"RHUBARB was one of the first crops Grandma gathered from her garden in spring. She told us kids her rhubarb sauce was a good tonic for whatever ailed us, but we much preferred the delicious dessert she served after Easter dinner. This Rhubarb Crunch was so delicious with fresh cream skimmed from the top of some milk."

Number Of Ingredients 12

1 cup all-purpose flour
3/4 cup rolled oats
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted
4 cups sliced fresh or frozen rhubarb
TOPPING:
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 teaspoon vanilla extract
Few drops red food coloring, optional

Steps:

  • In a large bowl, combine flour, oats, brown sugar, cinnamon and butter; mix until crumbly. Press half of the mixture into an ungreased 9-in. square baking pan. Sprinkle with rhubarb. For topping, combine sugar and cornstarch and water until smooth in a small saucepan. Bring to a boil. Cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in vanilla and food coloring if desired. Pour over the rhubarb. Top with the remaining crumb mixture. Bake at 350° for 50-60 minutes or until bubbly. Serve warm.

4 cups fresh rhubarb, cut into 1/2-inch pieces
1 (1/3 ounce) package fat free sugar-free strawberry gelatin
1 (18 ounce) package white cake mix
3 egg whites (or as called for by your cake mix)
1/3 cup applesauce (or as much as oil called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1/2 cup brown sugar
2 tablespoons white sugar
1 teaspoon cinnamon

Steps:

  • In a bowl, mix the rhubarb and gelatin and set aside.
  • Prepare the cake mix according to the directions on the box (using egg whites and substituting unsweetened applesauce for the oil).
  • Spread half of the cake batter into a 9x13 cake pan sprayed with nonstick cooking spray.
  • Spread the rhubarb and gelatin mixture over the batter.
  • Sprinkle with two-thirds of the topping mixture.
  • Spread the remaining cake batter over the top.
  • Sprinkle with the remaining topping mixture.
  • Bake at 350F for 40-50 minutes.

3 cups diced rhubarb
1 cup white sugar
3 tablespoons all-purpose flour
1 cup packed light brown sugar
1 cup quick cooking oats
1 ½ cups all-purpose flour
1 cup butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large mixing bowl combine rhubarb, white sugar, and 3 tablespoons flour. Stir well and spread evenly into baking dish. Set aside.
  • In a large mixing bowl combine brown sugar, oats, and 1 1/2 cups flour. Stir well then cut in butter or margarine until mixture is crumbly. Sprinkle mixture over rhubarb layer.
  • Bake in preheated oven for 40 minutes. Serve hot or cold.

1 cup all-purpose flour
1 cup old-fashioned oats
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup cold butter, cubed
4 cups diced fresh rhubarb or frozen rhubarb
1-1/3 cups sugar
2 teaspoons cornstarch
1 cup cold water
1 teaspoon vanilla extract
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine the first four ingredients. Cut in butter until mixture resembles coarse crumbs. Press half of the mixture into a greased 8-in. square baking dish. Set remaining crumb mixture aside for topping. Sprinkle rhubarb over crust; set aside., In a small saucepan, combine the sugar and cornstarch; gradually whisk in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened., Remove from the heat; whisk in vanilla. Pour over rhubarb. Sprinkle with reserved crumb mixture. , Bake, uncovered, at 350° for 1 hour or until bubbly and lightly browned. Serve warm with ice cream if desired.

3/4 cup butter, melted
2/3 cup sugar
1 (18 ounce) box yellow cake mix

1 cup brown sugar, packed
1/2 cup melted butter
1 teaspoon cinnamon
4 cups diced rhubarb
1 cup sugar
1 cup water
2 tablespoons cornstarch
1 teaspoon vanilla

Steps:

  • Mix the flour, oatmeal, brown sugar, melted butter, and cinnamon until crumbly.
  • Press half of the oatmeal mixture into a 9" square pan.
  • Cover with the diced rhubarb.
  • Combine the sugar, cornstarch, water and vanilla in a small saucepan.
  • Cook sugar mixture until thick, stirring frequently.
  • Pour liquid over rhubarb.

1 cup packed brown sugar
1 cup all-purpose flour
1/4 teaspoon salt
1/2 cup cold butter, cubed
4 cups diced rhubarb
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 teaspoon almond extract
1 can (21 ounces) cherry pie filling
1/2 cup finely chopped walnuts
Vanilla ice cream, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine oats, brown sugar, flour and salt; stir well. Cut in butter until crumbly. Pat 2 cups of mixture into a greased 13x9-in. baking dish; cover with rhubarb. , In a saucepan, combine sugar and cornstarch. Stir in water; cook until mixture is thickened and clear. Stir in extract and cherry filling; spoon over rhubarb. Combine nuts with reserved crumb mixture; sprinkle over cherries. Bake until filling is bubbly and topping is lightly browned, 40-45 minutes. 2 C rhubarb, cut into 1/2" pieces
2 T flour
1 1/2 C sugar
1/2 C shortening
1 egg
2 C flour
1 tsp. baking soda
1/2 tsp. salt
1 C buttermilk
1 tsp. vanilla
Topping:
1/2 C sugar
1/4 C brown sugar
1 tsp. ground cinnamon
1/4 C butter
whipped cream for serving (optional)

Steps:

  • Preheat oven to 350°. In a medium bowl, combine rhubarb & 2 T flour; toss gently until rhubarb is lightly coated. In large mixer bowl, combine sugar & shortening; beat well. Add egg; beat well. Sift together 2 C flour, baking soda & salt; add alternately with buttermilk, stir well. Add vanilla & rhubarb. Turn into greased 13x9" pan. In a small bowl, combine topping ingredients; mix until crumbly. Sprinkle evenly over cake. Bake 35-40 minutes or until cake springs back when touched lightly with finger. Serve with whipped cream if desired
