Make this classic rhubarb crumble for an easy, family-friendly dessert. Use seasonal rhubarb and a handful of ingredients to make a stunning pud.

500g rhubarb, chopped into chunks the length of your thumb
100g golden caster sugar
3 tbsp port (optional)
140g self-raising flour
85g butter, chilled
50g light brown muscovado sugar
50g chopped walnuts (optional)

Steps:

  • Tip 500g thumb-length chunks of rhubarb into a saucepan with 100g golden caster sugar and 3 tbsp port, if using.
  • Cover and simmer on a very low heat for 15 mins, adding more sugar if you want. When soft (but still holding its shape) and sweet enough, pour the rhubarb into a medium baking dish.
  • Heat oven to 200C/180C fan/gas 6.
  • To make the topping, rub 140g self-raising flour and 85g chilled butter together with your fingers until you have a soft, crumbly topping.
  • Now add 50g light brown muscovado sugar and 50g chopped walnuts, if using. Mix together with your hands.
  • Scatter the topping over the rhubarb and bake for 30 mins or until golden brown on top.
  • Serve piping hot with a big jug of thick vanilla custard. Refer to the tip for a recipe.

I modified this recipe with an extra 1/4 cup white sugar. I also added a modifier so that you can make extra streusel to smash around the bottom and sides to form a crust. The crumble on the top is extremely delicious!

3 cups diced rhubarb
1 ¼ cups white sugar
2 tablespoons all-purpose flour
1 large egg
½ teaspoon ground cinnamon
1 ½ cups all-purpose flour
1 cup packed light brown sugar
1 cup quick-cooking oats
½ teaspoon ground cinnamon
1 cup butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
  • Combine rhubarb, white sugar, 2 tablespoons flour, egg, and 1/2 teaspoon cinnamon together in a large bowl until evenly coated. Spread rhubarb mixture into the prepared baking dish.
  • Mix 1 1/2 cup flour, brown sugar, oats, and 1/2 teaspoon cinnamon together in a separate bowl. Cut in butter using a pastry cutter or two forks until topping is crumbly. Sprinkle topping over rhubarb layer.
  • Bake in the preheated oven until hot and bubbling, about 40 minutes. Serve hot or cold.

  • Combine 1 cup flour, 1/3 cup oats, 3/4 cup sugar and a pinch of salt in a bowl. Stir in 6 tablespoons melted butter and 1/2 cup chopped hazelnuts; squeeze into large crumbles and place in the freezer. Toss 2 pounds chopped rhubarb, 1/3 cup sugar, 1/4 cup flour, 1/2 teaspoon vanilla extract, 1/2 teaspoon orange zest and 1/4 teaspoon salt in a 8-by-8-inch glass or ceramic baking dish. Scatter the crumble on top and bake in a preheated 375 degrees F oven until golden and bubbly, 45 minutes. Let cool for 15 minutes; serve with whipped cream.

1lb Rhubarb, chopped into 1/2" pieces
100 Grams (1/2 Cup) Light Brown Sugar
2 Tablespoons Cornstarch
Juice of 1 Lemon
188 Grams (1 1/2 Cups) All-Purpose Flour
50 Grams (1/2 Cup) Cup Rolled Oats
Pinch of Salt
150 Grams (3/4 Cup) Light Brown Sugar
125 Grams (1 Cup) Roasted Walnuts
6oz (3/4 Cup) Cold Unsalted Butter

Steps:

  • Preheat your oven to 350F/180C and get an 8 -9-inch plate ready.
  • Clean and cut your rhubarb into one and a half inch pieces. Add the rhubarb and brown sugar to a medium size pot and cook over low heat.
  • In a small bowl combine corn starch and lemon juice, whisk to combine until it is a smooth slurry with no lumps. Once the brown sugar is fully melted add the slurry and cook over medium heat for roughly 5 minutes, mixing the whole time. The rhubarb mix should have thickened and look shiny. Add the rhubarb mixture to the baking dish in an even layer.
  • In a large bowl mix together and all-purpose flour, rolled oats, brown sugar, and salt. Add the roasted walnuts. Next, add the chunks of butter and use your hand to rub the butter into the dry mixture. It is done when you have a thick coarse meal texture.
  • Sprinkle over rhubarb and bake for 30 minutes, or until the top is golden brown and the rhubarb is bubbling up the sides. Let cool for at least 20 minutes before serving. Best served with heavy cream, Birds custard, or ice cream.

1 cup rolled oats
½ cup white sugar
⅓ cup shortening, melted
3 cups diced rhubarb
½ cup white sugar
¼ teaspoon ground cinnamon
1 tablespoon water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, sift together the flour and salt; stir in oats and 1/2 cup sugar. Cut in shortening until mixture is crumbly. Pat half of the mixture into a 9 inch pie pan; set aside remaining half for the topping. Arrange rhubarb in pie shell. Sprinkle 1/2 cup sugar, cinnamon and water over rhubarb, then dot with butter. Spread remaining oat mixture over filling.
  • Bake for 40 minutes in the preheated oven, until rhubarb is tender.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Put rhubarb in an 8- or 9-inch round glass baking dish.

8 tbsp caster sugar
1 tsp ground ginger
110g/4oz butter, softened
110g/4oz demerara sugar
200g/7oz plain flour
double cream

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4.
  • Cut the rhubarb into 7½cm/3in long sticks and place on an oven tray. Sprinkle with 4 tablespoons of water and the caster sugar. Roast for 10 minutes. Sprinkle over the ginger and mix well.
  • Fill an ovenproof dish about 4cm/1½in deep with the rhubarb.
  • Rub the butter into the flour then mix in the demerara sugar to make the crumble topping. Sprinkle over the rhubarb and bake for 35-45 minutes, or until the crumble topping is crisp and golden-brown and the rhubarb filling has softened and is bubbling.
  • Allow to cool slightly before serving with double cream.
