
1 large egg, room temperature
1 cup buttermilk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chopped rhubarb
1/2 teaspoon ground cinnamon
1-1/2 cups whole milk
1/3 cup sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and 1 cup sugar. Add egg; beat well. Combine buttermilk and vanilla; set aside. , Combine flour, baking soda and salt; add alternately with buttermilk/vanilla to the creamed mixture. Stir in rhubarb. Spread in a greased 13x9-in. baking pan. , Combine the remaining sugar with cinnamon; sprinkle over batter. Bake until a toothpick inserted in the center comes out clean, 35 minutes. , For topping, combine all ingredients; pour over individual squares.

Delicious served warm with ice cream. If you don't have buttermilk, you may substitute sour milk. Stir 1 tablespoon of vinegar or lemon juice together with 1 cup of milk and let stand for 10 minutes.

½ cup butter
1 ½ cups white sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 cup buttermilk
2 cups rhubarb, chopped
1 tablespoon all-purpose flour
¼ cup butter
2 teaspoons ground cinnamon
1 cup packed brown sugar

Steps:

  • In a large bowl, cream together butter or margarine and sugar. Beat in egg and vanilla.
  • In another bowl, sift together 2 cups flour, soda, and salt. Add sifted ingredients alternately with buttermilk to creamed mixture.
  • Toss rhubarb with 1 tablespoon flour, and stir into batter. Spoon batter into buttered 9 x 13 inch pan, and smooth the surface.
  • Blend together 1/4 cup butter or margarine, cinnamon, and brown sugar; sprinkle evenly over batter.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes.

I got this great recipe from my mother-in-law who's been making it for years! It doesn't have a strong rhubarb taste. It's sweet and moist. I hope you enjoy making it as much as I do. I always try to use fresh rhubarb, never frozen and then thawed because it doesn't work well.

1 c milk
1 Tbsp vinegar
1 1/2 c brown sugar
1/2 c butter
1 egg
1 tsp baking soda
2 c flour
1 tsp vanilla
2 c raw rhubarb (cut into chunks)
TOPPING
1/3 c sugar
1/2 tsp cinnamon

Steps:

  • 1. First, mix milk with vinegar and set aside.
  • 2. Next, blend brown sugar, butter and egg.
  • 3. Add and stir baking soda into the milk/vinegar mixture.
  • 4. Pour milk mixture into the brown sugar, butter and egg mix and blend.
  • 5. Next, add flour and vanilla and mix well.
  • 6. Then add the Rhubarb chunks.
  • 7. Pour batter into well-greased 9x13 pan.
  • 8. Mix up the topping ingredients and sprinkle on top of the cake batter.
  • 9. Bake at 325 degrees for 50-60 minutes. The cake should be set in the center. Enjoy! This is a very moist Rhubarb Cake recipe.

1 cup buttermilk
1 egg, beaten
2 cups rhubarb, cut small
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla
1 cup brown sugar
1/4 cup butter
2 teaspoons cinnamon

Steps:

  • Cream 1/2 c butter and white sugar.
  • Add the buttermilk, vanilla and beaten egg.
  • Mix well.
  • Mix the flour, baking powder, and salt.
  • Add the rhubarb to the flour and stir.
  • Fold the flour mixture into the egg mixture.
  • Put in a greased 8 x 8 pan.
  • Blend the brown sugar, cinnamon and 1/4 c butter.
  • Sprinkle on top.
  • Bake for 45-60 minutes at 350.
  • Sides should pull away from pan.
  • Best served hot with whipped cream or vanilla ice cream.

Combine flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating just until moistened. Fold in the rhubarb. Pour into a greased 9-in. square baking dish., Combine topping ingredients; sprinkle over batter. Bake 40-45 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack., For sauce, melt butter in a saucepan. Add sugar and milk. Bring to a boil; cook and stir for 2-3 minutes or until thickened. Remove from heat; stir in vanilla. Serve with cake.

1 cup sour cream

This recipe tastes even better with homegrown rhubarb

1quantity Barney's roasted rhubarb (see recipe, below method)
250g pack butter , softened, plus extra for greasing
150g pot ready-made custard (not the chilled kind; I used Ambrosia)
250g self-raising flour
½ tsp baking powder
4 large eggs
1 tsp vanilla extract
250g golden caster sugar
icing sugar , for dusting

Steps:

  • Make the roasted rhubarb first, carefully draining off the juices before you let it cool. Butter and line a 23cm loose-bottomed or springform cake tin. Heat oven to 180C/fan 160C/gas 4.
  • Reserve 3 tbsp of the custard in a bowl. Beat the rest of the custard together with the butter, flour, baking powder, eggs, vanilla and sugar until creamy and smooth. Spoon one-third of the mix into the tin, add some of the rhubarb, then dot with one-third more cake mix and spread it out as well as you can. Top with some more rhubarb, then spoon over the remaining cake mix, leaving it in rough mounds and dips rather than being too neat about it. Scatter the rest of the rhubarb over the batter, then dot the remaining custard over. Bake for 40 mins until risen and golden, then cover with foil and bake for 15-20 mins more. It's ready when a skewer inserted into the middle comes out clean. Cool in the tin, then dredge with icing sugar when cool.

  • Preheat oven to 350°F. Grease and flour a 13x9-inch baking pan. In a large bowl beat 1/2 cup butter with a mixer on medium 30 seconds. Add brown sugar and salt.   • For topping, in a small bowl stir together granulated sugar and cinnamon. Using a pastry blender or fork, cut in 2 Tbsp. butter until mixture resembles coarse crumbs. Sprinkle topping over batter.
  • Bake 40 to 45 minutes or until a toothpick comes out clean. Cool in pan on a wire rack at least 30 minutes. Cut into pieces. Serve warm or at room temperature.
