RHUBARB JAM
A rhubarb lover's delight! Rhubarb jam, pure and simple, with the consistency of apple butter. This jam also freezes well, but it will probably get eaten up before making it to the freezer! Fabulous!

Steps:
- In a saucepan, combine the rhubarb, sugar, orange zest, orange juice and water. Bring to a boil, then cook over medium-low heat for 45 minutes, stirring occasionally, or until thick. It will thicken more as it cools.
- Ladle into hot sterile jars, and seal with lids and rings. Store opened jars in the refrigerator.

RHUBARB JAM WITH CINNAMON
As a kid I loved to eat rhubarb fresh from the garden, dipped in cinnamon sugar. This jam brings back many wonderful summery childhood memories!

Steps:
- wash out your jars, lids and rings. put jars into canning kettle and bring to a boil. place rings and lids in a bowl of hot water.
- place rhubarb and water in a large saucepan and bring to a boil over high heat.
- reduce heat to medium, cover and cook until rhubarb is tender - 2 to 3 minutes.
- add dry pectin slowly, stirring as you do so.
- turn heat back up to high, mixture should be still boiling. If not wait till it reaches a full rolling boil before adding sugar.
- pour sugar slowly into boiling rhubarb (a second pair of hands is useful for this step!), stirring as you go.
- Keep stirring to prevent sticking and burning, until mixture returns to a full boil.
- Add lemon juice and cinnamon. Continue to stir for another minute of rolling boil.
- turn off heat, remove pan. skim off any foam.
- pour jam into processed jars, putting on lids and rings, tightening to finger tight.
- process in water bath for 10 minutes.
- remove and place on a dry towel to cool for 24 hours. Lids should pop down fairly quickly. Enjoy!

STRAWBERRY, RHUBARB, ORANGE, HONEY JAM
This is a take on my original Strawberry/Rhubarb jam recipe, and it is one of the most delicious jams I've made so far! The flavors are amazing - strawberry, rhubarb, orange, and honey, with just a little cinnamon. Super easy to make and you won't be disappointed. This recipe makes 8 half pint jars.

Steps:
- Dice rhubarb and place in pan with a little water over medium heat and cook until tender.
- Slice strawberries in quarters and then mash slightly and add to pan with rhubarb.
- Add lemon juice and bring mixture to a boil. Reduce eat and cook for about 20-30 minutes. Mixture will start to get thick.
- Add orange juice, zest, and cinnamon to pan and stir together. Continue cooking.
- In separate bowl, combine honey and pectin. I use sage honey, but clover would be good as well. You want to use a light colored honey.
- Add honey/pectin to the jam mixture and stir. Cook for about 5 more minutes.
- Remove from heat and fill jars to 1/4" of top. Recipe makes eight 8oz. jars.
- Wipe rims clean and screw on 2-piece lids.
- Submerge sealed jars into hot water at 200 degrees (or boiling) for 10 minutes. You will hear a "pop" sound once jars are removed from water - that is when the lids are sealed. Let cool on your kitchen counter.

EASY APPLE RHUBARB JAM
Although apple rhubarb jam may sound weird, it is amazingly delicious! You can substitute strawberries for the apples to make strawberry rhubarb jam.

- In a large saucepan mix together the rhubarb, apples, sugar, water and cinnamon. Bring to a boil, then cook over medium heat for 20 minutes or until the fruit is soft. Stir in the pectin and boil for 5 minutes.
- Ladle into sterile jars, wipe rims with a clean cloth or paper towel, and seal with new lids. Process in a bath of simmering water for at least 10 minutes, or as recommended by your local extension if you are at a high altitude. Store unopened jars in a cool dark place. Refrigerate jam after opening.

- Bring rhubarb, sugar, and 1/4 teaspoon salt to a boil in a large pot, stirring often. Cook, stirring often, until bubbles slow, foam subsides, fruit rises to the top, and jam sticks to a wooden or metal spoon when lifted from mixture, about 10 minutes. Stir in lemon juice to taste. Let cool for 1 hour. Refrigerate overnight.
